1 pound ground beef
1 small onion, finely chopped
1 clove garlic, finely chopped
4 cups water
2 tablespoons beef base
1 (8 ounce) can tomato sauce
1 tablespoon Worcestershire sauce
1 teaspoon ground black pepper
½ teaspoon celery salt
¼ teaspoon ground marjoram
5 large carrots, cut into rounds
4 medium potatoes, peeled and cubed
1 cup green beans, trimmed and cut into 1-inch pieces
3 tablespoons all-purpose flour
2 tablespoons water, or more as needed

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add 4 cups water and beef base; stir to combine. Add tomato sauce, Worcestershire sauce, pepper, celery salt, and marjoram; bring to a simmer.
  • Add carrots and simmer for 35 minutes. Add potatoes and green beans; cook until tender, about 15 minutes.
  • Meanwhile, mix flour and 2 tablespoons water together in a small bowl until no longer lumpy, adding more water if necessary. Stir into stew and simmer until thickened, 5 to 10 minutes.

This is a very substantial beef stew that is enhanced by roasting to the vegetables prior to adding to the stew. I have perfected it over the years and my family and friends love it. Serve over steamed rice or noodles.

2 pounds beef chuck roast, cubed
4 tablespoons olive oil
1 onion, chopped
¼ pound fresh mushrooms, sliced
4 carrots, coarsely chopped
4 large russet potatoes, cut into quarters
2 stalks celery, chopped
4 cloves garlic, minced
2 tablespoons all-purpose flour
1 bay leaf
2 cups beef broth
½ cup red wine
¼ cup tomato paste
salt and pepper to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Place beef cubes in a metal roasting pan and stir in 2 tablespoons olive oil. Put in the oven, on the middle rung and cook for 30 minutes, turning occasionally, until brown and tender.
  • Meanwhile, put onions, mushrooms, carrots, potatoes, celery, and garlic in a roasting pan. Stir in 2 tablespoons olive oil. Place in oven underneath beef. Bake for 35 to 40 minutes, stirring occasionally, until tender. Remove both beef and vegetable mixture from oven.
  • Remove beef from roasting pan and set aside. Place roasting pan, on medium high heat. Add wine and bring to a boil, scraping up the bits of drippings, stirring. When the bottom of the pan is clear of all browned pieces, remove from heat.
  • Put beef and wine mixture in a Dutch oven and stir in beef broth and add bay leaf and tomato paste. Bring to a boil. Reduce heat and simmer, covered, for 40 minutes.
  • Add 2 tablespoons flour to cooked vegetables and toss until all vegetables are coated. Add vegetables to beef stew. Simmer, covered, for 20 minutes, or until vegetables are heated through and tender. Serve hot.

4 cups chicken or beef broth, divided

1/2 medium butternut squash (1 pound), peeled and diced medium (2 cups)
1/2 cup pearl barley

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium-high. Season beef with salt and cook until pieces are browned on all sides, about 6 minutes. Transfer to a 5-to-6-quart slow cooker.
  • To the skillet, add remaining tablespoon oil, the garlic, and thyme and saute until fragrant, 1 minute. Add 2 cups broth and cook, stirring and scraping up browned bits with a wooden spoon. Transfer mixture to slow cooker.
  • Add potatoes, squash, barley, 2 cups water, and remaining 2 cups broth to slow cooker, cover, and cook on high until meat is very tender, 4 hours (or 8 hours on low). Using two forks, shred beef. Season to taste with salt and pepper.

Steps:

  • Pre-heat electric pressure cooker; add 1 tablespoon oil to the pot.
  • Mix flour, paprika, salt, pepper, cumin, oregano, and garlic powder together in a mixing bowl. Toss cubed beef with flour mixture. Brown beef cubes in 3 batches in preheated cooker about 8 minutes per batch, adding an additional tablespoon of oil after each batch. As beef browns, transfer it to a dish.

I love stew in the winter, especially when I come home from work and it's already cooked and pretty much ready to be eaten. Yummy!

