4 medium tomatoes, each cut into 8 wedges (about 3 cups)
2 medium cucumbers, thinly sliced (about 5 cups)
1/2 cup finely chopped red onion
1/2 cup rice vinegar
4 teaspoons sugar
1 tablespoon finely chopped fresh dill
1/2 teaspoon seasoned salt

Steps:

  • In large glass serving bowl, mix tomatoes, cucumbers and onion.
  • In small bowl, mix all remaining ingredients until blended. Pour vinegar mixture over vegetables; toss to mix. Cover; refrigerate 1 hour to blend flavors. Toss again just before serving. Serve with slotted spoon.

I cut this from a U.S. magazine, but not sure which one as I've had it for quite some time. This summertime dish can be prepared and chilled two hours before serving. The recipe calls for English cucumbers but you can use regular ones if you can't find the English ones. You want a total of about 1 1/2 lbs. of cukes. Cooking time is chilling time.

2 cucumbers, unpeeled, thinly sliced
1 tablespoon coarse kosher salt
1/2 cup distilled white vinegar
1/4 cup fresh dill, finely chopped
3 tablespoons sugar
1/2 teaspoon fresh ground black pepper

Steps:

  • Place cucumber slices in a colander.
  • Sprinkle with salt; toss to coat and let stand 15 minutes, stirring occasionally.
  • Meanwhile, stir vinegar, dill, sugar, and pepper in large bowl until sugar is dissolved.
  • Drain cucumbers well and pat dry.
  • Add cucumbers to dressing and stir to blend.
  • Refrigerate at least 30 minutes and up to 2 hours.
  • Serve cold.

  • In a small saucepan, combine the sugar, vinegar, water, dill and salt. Bring to a boil over medium heat. Remove from the heat. Place cucumbers in a large bowl.
