Our black bean soup is hearty, warm, comforting and bursting with flavor. All you need are a few simple pantry ingredients, some veggies, and done! Bonus: it tastes even better the second day ( if you have leftovers, that is... )

2 tbsp olive oil or vegetable oil
4 celery stalks, diced small
1 small red bell pepper, diced small
2 medium carrots, diced small
1 medium red or yellow onion, diced
3 cloves of garlic, minced or grated
2 tbsp tomato paste
1 tbsp chili powder blend
1 1/2 tsp smoked paprika
1 1/2 tsp cumin
1 tsp salt or to taste
1/2 tsp red pepper flakes or to taste
2 cans black beans with their liquid
3 cups water or vegetable broth
1/4 cup brown rice (you can also use quinoa, barley or farro)

Steps:

  • Heat the oil in a soup pot. Add the celery, red bell pepper, carrot, onion, garlic and tomato paste cook over medium-high until they start to soften, about 5 minutes
  • Add the chili powder, smoked paprika, cumin, salt and red pepperflakes and continue cooking for an additional 3-4 minutes. Add a cup of the water or vegetable broth, and cook for another 2-3 minutes
  • Add the black beans with their liquid, the remaining 2 cups of water or vegetable broth and the brown rice. Bring to a boil and simmer for 20 -30 minutes, or until rice is cooked and all the veggies are tender (the longer you cook the soup, the better it will taste)
  • Add a little more water, if you want the soup to be less thick, but don't add too much or it will water down the flavor

1 cup dried multi-bean mix, picked through and rinsed
1/2 cup pearled barley
1/2 teaspoon Italian seasoning blend
6 sun-dried tomatoes, finely chopped
3 cloves garlic, minced
2 medium carrots, diced
1 stalk celery, diced
1 leek, light green and white parts rinsed and sliced
One 14-ounce can no-salt-added diced tomatoes
Kosher salt and freshly ground black pepper
3 cups baby spinach
1/4 cup grated Parmesan, for garnish
2 tablespoons chopped fresh basil, for garnish
2 tablespoons extra-virgin olive oil, for garnish
Crushed red pepper, for garnish
Balsamic vinegar or lemon juice, for serving

Steps:

  • Combine 6 cups of water, the beans, barley, Italian seasoning, sun-dried tomatoes, garlic, carrots, celery, leeks, tomatoes, 2 1/2 teaspoons salt and some pepper in a slow cooker insert. Cook on low for 8 hours. When ready to serve, stir in the spinach until it wilts. If the soup looks too thick, add a little more water. Divide evenly among six bowls.
  • Garnish each bowl with 1 tablespoon grated Parmesan, basil, olive oil and a pinch of crushed red pepper. Drizzle some balsamic vinegar or lemon juice over the top.

2 cups dried black beans
1 cup barley
1 cup celery, diced
1 cup onion, diced
1 medium leek, washed well, white part only, chopped fine
2 garlic cloves, minced
2 tablespoons cumin
2 teaspoons salt
1/2 teaspoon red pepper flakes
2 teaspoons celery seeds
8 cups vegetable broth
1 (10 ounce) can Rotel Tomatoes
2 cups shredded sharp cheddar cheese (to garnish) (optional)
sour cream, as desired (to garnish) (optional)

Steps:

  • Rinse and sort the beans.
  • Soak them overnight. Drain.
  • Place in 6 quart crock pot, with barley on top.
  • Add celery, onion, garlic and leek to the mixture in the pot, along with tomatoes, seasonings and broth.
  • Set crock pot to cook on low for 8 hours.
  • (Optional: Serve with cheese as a garnish and top each serving with a tablespoon of sour cream).

1 can (15 ounces) Progresso™ black beans, rinsed and drained
1 can (14 1/2 ounces) stewed tomatoes, undrained
1 box (9 ounces) frozen baby lima beans
3 cups water
2 tablespoons chopped fresh cilantro or parsley

Steps:

  • Heat oil in 4-quart Dutch oven over medium heat. Cook onions, garlic and cumin in oil about 3 minutes, stirring occasionally, until onions are crisp-tender.

1 cup dried multi-bean mix or Great Northern beans, picked over and rinsed
1/2 cup pearl barley
3 cloves garlic, smashed
2 medium carrots, roughly chopped
2 ribs celery, roughly chopped
1/2 medium onion, roughly chopped
1 bay leaf
Kosher salt
2 teaspoons dried Italian herb blend
Freshly ground black pepper
1/2 ounce dried porcini mushrooms, crumbled if large, optional
One 14-ounce can whole tomatoes, with juice
3 cups cleaned baby spinach leaves (about 3 ounces)
1/4 cup freshly grated Parmesan Balsamic vinegar, for drizzling
Extra-virgin olive oil, for drizzling

Steps:

  • Put 6 cups water, the beans, barley, garlic, carrots, celery, onions, bay leaf, 11/2 tablespoons salt, herb blend, some pepper and porcini mushrooms (if using) in a slow cooker. Squeeze the tomatoes through your hands over the pot to break them down, and add with their juices. Cover and cook on high until the beans are quite tender and the soup is thick, about 8 hours.
  • Add the spinach and cheese, and stir until the spinach wilts, about 5 minutes. Remove the bay leaf and season with salt and pepper.
  • Ladle the soup into warmed bowls and drizzle each serving with vinegar and olive oil.