2 cups potatoes
1 cup parsnip
1 cup turnip
1 cup carrot
1 lb stewing beef
steak spice (I use clubhouse brand)
Worcestershire sauce
1 garlic clove (crushed)
1 onion (medium)
1 cup green beans
1 cup celery
1 1/2 cups button mushrooms
2 (10 ounce) cans cream of mushroom soup (I use the low fat Campbell's)
1/2 cup broth (beef or vegetable)
gravy mix (I use Veloutine)
1 cup frozen peas

Steps:

  • Chop up potatoes, parsnips, turnips and carrots into 1 inch cubes. Don't chop them too small - you want big chunky veggies. (if you want, you can also add sweet potatoes or yams too!).
  • Put the chopped potatoes, parsnips, turnips and carrots into the bottom of your crockpot, in that order.
  • Chop up the beef into approximately 1 inch cubes, and then put it on top of the veggies.
  • Squirt some Worcestershire sauce on top of the beef, and then sprinkle the steak spice and crushed garlic over top.
  • Chop the onion into big chunks - do not separate the layers - and put them over top of the beef.
  • Next cut up the green beans and celery into 1 inch long pieces, and put them on top of the onion.
  • Throw the button mushrooms on the top (or you can use large mushrooms cut in half).
  • Now mix the two cans of cream of mushroom soup and the 1/2 cup beef or vegetable broth together and dump it over top of the layers.
  • Lastly, I put aluminum foil over top of my crockpot, and then the lid because my lid doesn't fit tightly. If you want this to cook up nicely, you don't want to let any of the heat out.
  • Cook on low for approximately 6-8 hours.
  • Before you eat, ladle out the liquid and put into a pot with the gravy thickener and make a gravy base for the stew (otherwise it will be more soupy).
  • While you're making the gravy, throw the frozen peas into the crockpot and stir it up.
  • When the gravy is ready, pour it back into the crockpot, stir it all up, and it's ready to be eaten!

1 (2- to 3-pound) head Napa cabbage
1/2 of a (14- to 16-ounce) package firm tofu (halve lengthwise), rinsed and drained
6 to 8 ounces fresh enoki mushrooms, trimmed
3 1/4 cups water
3/4 cup soy sauce (preferably naturally brewed), or to taste
2/3 cup mirin (Japanese sweet rice wine)
1 1/2 to 2 tablespoons sugar, or to taste
1 ounce beef suet
4 negi (Japanese leeks) or 1 bunch large scallions, white and pale green parts only, cut diagonally into 2-inch pieces
8 large fresh shiitake mushrooms (6 ounces total), stems discarded and caps halved
1/4 pound Japanese greens, such as chrysanthemum (sometimes labeled "shungiku"), mizuna, or watercress, cut into 3-inch pieces (4 cups)

a deep 12-inch heavy skillet (3 1/2-quart capacity)

  • Wrap beef tenderloin in plastic wrap and freeze until firm but not frozen solid, about 45 minutes. Discard plastic wrap, then slice beef across the grain with a sharp knife into very thin slices (less than 1/8 inch thick). Arrange slices in 1 layer on a plate and chill, covered, until ready to use.

Add negi and cook, stirring occasionally, until golden, 2 to 3 minutes. Add soy sauce mixture, then arrange noodles evenly on top. Arrange cabbage, tofu, and shiitake mushrooms on top of noodles. Divide enoki into small clusters and tuck in and around vegetables, leaving cap ends protruding. Arrange greens evenly on top and bring liquid just to a boil over high heat, then reduce heat and gently simmer, covered, 10 minutes. Remove from heat and arrange raw beef slices in 1 layer on top of greens (some slices will overlap), then cover again. Let stand off heat until meat is cooked rare to medium-rare, 5 to 10 minutes.
  • Serve sukiyaki in shallow bowls. If desired, beat eggs (1 per guest) in separate small bowls to serve as a dipping sauce.

2 pounds london broil roast
1 teaspoons vegetable oil
1 units onion
1 packages baby carrots
4 stalks celery
0.25 teaspoons garlic
2 units onion soup mix
56 units potatoes
2 cans whole kernel corn
1 cans tomatoes
1 cans tomato juice
1 cans peas
1 cans baby lima beans
2 cans green beans
1 units salt
1 units pepper
12 cups water
0.5 heads cabbage

Steps:

