Like most country folks, I have busy days, so I depend on easy recipes that also taste great. This simple meat pie originally called for homemade crust, but I use purchased pastry to save time. - Valorie Hall Walker, Bradley, South Carolina

Pastry for double-crust pie (9 inches)
1 pound ground beef, cooked and drained
1 can (15 ounces) mixed vegetables, drained or 1-1/2 cups frozen mixed vegetables
1 can (10-3/4 ounces) condensed cream of onion soup, undiluted
1/2 teaspoon pepper

Steps:

  • Line a 9-in. pie plate with bottom pastry; trim pastry even with edge. In a large bowl, combine beef, vegetables, soup and pepper. Spoon into crust. , Roll out the remaining pastry to fit top of pie. Place over filling; trim, seal and flute edges. Cut slits in top. Bake at 400° for 30-35 minutes or until crust is golden brown. Freeze option: Cover and freeze unbaked pie. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 400°. Place pie on a baking sheet; cover edge loosely with foil. Bake as directed, increasing time to 5-10 minutes or until heated through and a thermometer inserted in center reads 165°.

1 medium onion, chopped
2 Tbsp. margarine or butter
2 Tbsp. flour
1-1/2 cups beef broth
1/3 cup A.1. Original Sauce
1 boneless beef steak (1-1/2 lb.), cooked, cut into bite-sized pieces (about 3 cups)
3 cups frozen peas and carrots, thawed
pastry for 1-crust 9-inch pie

Steps:

  • Preheat oven to 400°F. Cook and stir onion in margarine in large saucepan on medium-high heat until crisp-tender. Blend in flour; cook and stir 1 minute. Add beef broth and steak sauce; cook and stir until mixture thickens and begins to boil. Stir in steak and peas and carrots. Spoon into 2-quart casserole dish.
  • Roll out pastry crust to size about 1-1/2 inches larger than size of casserole dish. Place pastry over casserole; turn under edge of pastry and press to edge of casserole dish to seal. Flute edge, if desired. Cut several slits in center of crust to vent.
  • Bake 25 to 30 minutes or until golden brown. Serve warm.

1 tablespoon olive oil, divided
1 lb ground sirloin
2 cups chopped zucchini
1 cup chopped onion
1 cup chopped carrot
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 lb sliced mushrooms
3 garlic cloves, minced
1/2 cup dry red wine
1/4 cup tomato paste
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon ground black pepper
1 (14 ounce) can reduced-sodium fat-free beef broth
2 tablespoons cornstarch
2 tablespoons water
1 (11 ounce) can refrigerated breadstick dough, room temp

Steps:

  • Preheat oven to 400 degrees.
  • Heat 1 1/2 tsp oil in a large non-stick skillet over med high heat.
  • Add beef; cook until browned, stirring to crumble.
  • Drain meat, wipe drippings from pan with paper towel.
  • Heat remaining 1 1/2 tsp oil in pan.
  • Add zucchini and next 6 ingredients (through garlic), saute 7 minutes or until veggies are tender.
  • Return beef to pan.
  • Stir in wine, tomato paste, Worcestershire sauce, pepper and broth.
  • Bring to a boil; cook 3 minutes.
  • Combine cornstarch and water in a small bowl; stir with a whisk.
  • Add the cornstarch mixture to the pan and cook 1 minute, stirring constantly.
  • Spoon beef mixture into a 11X7 baking dish coated with cooking spray.
  • Separate breadstick dough into strips.
  • Arrange strps in a lattice fashion over beef mixture.
  • Bake for 12 minutes or until browned.

3 lbs boneless beef chuck, cut into 1-inch cubes
2 tablespoons vegetable oil
1 garlic clove, crushed
1 (10 1/2 ounce) can condensed beef consomme, undiluted
1 (8 ounce) can tomato sauce
2 teaspoons salt
1/2 teaspoon dried thyme leaves
6 whole black peppercorns
1 bay leaf
1 teaspoon Worcestershire sauce
water
12 small white onions, peeled
1 lb carrot, pared and cut into 1-inch chunks
4 medium potatoes, pared and cut into 1-inch chunks
1 (10 ounce) package frozen green beans
1 cup frozen green pea
1/2 cup all-purpose flour
1 (9 1/2 ounce) package ready-to-bake refrigerated buttermilk flaky biscuits
1 egg yolk, beaten with
1 tablespoon water

