BEET CHEDDAR APPLE PIZZA

Steps:
- Prepare Whole Wheat Pizza Dough according to recipe directions. You will only need 1 crust, so feel free to half the recipe or freeze the second half for a later time.
- Place a rack in the upper third of the oven and preheat the oven to 450 degrees F. Line a large baking sheet with parchment paper. On a lightly floured surface, roll the dough into an 11x14-inch rectangle, working from the center. Transfer the dough to the prepared baking sheet, then brush the its entire surface liberally with olive oil. Sprinkle with half of the cheese, then top with apple slices. Tuck the beet slices between the apples, then top with remaining cheese. Season with salt and pepper, then sprinkle rosemary over the top.
- Bake pizza until the crust is crisp and golden, about 12 minutes. Remove from oven and let cool 3 minutes. Slice and serve.

- Heat the oven to 425 degrees F and arrange a rack in the middle. Roll out pizza dough into a 1/4-inch -thick rectangle. Using a pastry brush, lightly oil the dough, and, using a 3-inch biscuit cutter, stamp out 22 to 24 rounds.
- Transfer rounds to a greased baking sheet. Spread each round with 1 teaspoon tapenade sauce. Top with parmesan and 1 piece artichoke on each pizzette.
- Bake until cheese is melted and underside is brown, about 12 to 15 minutes.

- In a bowl, whisk together honey, mustard (if using), lemon juice, salt, and pepper. Set aside.
- Toss beets, apple, and onion with honey mixture.

Pre-cooked beets are widely found in supermarkets and are the perfect ingredient for a quick weeknight meal. In this recipe, you simply slice the beets and toss them with some seasoning before layering it in a store-bought pie dough to make an impressive looking, yet super simple, dish.

- Preheat the oven to 425˚ F. Pat the beets very dry with paper towels. Toss in a large bowl with the thyme, 1 tablespoon oil and 1/2 teaspoon salt.
- Roll out the pie dough on a lightly floured surface into a 13-inch round; place on an inverted baking sheet. Spread the cheese evenly on the dough, leaving a 1 1/2-inch border. Shingle the beet rounds over the cheese. Fold in the edges of the dough over the beets, pleating as needed. Lightly brush the dough with olive oil. Bake until the edges and bottom of the galette are golden brown, 25 to 30 minutes.
- Meanwhile, heat 1 tablespoon olive oil in a small skillet over medium heat. Add the onion, season with salt and cook, tossing occasionally, until the onion is golden and caramelized, about 15 minutes. Add 1 tablespoon balsamic vinegar and cook until the liquid is absorbed, 1 more minute.
- Top the galette with the caramelized onion, walnuts and chives. Cut into 4 wedges and divide among plates.
- Whisk the remaining 1 tablespoon balsamic vinegar and 1 tablespoon olive oil in a large bowl. Add the greens, season with salt and gently toss. Serve with the galette.

CHEESE PIZZETTES

- Mix the mozzarella cheese and Parmesan together in a medium bowl, then set aside. Roll out the dough on a lightly floured work surface to 1/4-inch thick. Using a 2 3/4-inch-diameter cookie cutter, cut out dough rounds.
- Add enough oil to a heavy large frying pan with 3-inch sides to come halfway up the sides of the pan. Heat the oil over medium heat until hot. Drop a scrap of dough into the oil to ensure the oil is hot enough. If the dough sizzles, then the oil is hot enough. Working in batches, add the dough rounds to the hot oil (being sure not to crowd them in the pan) and cook until golden brown, about 3 minutes per side. Using a slotted spoon, transfer the rounds to paper towels to drain the excess oil. Immediately sprinkle the cheese mixture over the hot pizzas. Serve warm.
