3 cups shredded peeled potatoes, well drained
1 cup shredded part-skim mozzarella cheese
3/4 cup cooked taco meat
1/4 cup chopped onion
1 cup heavy whipping cream
5 large eggs
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Combine oil and potatoes in a 10-in. pie plate. Press mixture down evenly to form a crust. Bake at 425° until lightly browned, about 10 minutes. , Layer with the mozzarella, taco meat and onion. Whisk together the cream, eggs, salt and pepper; pour over beef mixture. Bake until a knife inserted in center comes out clean, about 30 minutes.

1/4 cup chopped onion
1/4 cup chopped green pepper
1 envelope taco seasoning
1 cup shredded cheddar cheese
1/2 cup biscuit/baking mix
2 large eggs, lightly beaten

  • In a large skillet, cook the beef, onion, green pepper and taco seasoning over medium heat until meat is no longer pink; drain. Spread into a 9-in. greased pie plate. 5 eggs, beaten
2 cups milk
1 (8 ounce) jar chunky salsa
½ green bell pepper, chopped
½ onion, chopped
1 (16 ounce) package shredded Mexican-style cheese blend
salt and black pepper to taste

1 (1 ounce) packet taco seasoning mix
1 (9 inch) unbaked deep dish pie crust

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Whisk together the eggs, milk, salsa, bell pepper, onion, and Mexican-style cheese in a bowl. Season with salt and pepper. Set aside.
  • Heat a large skillet over medium-high heat and stir in the ground beef. Cook and stir until the beef is crumbly, evenly browned, and no longer pink, 8 to 10 minutes. Drain and discard any excess grease. Stir in the taco seasoning, then spread the meat mixture into the pie crust. Pour the egg mixture over the beef.

1 tbsp sunflower oil
500g beef mince
300ml beef stock
2 tbsp cumin seeds
1 tbsp coriander seeds
1 tsp black peppercorns
1 tsp chipotle chilli flakes
1 tbsp paprika
1 tbsp dried oregano
1 tsp garlic granules
1 tsp onion granules
2 tsp cornflour
1 large red onion, finely sliced
1 lime, juiced, plus wedges to serve
6-8 small soft wheat or corn tortillas
1 avocado, stoned, peeled and chopped into small chunks
1 tomato, chopped into small chunks
handful of feta, crumbled, or use grated mild cheddar (optional)
2 handfuls of tortilla chips, crushed (optional)

Steps:

  • First, make the spice mix. Toast the cumin seeds, coriander seeds and peppercorns in a small, dry frying pan, then tip into a spice grinder or use a pestle and mortar to crush to a rough powder. Add the remaining spice mix ingredients, except the cornflour, then grind again. Stir through the cornflour and a pinch of salt. The spice mix will keep in an airtight jar for up to one month.
  • For the pickled onions, toss the onions with the lime juice and a pinch of salt in a medium glass bowl, then set aside to soften.
  • Heat the oil in a frying pan over a medium-low heat, and crumble in the mince. Cook for 15-20 mins. At first, it will release some liquid, but once that has bubbled away, the mince will sizzle in its own fat and start to brown and crisp. At this point, stir or toss the mince with a wooden spoon so it browns and caramelises all over. When the mince is well toasted, sprinkle over half the spice mix and continue to cook for 2 mins. Pour over the beef stock and reduce the heat to a simmer. Cook gently for 10 mins until the beef has absorbed most of the stock, and is in a rich, thick gravy. Taste for seasoning.
  • To assemble the tacos, toast the tortillas in a hot, dry frying pan, or over a flame until lightly blistered. Transfer to a serving plate and spoon the mince into a bowl, then serve the other ingredients in separate bowls, so everyone can assemble their own. Alternatively, spoon the mince into the tortillas, then top with the avocado, tomato, cheese (if using), pickled onions and crushed tortilla chips, if using. Serve the lime wedges on the side for squeezing over.

1 unbaked pastry shell (9 inches)
1-3/4 cups finely chopped cooked roast beef
1/4 cup chopped green onions
1 tablespoon all-purpose flour
4 large eggs
1/2 cup evaporated milk
1 tablespoon steak sauce
1/8 teaspoon each dill weed, dried basil and dried oregano
Salt and pepper to taste
2 cups shredded cheddar cheese
1/2 cup chopped green pepper

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 5 minutes; remove foil. Bake 5 minutes longer. Reduce heat to 375°. Sprinkle beef and onions into the crust. , In a bowl, beat the flour and eggs until smooth. Add milk, steak sauce and seasonings; beat until smooth. Stir in cheese and green pepper. Dough for 2 single-crust pies
2 cups cubed cooked chicken
2 envelopes taco seasoning, divided
2/3 cup salsa
2 cups shredded cheddar cheese
8 large eggs
2 cups half-and-half cream
2 tablespoons butter, melted
1 can (4 ounces) chopped green chiles
1/2 cup sliced ripe olives

  • On a lightly floured surface, roll half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Repeat with remaining dough. Refrigerate 30 minutes. Preheat oven to 425°. , Line unpricked crusts with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edges are light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. 4 eggs
3/4 cup milk
1 1/4 cups baking biscuit mix (like Bisquick)
1 dash pepper
1/2 cup sour cream
2 1/2 cups chopped lettuce
3/4 cup chopped tomato
1/4 cup chopped green pepper
1/4 cup chopped green onion
2 cups shredded cheddar cheese
1 (4 ounce) can black olives (optional)

Steps:

  • Brown meat in a skillet; drain.
  • Add taco seasoning and prepare according to the package directions.
  • Spoon mixture into greased glass 13x9x2-inch baking dish.
  • In a bowl, beast eggs and milk.
  • Add biscuit mix and pepper; mix well.
  • Pour over meat.
  • Bake, uncovered, at 400°F for 20-25 minutes or until golden brown.
  • Cool for 5-10 minutes.

8 (6-inch) corn tortillas

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onion and jalapeno; season with salt and pepper. Cook, stirring occasionally, until softened, 4 to 5 minutes.
  • Add garlic, chili powder, and cumin to skillet; stir until fragrant, about 1 minute. Add beef; cook, breaking up meat with a spoon, until no longer pink, about 5 minutes.
