Souvlaki Marinade (Chicken, Beef, Pork And/Or Lamb) image

MARINATES FOR 24 HOURS (or a long as time allows!) Simply throw the ingredients into a plastic zipper bag with the meat of choice and refrigerate until ready to grill!

4 lemons, quartered
2 lemons, juice of
1 cup white wine
1/4 cup olive oil
1 teaspoon salt
1 teaspoon oregano
1/2 teaspoon rosemary
pepper, to taste
2 bay leaves
2 garlic cloves, crushed

Steps:

  • Put all ingredients into the zipper bag.
  • Add meat of choice.
  • Refrigerate for up to 24 hours, turning occasionally to coat meat evenly.
  • Reserve marinade to brush on meat while grilling.

1 lb sirloin tip steaks or 1 lb round steak
2 teaspoons dried oregano
2 teaspoons minced garlic
1/2 teaspoon ground black pepper
2 teaspoons oil
1/4 cup lemon juice
1/3 cup plain yogurt
1/2 teaspoon dried dill
1 teaspoon red wine vinegar
1 teaspoon minced garlic

Steps:

  • Combine spices and oil and press into meat on both sides.
  • Cut meat into 1 inch cubes and toss with lemon juice and let stand for 5 minutes.
  • Thread on skewers.
  • Broil or grill for about 5 minutes, turnning once.
  • Do not overcook.
  • Combine sauce ingredients and serve with Souvlaki.

1 - 1 1/2 lbs tri-tip steak, either whole or cut into kebab sized cubes.
2 tsp dried oregano
2 tsp minced garlic
1/2 tsp freshly ground black pepper
1 tbsp olive oil
1/4 cup lemon juice
1/8 cup red wine vinegar

Steps:

  • 1. Marinade the beef in all of the other ingredients for at least 2 hours. 2. If making kebabs, skewer the beef. You can alternate the beef with chunks of vegetables like red bell peppers, mushrooms, onions, grape tomatoes, squash, zuccinni. 3. Grill the steaks or kebabs to desired doneness. Serve with white rice or pita bread, tsaziki sauce, and a greek salad.

1 (12 inch) pre-baked pizza crust
1 cup tzatziki sauce
½ cup sliced, cooked beef, or to taste
1 cup sliced and quartered cucumber
1 cup pitted and diced kalamata olives
1 cup crumbled feta cheese
1 cup shredded mozzarella cheese
1 egg yolk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place pizza crust on a baking sheet or pizza pan. Spread tzatziki sauce over crust and top with beef, cucumber, olives, feta cheese, and mozzarella cheese, respectively. Brush egg yolk over exposed pizza crust.
  • Bake in the preheated oven until cheeses are melted and crust is shiny golden brown, about 15 minutes.