Steps:

  • Wipe beef cubes with damp paper towels; discard excess fat. In hot oil in 6-quart Dutch oven or heavy kettle, over medium heat, brown one-third of beef cubes at a time until browned on all sides. Remove from pot and repeat until all beef is browned. Remove all beef from pot.
  • Add garlic to drippings in pot; saute 1 minute. Return all beef to pot; add undiluted consomme, tomato sauce, salt, thyme, peppercorns, bay leaf, Worcestershire sauce and 1 1/3 cups water. Bring to a boil; reduce heat, cover pot and simmer for 1 hour. Remove bay leaf.
  • Add whole onions to meat mixture; cover pot and simmer for 30 minutes longer. Add carrots and potatoes to meat mixture; simmer about 30 minutes longer or until they are tender. Add frozen beans; cook 4 to 5 minutes. Add frozen peas; cook 4 minutes longer. Preheat oven to 400°F.
  • With a slotted spoon, remove meat and vegetables to a 3-quart casserole. Strain liquid into a 4-cup measure; skim off and discard fat. You should have 2 cups liquid left. (Add water if needed.) Return liquid to Dutch oven. In a small bowl, gradually blend flour with 1 cup water.
  • Stir flour mixture into liquid; bring to a boil over medium heat, stirring constantly with a wooden spoon until gravy thickens. Pour over meat mixture in casserole. Place in oven; bake 25 minutes. Meanwhile, remove biscuits from package; roll one to make a 10-inch-long rope.
  • Repeat with other biscuits to make a total of 7 ropes; place on meat mixture in casserole to form a lattice. Place remaining 3 biscuits alongside. Brush ropes with egg-yolk mixture and bake for 15 minutes or until golden brown.

2 lb minced beef,
1 onion, diced fine
4 c finely diced vegetables (today i used carrot, celery, zucchini and peas)
2 tsp minced garlic
1 pkg french onion dry soup mix
2 Tbsp tomato paste
1 - 2 Tbsp worcestershire sauce
1/4 c red split peas (optional)
2 c water
1 Tbsp gravy granuals (gluten free if needed), mixed with about 2 tb of water
1/4 tsp dried thyme leaves (a large pinch)
3 Tbsp butter (i like salted) or margarine for dairy free
1/4 - 1/2 c milk, or dairy free option
6 - 8 large potatoes, peeled and chopped evenly
1/2 c grated cheese, optional (or dairy free option)
2 Tbsp dried bread crumbs (can use gluten free)

Steps:

  • 1. To make the meat filling: Heat the meat in a little oil and fry with the onion. Add the vegetables and cook for a further 10 minutes. Add everything else (not the gravy granuals) and cook for 30 - 40 minutes (or until the split peas are cooked) over a medium heat. Add the gravy granuals mixed with water and stir through until thickened. Pre-heat oven to 375oF/190oC.
  • 2. To make the potatoes: Boil potatoes in a large pot until tender. Strain well and mash with butter and milk. Taste and season if needed.
  • 3. Assembly: Pour the meat into a oiled/buttered lasange dish. Top with the potatoes (I gently drop spoonfuls all over and connect them with a fork) Top with cheese and breadcrumbs if using.
  • 4. To bake: Place in a pre-heated oven and bake for 35 - 40 minutes. It should be bubbly and golden. Remove from the oven and let sit for 10 minutes. Serve and enjoy!

1 1/2 pounds Potatoes (3 medium) peeled and cut into 1 1/2- to 2-inch pieces
1 dash Salt
1 pound Lean Ground Beef or lean ground lamb
1 tablespoon Corn or canola oil
1 cup Coarsely chopped onion (1 medium)
1 cup Finely chopped carrots (2 medium)
1/2 cup Finely chopped celery (2 stalks)
1 stalk Large leek (white part only), halved lengthwise, cleaned and cut into thin slices
2 cloves Garlic, finely chopped
1/2 cup Chicken broth (low sodium if canned)
2 tablespoons Tomato paste
1/4 cup Whole milk
2 tablespoons Unsalted butter, melted
1 dash Freshly ground black pepper

Steps:

