3- to 3 1/2-lb boneless pork loin roast
1/2 cup orange marmalade
3 tablespoons orange juice
2 teaspoons fennel seed, crushed
1 teaspoon dried thyme leaves
1 teaspoon dried sage leaves, crushed
2 medium dark-orange sweet potatoes, peeled, cut into 1 1/2-inch pieces
1 lb Brussels sprouts, cut in half if large
2 teaspoons olive or vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat oven to 325°F. On rack in shallow roasting pan, place pork. In small bowl, mix marmalade, orange juice, fennel, thyme and sage. Brush half of the marmalade mixture over pork.
  • In large bowl, toss sweet potatoes and Brussels sprouts with oil, salt and pepper. Arrange vegetables around pork. Insert ovenproof meat thermometer so tip is in thickest part of pork.
  • Roast uncovered 1 hour. Brush pork with remaining marmalade mixture; gently stir vegetables to coat with pan juices. Roast about 15 minutes longer or until thermometer reads 155°F and vegetables are tender. Cover pork with foil and let stand 10 to 15 minutes until thermometer reads 160°F.

10 cloves garlic, cut lengthwise in half
5 teaspoons Cajun seasoning
2 tablespoons vegetable oil
3 medium onions, halved lengthwise, sliced
3 stalks celery, chopped
1 3/4 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
3 tablespoons Gold Medal™ all-purpose flour

Fresh thyme sprigs, if desired

Steps:

  • Heat oven to 325°F. Make 20 small, deep cuts in pork roast; insert garlic cloves in cuts. Tie roast with kitchen string, securing at 2-inch intervals. Rub Cajun seasoning over pork.
  • In large heavy skillet, heat oil over high heat. Add pork; cook 2 minutes on all sides or until browned. Remove from skillet. Add onions and celery to skillet; cook over medium heat 5 to 8 minutes, stirring frequently, until tender. Place onion mixture in ungreased roasting pan; top with pork. Add broth to pan. 20 cloves garlic, peeled
1/4 cup olive oil

2/3 cup apple jelly
2 tablespoons vegetable oil
2 teaspoons ground dry mustard
1 teaspoon dried marjoram leaves
1/2 teaspoon salt
1/4 teaspoon pepper
Italian parsley, if desired

Steps:

  • Heat oven to 450°F. Place corn in large bowl of warm water to partially thaw. In ungreased 15x10x1-inch pan, arrange sweet potatoes and onion around sides.
  • In 1-quart saucepan, mix glaze ingredients. Cook over low heat, stirring constantly, until melted and smooth. Brush about half of glaze over vegetables. Roast uncovered 25 minutes.
  • Remove vegetables from oven. Turn vegetables in pan. Remove corn from water; place in pan with vegetables. Place pork tenderloins in center of pan. Brush pork and all vegetables with remaining glaze.

BETTY'S BUTCHERS ROAST PORK WITH CRACKLING

My local butcher is awesome and this is his recipe and tip. This recipe requires overnight curing of the skin to dry - allowing for crackling that is out of this world. Don't skimp on the salt. Due to the size of my 3 teenage sons (each about 6ft or taller) I make two as they each have large portions - of everything!

5 lb roast pork shoulder (about 2.4 kilos)
1 tsp salt
2 pieces damp paper towel - for covering

Steps:

  • 1. The DAY BEFORE - open the package and score the meat more - making long incisions through the skin. Place the meat into the tray that will be used to bake the meat in. Cover the meat with damp paper towels and pop in the fridge overnight (to dry out the meat)
  • 2. The FOLLOWING day - remove the meat from the fridge. Throw away the paper towel and allow the meat to come to room temp. While this is happening, pre heat your oven to as hot as it will go.
  • 3. After about an hour, sprinkle over the salt and gently press into the meat. Pop in the oven for 30 - 40 minutes at a high heat.
  • 4. Reduce heat to 365oF/170oC and bake for another 1.5 hours. Remove from the oven and rest for 20 minutes.
  • 5. Remove the crackling and cut into serving size "chunks" and then carve the meat.
  • 6. Serve with gravy and veggies or your choice.

1 tablespoon vegetable oil
1 teaspoon salt

1 cup Progresso™ chicken broth (from 32-oz carton) or water

Steps:

  • Trim excess fat from pork. Heat oil in 10-inch skillet over medium-high heat. Cook pork in oil about 10 minutes, turning occasionally, until brown on all sides. Sprinkle with salt and pepper.
  • Place onion and garlic in 3 1/2- to 6-quart slow cooker. Place pork on onion and garlic. Pour broth over pork.
  • Cover and cook on low heat setting 8 to 10 hours or until pork is tender. Reserve 1 cup cooking liquid.
  • Serve pork now, or remove pork from slow cooker and cool slightly. Shred warm pork, using 2 forks.
  • Place 2 cups shredded pork in each refrigerator or freezer container. Add 1/2 cup reserved cooking liquid to each container. Cover and refrigerate up to 4 days or freeze up to 4 months. To thaw frozen pork, place container in refrigerator about 8 hours.
