SUGAR FREE BANANA PUDDING

These sugar free banana pudding parfaits taste like a decadent dessert. Extract adds all the banana flavor but without the sugar in this delicious custard pudding.

Number Of Ingredients 14

1 cup heavy cream
3 egg yolks
1/2 cup Swerve confectioners sugar *
1/2 teaspoon xanthan gum*
1 teaspoon vanilla extract
1 teaspoon banana extract
8 thin slices banana, optional
1/2 cup almond flour
1/4 cup sugar substitute ( I used Swerve)
2 tablespoons unsalted butter
1/2 teaspoons cinnamon
1/2 teaspoons vanilla
1 tablespoon fine ground flax meal
1/4 teaspoon salt

Steps:

  • To make the pudding:
  • In a saucepan, cook the heavy cream on medium heat until it is very hot, but not to a boil. You will see that your spoon is fully coated with the cream.
  • In a bowl, place egg yolks and whisk to combine. Drizzle 1/4 cup of the hot cream gradually into the eggs, whisking well.
  • Pour the egg/cream mixture back into the saucepan. Heat on low and add in the sugar substitute and xanthan gum. Stir to combine.
  • Cook pudding on low heat for another 3-5 minutes, whisking every 30 seconds or so until thickened. (Pudding will thicken as it cools).
  • Remove from heat, stir in extracts and set pudding aside to cool for about 5 minutes.
  • Cover pudding with Saran wrap or Press and Seal plastic wrap to avoid the "skin" on top of pudding.
  • When cooled at room temperature, refrigerate until ready to make parfaits.
  • Melt butter in skillet, stir in almond flour, salt, and flaxseed meal on medium-low heat.
  • Add sugar substitute, cinnamon and vanilla.
  • Continue stirring until mixture combines together and begins to brown and dry into a crumbly mixture, about 3-4 minutes
  • Remove from heat, let it cool for about 15 minute and it will harden into crunchy delicious crumbs that you will be tempted to eat by the spoonful!!
  • Into 4 dessert dishes, layer pudding, almond crumble, 2 slices of banana, more pudding and top with sugar free whipped cream.
  • Serve right away if you want to keep the almond crumble a bit crunchy. Or it will stay fresh in the refrigerator for up to 3 days.

9 ounces sugar free French vanilla instant pudding (3 small boxes or 2 large boxes)
5 cups milk
8 ounces sour cream
4 ounces Cool Whip (1/2 large container)
2 -3 bananas
4 1/2 ounces sugar free vanilla wafers (half box of wafers or half pack of cookies) or 4 1/2 ounces sugar free vanilla cookies (half box of wafers or half pack of cookies)

Steps:

  • Mix together pudding, milk, sour cream and cool whip. Mix all of these ingredients together until smooth.
  • Layer bowl with 2-3 bananas and vanilla wafers. Then pour half of the mixture on top and layer again. Finish off with the rest of the cool whip for topping and a few cookie crumbles.

3 ounces sugar-free instant vanilla pudding mix (1 small box)
8 ounces sugar-free Cool Whip, thawed
12 ounces sugar free vanilla wafers (1 small box I use Murray's, its all I can find here)
2 -3 bananas

  • Mix pudding according to directions on box.
  • Fold in thawed cool whip, add vanilla wafers and sliced bananas and mix well.

3-4 small boxes of sugar free instant banana cream pudding
3 1/2 c 1%milk
4 Tbsp sugar free cool whip
bananas
vanilla wafers (i try to get the sugar free ones but they are hard to find)

Steps:

  • 1. MIx together the milk and the pudding mix until wellblended
  • 2. Next I add the Sugar Free Cool Whip. Mix until all is blended together good

3 pkg banana cream sugar free instant jello pudding mix
5 2/3 c 2% milk
1 pkg sugar free cool whip
4 bananas
1 bag(s) vanilla wafers cookies

Steps:

  • 1. Mix milk and pudding mixes together until they become thickened. Then add the Cool Whip by folding it in.
  • 2. Slice bananas into a separate bowl. In a big bowl or casserole dish begin by layering pudding mixture, next a layer of bananas, then a layer of vanilla wafers. Continue until you use all the pudding mix and on the last layer crush cookies to put on top of it to cover all the bananas.

3 cups nonfat milk (very cold)
3 large bananas, sliced

  • Prepare pudding following instant pudding directions.
