4 beef tenderloin steaks (4 oz. each), 1-inch thick
1 Tbsp. butter or margarine
1/2 cup whipping cream
3 Tbsp. milk
2 tsp. flour
2 tsp. chopped fresh thyme
1/4 cup A.1. Original Sauce

Steps:

  • Cook steaks in butter in large skillet on medium heat 5 minutes on each side or until cooked through. Remove from skillet; cover to keep warm.
  • Add cream, milk, flour and thyme to skillet; stir until well blended. Cook on medium-high heat until mixture comes to boil, stirring constantly. Reduce heat to medium-low; simmer 1 minute, stirring occasionally.
  • Stir in steak sauce. Serve over steaks.

3/4 cup sour cream
1/2 cup mayonnaise
2 tablespoons chopped fresh cilantro
2 tablespoons heavy cream
2 tablespoons prepared wasabi
1 clove garlic, grated
Salt and freshly ground black pepper

3 petite filet (shoulder tender) steaks
Olive oil, for drizzling

Steps:

  • For the wasabi cream: Combine the sour cream, mayonnaise, cilantro, heavy cream, wasabi, garlic and salt and pepper to taste in a bowl. Chill for 2 hours.
  • For the petite filet: Preheat the oven to 425 degrees F.
  • Heat a cast-iron skillet over medium-high heat until hot. Drizzle the steaks with olive oil and season with salt and pepper. Add the steaks to the skillet and sear quickly, about 1 minute per side. Transfer the skillet to the oven and roast for 5 minutes.
  • Serve with the wasabi cream.

1/3 c. sour cream
1/4 c. mayonnaise
1 tbsp. chopped fresh cilantro
1 to 2 teaspoons prepared wasabi paste
1 garlic clove, grated
1/4 tsp. kosher salt, plus more to taste

2 pounds sirloin steak (about 1 inch thick)
Olive oil, for drizzling
1 tsp. kosher salt
Black pepper, to taste
6 ciabatta rolls, split open
6 oz. sliced havarti or Swiss cheese
3 c. baby arugula
Potato chips, for serving

Steps:

  • Combine the sour cream, mayonnaise, cilantro, wasabi, garlic, salt and a few grinds of pepper in a small bowl. Cover and refrigerate 2 hours.
  • Preheat the oven to 425˚. Heat a large cast-iron skillet over medium-high heat until hot. Drizzle the steak with olive oil and sprinkle with the salt and a few grinds of pepper. Add to the skillet and cook until browned, about 2 minutes per side.
  • Transfer the skillet to the oven and cook 5 to 7 minutes for medium rare. Remove steak to a cutting board and let rest.
  • Meanwhile, place the bottom halves of the rolls on a baking sheet and top with the cheese. Bake until the cheese starts to melt, about 3 minutes.
  • Slice the steak and place on the roll bottoms. Top with the arugula. Spread the wasabi sauce on the top halves of the rolls and close the sandwiches. Serve with potato chips.

1 cup chopped fresh flat-leaf parsley
½ cup butter, softened
6 tablespoons Dijon mustard, divided
2 tablespoons whole green peppercorns, coarsely ground
2 tablespoons whole pink peppercorns, coarsely ground
2 teaspoons coarse kosher salt, or to taste
1 (3 pound) beef tenderloin, trimmed
1 (8 ounce) container sour cream
2 tablespoons prepared horseradish

Steps:

  • Mix parsley, butter, and 3 tablespoons Dijon together in a small bowl. Combine green and pink peppercorns with salt in a small bowl.
  • Place beef tenderloin on a rack set on top of a heavy, rimmed baking sheet. Rub butter mixture over the tenderloin, coating well. Pat peppercorn mixture into the butter. Cover and refrigerate for 3 to 24 hours.
  • Mix sour cream, remaining 3 tablespoons Dijon, and horseradish together in a small container. Cover and chill for 3 hours.
  • When ready to cook, preheat the oven to 350 degrees F (175 degrees C).
  • Uncover tenderloin and bake in the preheated oven until firm and reddish-pink and juicy in the center, about 1 hour. An instant-read thermometer inserted into the center should read between 135 and 140 degrees F (57 and 60 degrees C) for medium-rare/medium.
  • Transfer to a serving platter and loosely cover with foil. Let rest 10 minutes before slicing.
  • Serve with the sour cream-horseradish sauce.

2 tablespoons chopped shallot
1 tablespoon vegetable oil

Steps:

3/4 cup stone ground mustard
3 tablespoons honey
3 teaspoons wasabi paste
1 garlic clove, minced
2 tablespoons black peppercorns
2 tablespoons kosher salt
3 lbs beef tenderloin
2 tablespoons olive oil

Steps:

  • Blend salt and peppercorns in a spice grinder.
  • Rub the beef with olive oil and season with the salt and pepper mixture. Place in a roasting pan and roast in a 400 degree oven for about 50 minutes, or until the internal temperature reaches 135 degrees (medium rare). Remove from oven and allow to rest for at least 15 minutes.
  • Thinly slice the beef and arrange on a serving platter.
  • In a large bowl, mix together the mustard, wasabi, and honey.
  • Serve tenderloin slices with sauce and your choice of breads.
