This Louisville staple is an easy and refreshing cucumber spread or dip and can be served with almost anything you could imagine. Dipping club crackers or pita and French bread toast points are favorites, but carrot sticks and pretzels are great too. We use it for cucumber sandwiches, spread it onto our BLTs, and use it as a sauce on poached salmon. You can serve it immediately or refrigerate it to firm up and let the flavors meld.

2 English cucumbers - peeled, seeded, and cut into 2-inch chunks
2 tablespoons minced white onion
1 (8 ounce) package cream cheese, softened
½ teaspoon dried dill
1 dash hot pepper sauce (such as Tabasco®), or to taste
1 drop green food coloring, or as needed
cayenne pepper, or to taste

Steps:

  • Process cucumber chunks in a food processor until finely chopped. Put chopped cucumber and white onion in a piece of cheesecloth and twist to squeeze into a bowl as much liquid as possible from the vegetables, reserving the liquid.
  • Assure the food processor bowl is dry before returning cucumber and onion mixture to the food processor. Add cream cheese, dill, hot pepper sauce, green food coloring, and cayenne pepper. Process the mixture until smooth, scraping down the sides of the food processor bowl a few times to make sure everything is integrated. If too thick, add reserved liquid a teaspoon at a time.

1 package (8 ounces) cream cheese, softened
1 tablespoon mayonnaise
1/4 teaspoon salt
1/8 teaspoon white pepper
1/8 teaspoon dill weed
1 drop green food coloring, optional
3/4 cup finely chopped peeled cucumber, patted dry
1/4 cup finely chopped onion
Pita bread wedges or snack rye bread

Steps:

  • In a small bowl, combine the cream cheese, mayonnaise, salt, white pepper, dill and food coloring if desired; beat until smooth. Stir in cucumber and onion. Cover and refrigerate until serving. Serve with pita or snack rye bread.

8 oz cream cheese, softened
3 Tbsp cucumber juice (1 medium-small fresh cucumber)
1 Tbsp sweet onion juice (1 small onion or 1/2 large)
1/4 to 1/3 tsp salt (to your taste)
1/2 tsp lemon juice
5 drops green food color gel (optional, but traditional)

Steps:

  • 1. Peel cucumber; grate over a bowl, using a microplane or fine grater.
  • 2. Pour pulp and juice into a coffee filter placed in a small strainer over small bowl; gather ends of filter and gently squeeze and press to release juice into bowl.
  • 3. Measure 3 tablespoons cucumber juice into a small saucepan. Discard remaining juice and pulp.
  • 4. Repeat process with onion for 1 tablespoon juice to add to cucumber juice in pan.
  • 5. Place pan over high heat, bring to a boil, then immediately remove from heat. (This will tame the cucumber and make it friendlier to the tummy.)
  • 6. To the warm juice, add 1/2 teaspoon salt, 1/4 teaspoon lemon juice and 5 drops of green food color gel; stir and mix well; set aside.
  • 7. Unwrap cream cheese, place in mixing bowl. Use a hand mixer to beat cream cheese well.
  • 8. Gradually add juice, mixing until well incorporated and smooth.
  • 9. Spread may be used immediately or cover and refrigerate (for up to one week) until served.

6 ounces cream cheese
1 medium cucumber, peeled, seeded, and grated
1 medium yellow onion, peeled and grated
2 tablespoons mayonnaise
1/4 teaspoon Tabasco sauce
Salt to taste
Green food coloring

Steps:

  • Place cream cheese in a bowl and mash with a fork until smooth. Wrap cucumber in cheesecloth, then squeeze out and discard juice. Add cucumber to cream cheese and mix thoroughly. Wrap onions in cheesecloth and squeeze juice into cream cheese mixture, then discard onions. Mix mayonnaise and Tabasco sauce into cream cheese mixture. Season to taste with salt, then add 1 drop food coloring and mix well. Serve on thinly sliced white sandwich bread, topped with another slice of bread, trimmed, and cut into finger sandwiches.

1 medium cucumber, peeled and seeded
8 ounces cream cheese
1 small onion, finely ground
1/2 teaspoon salt
1 dash Tabasco sauce
1/4 cup mayonnaise
2 drops food coloring

Steps:

  • Finely grind cucumber pulp. Place in a piece of cheesecloth and press out juice until pulp is fairly dry. In a mixing bowl mash cheese with a fork. Work cucumber pulp into cheese, add onion, salt and Tabasco sauce. Add enough mayonaise to make a smooth, easy to spread filling. Add just enough food coloring to make cheese a pale green.

