PRALINE-TOPPED SWEET POTATOES image

3 1lb cans yams in light syrup, drained
1/2 C. butter or margarine, melted
1/2 C. heavy cream
2 Large eggs
1 C. firmly packed light-brown sugar
3/4 C. chopped pecans
1/4 tsp ground cinnamen
1/4 tsp ground nutmeg
1 tsp vanilla exract

Steps:

  • In food processor, puree yams with 6 tbs. melted butter and 2 tbs. cream. Add eggs and 1/2 C. brown sugar. Process until blended. Spread half the potato mixture in shallow 2 quart baking dish, with remaining potato mixture in pastry bag fitted with large star tip, using Photo as a guide. Preheat oven to 375 degrees. In small saucepan combine remaining melted butter, cream and brown sugar, the pecans, cinnamon, nutmeg and 1/4 tsp. salt. Bring to boil, simmer 5 minutes. Remove from heat, stir in vanilla. Spoon over center of mixture. Bake 20 minutes. Garnish with pecan halves.
