QUICK BEEF AND ZUCCHINI SKILLET (MEAL-PREP)



Quick Beef and Zucchini Skillet (Meal-Prep) image

Beef and zucchini makes a quick evening meal or a great meal prep solution. Full of flavor and nutrition, it is ready is about 30 minutes.

1 tablespoon olive oil
2 cups baby potatoes (diced)
salt and black pepper
1 lb beef stew meat (cut into bite-sized pieces)
salt and black pepper to taste
1 teaspoon onion powder
½ teaspoon Italian seasoning
1 tablespoon olive oil
2 tablespoons butter
3 garlic cloves (minced)
1 medium zucchini (diced)
Fresh thyme

Steps:

  • Preheat oven to 400 F degrees. Line a baking sheet with parchment paper. Set aside. In a large bowl, add potatoes, olive oil, salt and black pepper. Mix everything very well to combine.
  • Place the potatoes in a single layer on the prepared baking sheet. Bake for 30 minutes or until browned and tender. Turn potatoes after 20 minutes.
  • While potatoes are in the oven, cook the beef and zucchini by placing steak bites, onion powder, Italian seasoning, salt and black pepper in a bowl. Mix everything together well.
  • Add olive oil in a large skillet over medium-high heat. Once the pan is hot, place the steak bites in the skillet in a single layer. Cook for 3-4 minutes and don't forget to stir. Add butter and garlic to the skillet. Cook for about 1 minutes or until the butter is totally melted and the garlic is cooked.
  • Add zucchini and cook for more 3 minutes or until zucchini is tender.
  • Remove potatoes from the oven and add to the beef and zucchini skillet. Mix everything well and garnish with fresh thyme.
  • Place an even amount of beef, zucchini and potatoes into 4 different medium glass containers. Cover with the lid and place in the fridge for up to 4 days. Heat in the microwave for about 1.5 or 2 minutes. Enjoy!

1 pound lean ground beef
1 medium sweet onion, finely diced
1 (8 ounce) package sliced white mushrooms
1 (6.5 ounce) can tomato sauce
1 (6 ounce) can sliced black olives
2 cloves garlic, minced
1 (14.5 ounce) can Italian-style stewed tomatoes
salt and ground white pepper to taste
4 medium zucchini
1 (8 ounce) package shredded sharp Cheddar cheese

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Stir mushrooms, tomato sauce, olives, and garlic into the skillet. Crush stewed tomatoes into smaller pieces and add to the mixture. Season with salt and white pepper. Let simmer, uncovered, until liquid reduces, 20 to 30 minutes.
  • Slice zucchini lengthwise; cut into 1/2-inch slices and add to the skillet. Cook, covered, until firm yet tender to the bite, 5 to 7 minutes. Stir in Cheddar cheese and cook, covered, until melted, 3 to 4 minutes. Serve.

1 cup uncooked instant rice
1 cup shredded cheddar cheese

Steps:

  • In a large skillet, crumble beef and cook with onion and pepper over medium-high heat until no longer pink, 5-7 minutes; drain., Stir in seasonings, vegetables, water and rice; bring to a boil. 2 cloves garlic, minced
2 small zucchini, cubed
2 (8 ounce) cans tomato sauce
½ teaspoon dried oregano
½ teaspoon dried basil

2 cups seashell pasta
1 (28 ounce) can whole peeled tomatoes
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Heat a large skillet over medium-high heat; cook and stir beef and garlic in skillet until beef is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease. Stir in zucchini, tomato sauce, oregano, and basil; bring to a boil. Cover, reduce heat to medium-low, and simmer until zucchini is tender, about 15 minutes.   • Meanwhile, bring a large pot of lightly salted water to a boil. Cook shell pasta in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.

Steps:

1 lb sirloin steak (cut into 1-inch cubes)
1 teaspoon steak seasoning (spicy flavor)
2 tablespoons canola oil (divided)
1 small vidalia onion (sliced thin)
2 garlic cloves (minced)
2 (15 1/2 ounce) cans beef broth (low fat and low sodium)
1 (15 ounce) can tomato sauce
1/2 lb ditalini (or other long tubular pasta)
2 zucchini (diced into 1/4 inch cubes)
2 Italian tomatoes (diced)
basil (to taste)

Steps:

  • Cut steak into 1-inch cubes.
  • Season with the spicy steak seasoning.
  • In large non-stick skillet, heat 1 tablespoon of oil over medium-high heat.
  • Add steak and cook until browned all over (approximately 3-5 minutes).
  • Remove steak to a plate and cover to keep warm.
  • Add and heat the remaining 1 tablespoon of oil in skillet.
  • Add thinly sliced onion and minced cloves of garlic - saute 5 minutes.
  • Add beef broth and tomato sauce and bring to a boil.
  • Add pasta and cover skillet.
  • Simmer for 8 minutes - stirring often.
  • Add thickly diced (1/4 inch) zucchini and cook covered until zucchini is crisp-tender (approximately 6-8 minutes).
  • Return steak to skillet and add diced tomatoes.
  • Heat everything through for 1 minute.
  • Top with basil (to your taste) before serving.
