BEEF & PORK FAJITAS [REMIX]
Our awesome dinner today was made using leftovers, in a creative way, by adding a few other ingredients. I made a Garlic Seasoned Beef Filet, the other day that I purchased at Sam's Club, had quite a bit left over, and also had a few slices of a boneless Pork Loin Roast left over. Steps:
- 1. For this recipe I used pre cooked beef & Pork, but you can also use chicken or ground beef or any meat of your choice. This was a way for me to use my left over Seasoned Beef Filet, and Center Pork Loin Roast. So use what ever you have on hand.
- 2. Wash & Cut the red and green bell peppers into strips, as well as slice the onions into thick slices but separate the rings. Cut the beef & pork also into nice size strips.
- 3. Add the olive or canola oil and butter to a 12 inch skillet and heat over medium high heat. Then add the sliced peppers and onions.
- 4. Cook till crisp tender, then remove from skillet.
- 5. Add sliced meat to same skillet, then add the seasoning packets and water, cook and allow to simmer for about 3 to 5 minutes or until heated through.
- 6. Add the vegetables back into the skillet with the meat and stir to mix together, and allow to simmer over low heat.
- 7. Fill large tortilla with a generous serving of the meat mixture, fold and wrap and serve as desired, adding additional condiments if desired. Makes 6 generous servings.
