This recipe is for Belgian Lukken cookies made in a Lukken iron (Lukijyer). You can also use an Italian Pizzelle maker which may be easier to find.

Number Of Ingredients 7

6 eggs
1 lb butter
2 lbs flour
1 lb brown sugar
2 tablespoons vanilla
1 pinch salt
1 1/2 ounces whiskey (optional)

Steps:

  • Combine ingredients together in a large bowl to form a dough.
  • Roll into balls and place into the Lukken iron (Lukijyer) or Pizzelle iron until golden brown.

1/2 cup butter, softened
1 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture (mixture will be thick)., Drop dough in batches by tablespoonfuls 3-4 in. apart onto a greased preheated waffle iron. Bake until dark brown, 2-3 minutes., Remove to wire racks to cool completely. Sprinkle with confectioners' sugar.

Crisp, yummy cookies which a lot of people seem to exchange around the holidays. I think the Italian verson contains anise.

Number Of Ingredients 6

1 cup butter or 1 cup margarine
1 cup sugar
1 tablespoon vanilla
1/2 teaspoon salt
2 eggs (or equivalent)
2 1/4 cups flour

Steps:

  • Preheat waffle maker.
  • Place butter and sugar in a large mixing bowl.
  • Cream together on med-low.
  • Add vanilla and salt, increase speed to medium.
  • Add eggs and mix until smooth.
  • Decrease speed to low, add flour and mix well.
  • Divide batter into 4 3/4 cup portions.
  • Using one portion, drop batter on each corner of the grids.
  • Close waffle maker and bake until steam no longer escapes (about 3-5 min).
  • Carefully remove waffle from maker and allow to cool.
  • Serve plain or with your favorite fruit filling and whipped cream.

2 ounces unsweetened chocolate squares
1/2 cup butter
2 eggs
3/4 cup sugar
1 teaspoon vanilla
1 cup all-purpose flour
1/4 cup butter, softened
1 1/2 tablespoons cocoa
1 1/2 cups powdered sugar, sifted
2 -3 tablespoons milk
1/2 teaspoon vanilla extract

Steps:

  • Cookies:.
  • Combine chocolate squares and 1/2 cup butter in the top of a double boiler. Bring the water to a boil; reduce heat to low, and cook until the chocolate and butter melt, stirring occasionally. Set aside.
  • Combine eggs, sugar, and vanilla in a medium mixing bowl; beat at medium speed of an electric mixer until blended. Add flour and reserved chocolate mixture. Mix well.
  • Preheat waffle iron. Drop dough by 2 teaspoonfuls onto iron. Close iron, and bake for 1 to 1 1/2 minutes or until done. Let cool on wire racks. Continue cooking cookies until your dough is gone.
  • Top with frosting once they are cool.

  • Cream butter; add cocoa, beating well at medium speed of an electric mixture. Gradually add powdered sugar, milk, and vanilla, beating until smooth.

French cookies are a Christmas tradition in SE Kansas. You need a galette or pizzelle iron to make this old family recipe.

2 pounds dark brown sugar
1 pound butter
7 eggs
1 tablespoon vanilla extract
6 ½ cups all-purpose flour

Steps:

  • In a large bowl, stir together the brown sugar and butter until smooth and creamy; then add eggs and vanilla, and beat well. Gradually stir in flour. Set bowl over a hot water bath, and stir to blend ingredients. Cover, and refrigerate overnight.
  • Preheat the galette iron.