This recipe was created by Jennie Carter Benedict, a cookbook author, caterer, and restaurateur. She operated a Louisville restaurant and tea room, Benedict's, in the early 20th century. I located this recipe on About.com presented by Diana Rattray, Southern Food Expert. It is also manufactured & can be found in a variety of Louisville grocery stores. Not sure, if available statewide. Often looked for at Derby time. This is one of my favorite spreads/dips!

1 large cucumber
1 package(s) (8 oz) cream cheese, softened
2 tablespoon(s) grated sweet or yellow onion
1/2 teaspoon(s) salt or to taste
1/8 teaspoon(s) freshly ground black pepper
1 tablespoon(s) mayonnaise
1 dash(es) green food coloring (optional)

Steps:

  • Peel cucumber and scrape out seeds. Grate cucumber coarsely. Put grated cucumber in the bowl of a food processor with remaining food ingredients. Pulse, until smooth. Then, add a drop or two of green food coloring, to reach desired shade of green. Alternatively, mix the ingredients with an electric mixer.
  • Spread on sandwich bread, or use it for canapes. Thin with sour cream, if too thick, to make a dip for vegetables or crackers. Makes about 2 cups.

1 large cucumber, peeled
1 to 2 tsp. sea salt
1 pkg. 8oz cream cheese, softened
1 tbls. dehydrated onion flakes
1/4 tsp. ground red pepper
1/2 tsp. garlic powder
1 tsp. Worcesteshire Sauce

Steps:

  • Grate or finely chop cucumber. Toss with salt and allow to drain in a mesh seive in the refrigerator for at least 2 hours, preferably overnight. After draining, press salted cucumber with the back of a spoon to remove any additional moisture. In a medium bowl, combine the cucumber and softened cream cheese until well blended and smooth. Stir in onion, pepper, garlic and Worcesteshire sauce, and adjust spices to taste. Chill for at least another hour before serving to allow the flavors to mingle. Fresh, finely minced onion and garlic may be substituded for the dehydrated spices. However, use sparingly, as the flavor can overpower the cucumber.

This recipe is yummy, not healthy, but I wanted an authentic tea party recipe as I'm having one for a recuperating friend. I'll make it gluten-free vegan (GFV) and a bit healthier by using GFV "cream cheese", halving the salt, omitting the food coloring, and serving it on GF bread. The original recipe comes from Louisville's Courier-Journal: "The famous cucumber spread was, of course, created by one of our city's most famous residents, Jennie C. Benedict. Setting the highest of culinary standards, "Miss Jennie" was also a successful businesswoman, a writer who for a time served as editor of The Courier-Journal's Household section, and an important community volunteer. ... Probably the most intriguing recipe of all is that which keeps Miss Jennie's name on Louisville lips. Here is the version supplied by cookbook author and former Courier-Journal food editor Ronni Lundy. It is the one that Jennie C. Benedict would most likely have included in her book."

8 oz cream cheese, room temperature
1 Tbsp hellmann's mayonaise
2 drops green food coloring
1/2 medium onion, finely grated
1 large cucumber, peeled and seeded
1-3 dash(es) tobasco sauce
1 pkg party rye bread
assorted crackers

  • 1. Grate the cucumber. Place in cheesecloth and squeeze liquid out. Set aside.
  • 2. In a medium bowl, beat cream cheese til fluffy. Stir in cucumber and remaining ingredients except for the bread and crackers. Adjust the consistancy with more or less mayonaise. (I prefer a bit more mayo).
  • 3. Cover and chill at least 4 hours (overnight is better). Spread Benedictine on bread. You can top them with a thin slice of green olive or roasted red pepper. Place some in a bowl with crackers for dipping.

How to make Benedictine Spread Recipe

1/3 of an 8 oz bar of Philadelphia cream cheese
1/3 of a cucumber sliced and peeled
1 tablespoon mayo
1 dash of Tabasco (I used my homemade Tabasco Hot Sauce Recipe)
Garnish fresh dill sprigs or watercress

Steps:

  • Put cheese, cucumber, and mayo in food processor, blending until mixture is very smooth.
  • Chill covered in the refrigerator overnight.
  • For celery stuffing spread in the groove. For sandwiches, dill sprigs or watercress makes a springy and tasty garnish.
  • Notes and Observations:
  • You could roll out white bread, trimming the crusts and cutting with fancy cookie cutters for truly retro elegance. I usually just use bread right out of the wrapper. For sandwiches that might have to wait for the party, I butter the bread before adding Benedictine spread. The butter serves as a barrier, keeping the sandwiches from getting soggy.
  • This will make about 1/2 cup of spread.
