Steps:
- In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.
- Stir in taco seasoning mix, water, salsa and corn. Heat to boiling; stir in rice. Boil 1 minute; remove from heat. Cover; let stand 8 minutes.
- Fluff rice mixture with fork; sprinkle with cheese. Cover; let stand 1 to 2 minutes or until cheese is melted. Sprinkle lettuce around edge of skillet; sprinkle tomato in circle next to lettuce. Serve with sour cream.

WW LOW FAT TACO BEEF SKILLET DINNER
Since starting Weight Watchers, I have missed the flavour of Mexican foods. But with calorie-filled toppings and wraps, they're not always diet-friendly. So I came up with this meal- it has the flavours of Mexican food without the majority of the calories and if you have extra points, you can even add a little guacamole or sour cream on top! It's worth using fresh salsa, not the jarred stuff for this recipe- it adds a lovely fresh bright flavour. Using extra lean beef, this recipe has a total of 19 Weight Watchers points by British points calculations.

Steps:
- Finely chop the red onion and green pepper and set aside.
- Put the beef stock in a saucepan and heat to boiling. Add the rice and cook, covered, until done (for my brand of rice this takes around 25 minutes).
- Meanwhile, in a non-stick skillet start to brown the ground beef for 3 minutes.
- Add the chopped red onion and bell pepper and cook, stirring, for a further 7 minutes.
- Add the frozen corn and cook for 3 minutes more.
- Add the water and taco spice mix. Turn down the heat and cook until the meat is done and the liquid is almost completely absorbed. This takes 5-10 minutes.
- Meanwhile check on the rice- it should be nearly done. Remove from the heat when cooked and the liquid is absorbed.
- When the meat mixture is cooked, stir in the rice.
- Turn off the heat and stir in the salsa. Serve immediately, topped with coriander/ cilantro if desired.

Just happened to run across a recipe in a magazine. Read it and decided to renovate it. So this is my finished keeper. This is a versatile recipe. You can make this as hot or mild as you like. You can even bake it in the oven with the cheese. This recipe does not include oven time.

- Cook beef in a large skillet with onion till done.
- Drain well.
- Return meat to skillet and add everything except the cheese and fritos and heat till hot.
- When meat mixture is hot again add the fritos.
- When serving top each portion with cheese and your favorite taco toppings.
- Variation #1 Creamy Mexican Style.
- Stir in 1/2 cup sour cream with the soup, omit the fritos and add torn flour tortillas.
- Variation #2 Ranchero Style.
- Omit the fritos and add torn corn tortillas or broken taco shells.
- If you bake this; heat oven to 350.
- Bake for 20 minutes or till hot, shut oven off.