  • Cut the London broil up into small bite sized pieces - just before finishing cutting the broil - place the oil into the stew pot and put on medium heat. Place the broil into the stew pot and sear the outside of the meat till brown - stirring occasionally.
  • Dice up your onion into "hearty" pieces as well as the carrots and cut up the celery into smaller pieces and place in the pot with the browning meat. Let the vegetables and meat simmer together until onions are starting to turn translucent and the 1/4 - 1/2 tsp. of fresh diced garlic and the two envelopes of onion soup mix. 1 cup of water can be added at this time to the pot continuing to stir occasionally.
  • Cut up potato into large bite sized pieces and add them at this time. Let this simmer while opening the cans of the remaining vegetables. Keep all juices with the vegetables EXCEPT for the green beans and lima beans..
  • Start putting in the canned vegetables including the juice for the corn, peas, diced tomatoes - drain the juice from the green beans and lima beans and pour those in as well. Stir well.
  • Now you can put in the tomato juice and an extra cup of water - amount of water varies depending on how "juicy" you like your stews this will be pretty thick by the end of the time. Salt & Pepper to taste
  • Let simmer for 2-3 hours on medium heat or until potatoes/carrots and celery are soft and tender to the fork. 45 minutes before serving if you like cabbage it can be added at this time.

1 can condensed tomato soup (284 mL)
1 large can condensed cream of mushroom soup (541 mL)
1 cup water (or beef broth)
1 celery stalk, chopped
1 carrot, peeled and chopped
½ yellow onion, chopped
½ green pepper, chopped
1 red potato, peeled and chopped
1 small turnip, chopped
5 crimini mushrooms, thickly sliced
(1 cup chopped uncooked beef)
½ tsp minced garlic
½ tsp garlic powder
½ tsp dried thyme
½ tsp dried rosemary
¼ tsp dried parsley
¼ tsp dried basil
¼ tsp dried marjoram
½ tsp ground pepper
pinch seasoning salt

4 small onions, quartered
1 1/2 cups water
1/3 cup dry sherry or 1/3 cup beef broth

1 1/2 teaspoons ginger

1 (16 ounce) package frozen mixed vegetables, broccoli carrots water chestnuts and red peppers
2 tablespoons water
2 tablespoons cornstarch

Steps:

  • Heat oil in Dutch oven or large saucepan over medium-high heat until hot.
  • Brown beef.
  • Add onions, 1 1/2 cups water, sherry, sugar, ginger and soy sauce; mix well.
  • Bring to a boil Reduce heat; cover and simmer 1 1/2 hours or until beef is tender, stirring occasionally.
  • Add vegetables.
  • Bring to a boil.

1 pound beef chuck roast with bones, cut into 2-inch pieces
1/2 pound boneless beef stew meat, cut into 1 1/2-inch pieces
1 medium white onion, chopped
4 cloves garlic (medium), thinly sliced
2 bay leaves
1 teaspoon salt
1 teaspoon dried oregano (Mexican variety preferred), crumbled
1/2 teaspoon ground cumin
2 , ancho chile kimmy, , cut open and seeded, veins removed
2 , guajillo chile kimmy, , cut open and seeded, veins removed
3 medium tomatoes, cored and coarsely chopped
10 , large epazote, leaves, or 1/4 cup chopped cilantro
3 medium carrots (6 ounces), peeled and sliced 1-inch thick
2 small zucchini (6 ounces), sliced 1-inch thick
2 ears corn, cut crosswise in 2-inch pieces
4 to 5 ounces young slender green beans, cut in half
2 limes, quartered

Steps:

  • 1. Put the meat in a large pot with 2 quarts of water and bring to a boil. Reduce the heat to medium-low, and skim the foam that rises to the top as it boils. After 10 minutes, add the onion, garlic, bay leaves, salt, oregano, and cumin. Cover and simmer 1 hour and 30 minutes. 2. Meanwhile, heat a medium dry skillet over medium heat, and toast the chiles, pressing them flat with a spatula, until aromatic, about 5 seconds on each side. (Do not burn, or the chiles will be bitter.) Cool the chiles then tear into pieces, and put into a blender. Process as fine as possible. Add the tomatoes and epazote. Purée. Strain, pushing the puree with a wooden spoon, through a fine-mesh strainer into the soup pot. Cover and simmer 30 minutes. 3. Add the carrots and turnips, and cook 15 minutes. Add the zucchini, corn, and green beans. Cook until the vegetables are tender, about 12 to 15 more minutes. Taste and add salt, if needed. Serve in soup bowls.
