BEST WHITE CHICKEN CHILI
Change things up this winter by making chili with chicken instead of beef. For a milder version, you can substitute a green bell pepper for the jalapenos. Garnish with cheese and cilantro if desired.

- Heat oil in a large soup pot over medium-high heat. Add chicken and cook until no longer pink, about 4 minutes. Add onion and jalapeno peppers; cook until onion is translucent, about 4 minutes. Stir in flour until incorporated.
- Add navy beans, enchilada sauce, chicken broth, oregano, chili powder, and cumin. Bring to a boil. Reduce heat and simmer until flavors combine, about 25 minutes.

BEST SLOW COOKER WHITE CHICKEN CHILI
Hatch chiles and tomatillos take this white chili to another level. I like to make my own roasted salsa verde but you can always use jarred or canned. Cooked in the slow cooker for ease and convenience. Top with your choice of sliced avocados, shredded cheese, cilantro, or sour cream.

Steps:
- Place tomatillos, onion, serrano pepper, and garlic in a hot cast iron skillet and cook until blackened, turning frequently, 7 to 10 minutes. Peel garlic cloves and transfer to a blender. Add the blackened vegetables, cilantro, and salt; blend until smooth.
- Place chicken broth, beans, chicken, cumin, and salt in a slow cooker. Pour in blended salsa. Cook on High until chicken is tender, 3 to 3 1/2 hours.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place Hatch peppers with cut sides down onto the prepared baking sheet.
- Cook under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 10 minutes.
- Remove 1 cup beans from the slow cooker; mash and stir back in. Remove chicken breasts and shred using 2 forks. Stir into the slow cooker. Peel broiled peppers and dice flesh into 1-inch pieces; add to the slow cooker. Sprinkle in Jack cheese.
- Cook until chili is warmed through, about 30 minutes more.

THE BEST WHITE CHICKEN CHILI
This is the first recipe I ever tried for white chili, and it is the best one I have ever found. I found it in a cookbook called So Fat, Low Fat, No Fat, but don't let that fool you. The chili may be low on fat but it has a fantastic flavor and always gets raves every time I make it. This is not the exact recipe in the book, as I have made a few minor adjustments to make it a little easier.

Steps:
- In a 5-qt stockpot, combine water with the lemon pepper, 1 tsp ground cumin, and olive oil.
- Bring to a boil.
- Add the chicken breast halves and return to a low boil, then reduce the heat to low and simmer 20-30 minutes or until the chicken is fork tender and the juices are clear.
- Remove the chicken from the broth and cut into bite-size pieces, then return it to the broth.
- Add the garlic, onion, corn, green chiles, 1 tsp ground cumin, lime juice, and Great Northern beans to the broth.
- Bring to a boil.
- Simmer until thoroughly heated, about 45 minutes.
- To serve, ladle into soup bowls and sprinkle cheese on top.
- Refrigerate any leftovers; this chili is usually even better heated up the next day.
BEST WHITE CHICKEN CHILI EVER
Steps:
- Heat olive oil in a large pot over medium heat. Sauté the chicken until mostly cooked. Cook onions and garlic until soft. Add chopped red, green, and chili peppers. Sprinkle with half measurements of the above-mentioned seasonings.
- Gently stir in the diced tomatoes, white beans, and frozen corn until well mixed. Sprinkle with remaining seasoning. Cover and cook on medium heat for five minutes. Pour in the chicken broth. Cover and simmer for 15 minutes, stirring every few minutes.
- After 15 minutes, stir in the crushed tortilla chips, cover and let simmer for 10 minutes. Lastly, fold in the shredded Mexican cheese. Have a taste, and add as much spice as desired.
- Serve with tortilla chips and sour cream.

THE BEST WHITE CHILI WITH CHICKEN

- Prepare beans. Adjust broiler rack to 8 inches below broiler element and preheat broiler to high. Place poblanos, Anaheims, jalapeños, onion, and garlic on a foil-lined rimmed baking sheet. Toss with one tablespoon oil using your hands to coat. Season with salt. Place under broiler and broil, turning peppers and rearranging vegetables occasionally, until peppers are blackened on all sides and skins are wrinkled all over, 15 to 20 minutes total. Gather up foil and form a sealed pouch. Let chilies rest for 5 minutes. Place chilies and chicken stock in a large bowl. Peel chilies under the chicken stock, leaving skins and seeds behind. Transfer chili flesh to the cup of a hand blender or a standing blender. Add broiled onion, broiled garlic, and the canned jalapeño (do not add jalapeño pickling liquid). Blend until a smooth purée is formed. Set aside. Heat remaining oil in a large Dutch oven over medium heat until shimmering. Add cumin and coriander and cook, stirring, until fragrant, about 30 seconds. Add chili purée and cook, stirring, until incorporated. Strain chicken stock into pot, pressing on skins and seeds to extract as much liquid as possible. Discard skins and seeds. Add soaked beans and chicken breasts to pot, adding water as necessary until beans and chicken are fully submerged. Bring to a boil, reduce to a bare simmer and cook, stirring occasionally, until chicken breasts register 150°F on an instant read thermometer, about 15 minutes. Transfer chicken breasts to a bowl and let rest. Continue simmering broth and beans until beans are fully tender, about 1 hour total. Remove 1 1/2 cups of beans and their liquid and transfer to a standing blender or the work cup of an immersion blender. Blend until completely smooth. Stir back into pot. Shred chicken into bite-sized pieces and stir back into stew. Stir in half of cheese until melted. Stir in jalapeño pickling liquid, lime juice, and half of cilantro.
