GERMAN PORK CHOPS AND SAUERKRAUT
As a soldier during WWII my Dad learned to make this hearty pork dish from a local German woman during the Allied occupation of Germany. I don't know the German name for it, but it is delicious!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat a large nonstick skillet over medium-high heat, and brown the pork chops on both sides, about 5 minutes per side. Place the chops into a 9x13-inch baking dish.
- Mix the sauerkraut, apple, onion, brown sugar, and caraway seeds in a bowl until well combined, and spread the sauerkraut mixture over the pork chops. Cover the dish with aluminum foil.
- Bake in the preheated oven until the pork is no longer pink inside, about 45 minutes. An instant-read thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C).

Steps:
- Heat oil in large fry pan.
- Brown pork chops.
- Remove from pan.
- Sauté onion until tender.
- Add sugar and work up all browned stuff in pan.
- Add sauerkraut and mix well.
- Put chops on top and cover.
- Lower heat and simmer until meat is cooked- about 10 minutes.

- In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium heat. Sprinkle pork with 1/2 teaspoon of the salt and the pepper; cook pork in oil 5 to 8 minutes, turning once, until brown. Remove pork from skillet; cover to keep warm.
- In same skillet, heat remaining tablespoon oil. Sprinkle potatoes with remaining 1/2 teaspoon salt; cook potatoes in oil 7 to 10 minutes, stirring occasionally, until just starting to brown. Add pork. Stir in sauerkraut and parsley.
- Cover; cook 7 to 10 minutes or until pork is no longer pink in center and potatoes are tender. Serve pork over sauerkraut.

This was another one of my Mom's recipes that I thought was wonderful, although my siblings didn't care much for sauerkraut! Very inexpensive with a German flair, and in my opinion, very tasty! Especially when served with crusty, warm bread and a side of buttered noodles!

- In a 10-inch skillet over low heat, melt butter until just sizzling. Sauté onion and garlic, stirring often until wilted but not quite browned.
- Add sauerkraut, water, brown sugar and red wine vinegar; Mix well.
- Bury franks in kraut.
- Cover and simmer until liquid has evaporated, about 1/2 hour.
- Serve with warm, buttered, crusty bread.

I love this no fuss dinner. It is perfect for those cold days of Autumn. I like to add a layer of apples on top of the chops before covering them with the second layer of potatoes & Kraut.

Steps:
- Mix the potatoes and the kraut.
- Place half the sauerkraut/potato mixture in a Pyrex pie plate.
- Spread 1 1/2 tbsp of mustard over the sauerkraut.
- Place the chops on the sauerkraut.
- Spread remaining mustard on the chops.
- Cover with remaining sauerkraut/potato mixture.
- Season with salt & pepper.
- Put the pat of butter on top.
- Seal with foil and bake in a 350°F oven for 45 minutes to an hour.
- I like uncover the chops for the last 15 minutes or so to lightly brown the potato topping.

GERMAN STYLE SAUERKRAUT
This is the only way DH likes sauerkraut any more. We saw it on PBS many years ago. It was a PBS affiliate out of Oregon and I have no idea if it was a German language course for adults or a German cooking show. We watched the next week, but no German program of any kind. The woman cooking had a beautiful voice. Keep the juniper berries and caraway seeds confined. One time I didn't have any cheesecloth and just dumped in the spices. The caraway isn't too bad, but the juniper stays hard and tastes nasty when you bite and they don't get soft, which may be worse. Don't cheat and chop the potato. It has to be grated. It turns creamy and saucy. The potato won't do that if you slice or chop. Put some nice, big sausages or hot dogs on top and heat through and it's a one dish meal.

- Fry bacon until almost crisp.
- Add onion and cook until limp.
- Add rinsed sauerkraut.
- Add water to cover.
- Put caraway and juniper in a tea ball or wrap in cheesecloth so it can be removed later.
- Add bay leaf.
- Cover and let simmer for 1 hour, stirring occasionally.
- Add more water if necessary.
- Should be juicy but not soupy.
- Remove spices.
- Stir in shredded potato.
- The potato will melt and turn saucy.
- Stir in wine.
HUNGARIAN SAUERKRAUT
I'm German/American and sauerkraut was a must in our house. Growing up in Germany for 23 years we had it often and in many different varieties. Many times Mom made it just with hamhogs or smoked pigs feet.

Steps:
- Drain sauerkraut pressing excess liquid out.
- Rinse sauerkraut once or twice until the flavor is mild.
- Melt bacon in a dutch oven or casserole; when hot add, onion and sweet paprika.
- Saute for about 8 minutes or until onions are soft.
- Add sauerkraut,stock and caraway seeds.
- Cover and simmer slowly for 1 1/2 to 2 hours.
- To thicken sauerkraut, stir 2-3 tablespoons flour into 1 cup of sour cream and add to sauerkraut.
- Simmer for 10 more minutes.
- Season with salt and pepper and a pinch of sugar if necessary.
- If you like to add some sausages or some other"wurst" that would be fine too.
- Add it during the last 1/2 hour of cookin.

- Render fat in hot skillet and brown pork chops on both sides with sliced garlic (about 5 to 7 minutes a side).
- Remove chops from skillet; drain fat and remove garlic; reduce heat; return chops to skillet.
- Season both sides of chops.
- Cover chops with thinly sliced onion and then sauerkraut.
- Pour most of beer over all.
- Cover and simmer slowly for 45 minutes to 1 hour, baste occasionally; do not allow to cook dry.
- Goes well with sweet potatoes, baked beans, or corn.