  • Put the potatoes is a medium saucepan, fill it with enough water to cover the potatoes, and season with salt. Cover the pot and bring the water to a boil over high heat, then adjust the heat to cook the potatoes at a gentle simmer until they test tender with a fork, about 20 minutes.
  • Position a rack in the middle of the over. Preheat the oven to 375 degrees F. Have ready a baking dish with a 2 1/2- to 3-quart capacity.
  • In a large skillet over medium heat, cook the ground beef until it is no longer pink, stirring with a fork to break up any clumps. Remove the meat to a large bowl and set aside. Heat the oil in the skillet for 1 minute. Reduce the heat to medium-low and add the onion, carrots, celery, leek, and garlic. Cover the pan and cook the vegetables for about 5 minutes just to soften them. Stir the vegetables into the reserved cooked meat. Put the chicken broth in a small bowl and sitr in the tomato paste, then stir it into the meat mixture. Add salt and pepper. Transfer the filling to the baking dish.
  • Drain the potatoes and put them in the large bowl of an electric mixer. Add the melted butter and milk and beat on low speed until smooth, about 30 seconds. Season with salt and pepper and spread the potatoes over the filling. Use the back of a fork to draw crisscrossing lines over the top.
  • Bake until the edges of the potato topping are browned and the filling is bubbling gently, about 35 minutes. Use a large spoon to scoop out servings of potato and filling.

4 pounds beef chuck, cut into 1-inch pieces
Coarse salt and freshly ground pepper
3 tablespoons all-purpose flour
3 tablespoons extra-virgin olive oil, plus more as needed
1 tablespoon minced peeled fresh ginger
4 garlic cloves, minced
4 cups chicken or beef broth
1 cup pitted prunes (about 14)
1-inch piece cinnamon stick
10 whole cloves
4 large strips orange zest
1/2 teaspoon whole peppercorns
10 ounces pearl onions (preferably red)
3 pounds Yukon Gold potatoes, peeled, cut into 2-inch pieces
Coarse salt and freshly ground pepper
1 pound carrots, peeled, cut into 1-inch pieces
1 pound parsnips, peeled, cut into 1-inch pieces
1 cup whole milk
1 stick unsalted butter
1 1/4 cups grated aged Gouda or sharp cheddar cheese

Steps:

  • Stew:Preheat oven to 300 degrees with rack in lowest position. Season beef with salt and pepper; toss with flour to coat. Heat 2 tablespoons oil in a 6-quart Dutch oven over medium-high heat until shimmering. Brown beef in 3 batches, scraping and wiping out pot and adding just enough oil to coat pot between batches. Transfer beef to a plate.
  • Reduce heat to medium. Add 1 tablespoon oil, the ginger, and garlic to pot; cook until beginning to soften, about 3 minutes. Return beef to pot; add broth and prunes. Wrap cinnamon, cloves, zest, and peppercorns in cheesecloth, tie with kitchen twine, and add to pot. Bring to a simmer. Cover, and cook in oven until beef is almost tender, about 2 hours.
  • Meanwhile, cook onions in boiling water 2 minutes. Drain, peel, and add to stew. Cover, and cook until beef is fork-tender, about 30 minutes. Break up prunes; remove spice bundle. Let cool completely; refrigerate up to 5 days.
  • Topping:Place potatoes in a saucepan, cover with 2 inches of water, and add 2 1/2 teaspoons salt. Combine carrots and parsnips in another pan; cover with 2 inches of water, and add 1 1/2 teaspoons salt. Bring vegetables to a boil, reduce heat, and simmer until fork-tender, about 20 minutes. Drain potatoes; dry out in pan on stovetop 5 minutes. Drain carrots and parsnips.
  • Heat milk and butter until butter is melted. Mash vegetables together; stir in milk mixture. Season with salt and pepper. Let cool completely; refrigerate up to 5 days.
  • Preheat oven to 375 degrees. Spoon stew into ovenproof heavy skillets or baking dishes. Cover with vegetable mash; sprinkle cheese on top. Bake until stew is bubbling and cheese is melted, about 50 minutes, depending on pan size.

I first found this recipe in a Family Circle cookbook and decided to give it a whirl. My husband and I thought it was great and sooo easy to make. I've added a few changes to the recipe over the years, but it never fails to satisfy Enjoy!

