- In a salad bowl, combine the salad greens, cheese, blueberries and pecans., In a small bowl, whisk the vinaigrette ingredients. Drizzle over salad and toss to coat. Serve immediately.

RED, WHITE, AND BLUE (BERRY) GREEN SALAD
This recipe is more about assembly than actual cooking. (I mostly wanted to post my pics, which are pretty!) I had store-bought Romaine and Aerogarden -grown mixed greens, as well as strawberries and blueberries, needing to be eaten, so I made this salad (a variation of the usual strawberry-feta salads). I also put Recipe#49956 on it, but any bottled raspberry vinegrette will work. Also, it would be good with sliced chicken, avocado, onion, etc on top, or made with spinach. Feel free to enjoy it on the 4th, or any day!

- Lay the greens on the plate.
- Pile the feta and walnuts in the middle of the greens.
- Scatter the strawberries and blueberries on top.
- Serve with the dressing on the side, and not until ready to eat (it wilts the salad).

BLUE DOG BAKERY'S WHEAT BERRY SALAD
This recipe is deceptively delicious! The first time I saw it I thought this was far too healthy to taste good! Boy was I wrong! This is a very filling alternative to pasta or potato salads. The wheat berries can be hard to find. I have to go to a small health food store to find them. Cooking time is primarily the time it takes to cook the wheat berries, also walnut oil is VERY expensive, I just use olive oil

- In a large saucepan cover berries with water. Cook al dente. Drain.
- Cook limas al dente. Drain.
- Combine walnut oil, canola oil and vinegar. Add to warm berries and limas. Toss.
- Soften dried fruit by soaking in water, if needed. When bean mixture has cooled, add dried fruit, walnuts, celery and scallions. Toss. Season to taste with salt and pepper.

Quinoa gets the sweet treatment in this refreshing summer salad with strawberries, blueberries, and red currants (though you can easily sub raspberries or blackberries in for the currants).

- Make the dressing. In a small bowl, whisk together the lime zest, lime juice, honey, and peppermint. Set aside.
- Place the quinoa, blueberries, strawberries, and red currants in a large bowl. Pour the dressing over the top and toss gently. Serve.
- Keep refrigerated in an airtight container for up to two days, but I think it's better when served right after assembling.

When bean mixture has cooled, add dried fruit, walnuts, celery and scallions. Toss. Taste, and season with salt and pepper as needed.