1 pkg frozen pie crust (or can make your own)
2 Tbsp butter or margarine (melted)
1 c diced onion
1 c diced carrots
2 c chopped green cabbage
1 lb ground chuck
1 c beef broth, reduced sodium
1 Tbsp all purpose flour
2 Tbsp chopped fresh parsley
1 tsp salt
1/2 Tbsp each dried oregano, savory, thyme, & cumin
1/4 tsp pepper
1 egg, slightly beaten

Steps:

  • 1. defrost pie crust (or, if you're making your own crust, after mixing the dough and kneading it.. let rest for 30 minutes)
  • 2. In a large saucepan, saute onion, carrots, and cabbage in the melted butter stirring often till tender and slightly browned.... roughly about 15 minutes. Set aside in a large bowl.
  • 3. In same skillet, saute meat over high heat till no longer pink. Then lower the heat and add the flour and seasonings, stirring to mix well (be sure to scrape up any brown bits from the bottom of the pan. Then stir in the beef broth and bring back to a simmer. Simmer about 5 minutes till mixture is thickened, then add to the vegetables
  • 4. preheat oven to 400, roll the pie dough out to a 16 inch round on a lightly floured surface. Carefully place on a cookie sheet leaving about an inch between the crust and the edge of the pan. (about half the dough will be hanging out of the cookie sheet)
  • 5. Spoon meat and veggie mixture onto the half of the dough on the cookie sheet to about 2 inches from the edge of the dough, then fold over the other half to make a half moon shape. Pinch ends together to seal firmly.
  • 6. Mix egg with a tablespoon of water to make a glaze and brush over the top crust and cut steam vents into the top.
  • 7. bake at 400 for 30 minutes or till crust is golden brown. Slide onto a serving board and cut into slices for serving.
  • 8. *note, if using the premade crusts, you can use one whole crust for the bottom, and after mounding the meat in the center on the cookie sheet, use the second crust for the top, (or just make two half moon shapes dividing the filling evenly between them) still making sure to seal the edges and cut steam vents. I've also done this pot pie style using a deep dish pan with a top and bottom crust.

1 tablespoon olive oil
1.5 kilogram (3 pounds) gravy beef, cut into 2cm (¾-inch) pieces
60 gram (2 ounces) butter
1 medium_piece brown onion (150g), chopped finely
1 clove garlic, crushed
1/4 cup (35g) plain (all-purpose) flour
1 cup (250ml) dry white wine
3 cup (750ml) hot beef stock
2 tablespoon tomato paste
2 medium_piece potatoes (400g), cut into 2cm (¾-inch) pieces
1 large_piece carrot (180g), cut into 2cm (¾-inch) pieces
2 stalks celery (300g), trimmed, cut into 2cm (¾-inch) pieces
1 large_piece zucchini (150g), cut into 2cm (¾-inch) pieces
150 gram (4½ ounces) mushrooms, quartered
1 cup (120g) frozen peas
1/2 cup finely chopped fresh flat-leaf parsley
1 1/2 cup (225g) plain (all-purpose) flour
1 egg, beaten lightly
125 gram (4 ounces) cold butter, chopped coarsely
1 egg yolk
2 tablespoon iced water, approximately

Steps:

  • Heat oil in large saucepan; cook beef, in batches, until browned all over. Remove from pan.
  • Melt butter in same pan, cook onion and garlic, stirring, until onion softens. Add flour, cook, stirring, until mixture thickens and bubbles. Gradually stir in wine and stock, continue stirring until mixture boils and thickens slightly.
  • Return beef to pan with paste, potato and carrot, bring to the boil. Reduce heat, simmer, covered, 1 hour.
  • Meanwhile, make pastry. Process flour and butter until crumbly. Add egg yolk and enough of the water until ingredients come together. Knead dough onto floured surface until smooth, enclose with plastic wrap, refrigerate 30 minutes.
  • Add celery, zucchini and mushrooms to beef mixture, simmer, uncovered, about 30 minutes or until beef is tender. Remove from heat, stir in peas and parsley.
  • Preheat oven to 220°C (200°C fan forced).
  • Spoon beef mixture into deep 3-litre (12-cup) ovenproof dish, brush outside edge of dish with a little egg. Roll pastry between sheets of baking paper until large enough to cover dish. Lift pastry over dish, pressing edges with a fork to seal. Trim edge, brush pastry with egg.
  • Bake pie about 20 minutes or until browned.
