  • Whisk vinegar, sugar, and olive oil together in a bowl.

1 can (10 oz. each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 pkg. (8 oz. each) VELVEETA, cut into cubes
1/2 cup chopped green onions
tortilla chips, optional

Steps:

  • Combine refried beans, undrained beans, undrained tomatoes, Velveeta and onions in medium saucepan. Heat over medium-low heat until Velveeta melts, stirring frequently.

1 (15 ounce) can cannellini, drained (white kidney beans)
3 tablespoons olive oil
3 tablespoons fresh parsley, chopped
2 tablespoons parmesan cheese, freshly grated
2 teaspoons fresh oregano, chopped
1 garlic clove, chopped

assorted fresh vegetable (such as carrots and Belgian endive, and blanched broccoli florets and asparagus)

Steps:

  • Combine first 6 ingredients in processor.
  • Blend well until almost smooth.
  • Transfer to bowl.
  • Season dip with salt and pepper, to taste.
  • (Can be made 1 day ahead. cover; chill. Bring to room temperature before serving.) Place bowl with dip on platter.
  • Serve with breadsticks and vegetables.
  • Makes about 1 1/2 cups.

3/4 cup sour cream
1 (3 ounce) package cream cheese (softened to room temperature)
1 Tablespoon chili powder
1/4 teaspoon ground cumin
1 Bag Corn Tortilla chips

Steps:

  • Heat refried beans and salsa in a saucepan over medium heat until heated through.
  • Stir in cheddar cheese, monterey jack cheese, sour cream, cream cheese, chili powder and ground cumin.
  • Cook while stirring continuously, until heated through.

From the blog "A Year of Slow Cooking". This recipe is for the mini Little Dipper slow cooker. It can be doubled for a slightly larger slow cooker, or do what I did, using a heat-safe bowl and a larger slow cooker. I'm guessing on servings - I ate most of this instead of dinner.

8 ounces refried black beans (1/2 of a can)
2 garlic cloves, chopped
1/2 lime, juiced
1 teaspoon cayenne pepper
1 teaspoon cumin
2 tablespoons chopped cilantro leaves
3 -5 slices goat cheese, about 2 to 3 ounces

Steps:

  • Mix all of the ingredients except the cheese in a Little Dipper (If you don't have one, mix in a small heat proof bowl). (Note - this was very spicy, so reduce the cayenne if you don't want it that hot).
  • Top with the cheese and heat for 1 to 2 hours. (If you don't have a Little Dipper, place a rack in your slow cooker - I use canning jar rings - and pour about 1/2 in of hot water into the slow cooker, Place paper towels under the lid and heat for around 1 1/2 hours on High).
  • Serve with tortilla chips.

half c ketchup
1 pkg taco seasoning mix
1 can(s) brown sugar pork and beans
1 pkg 8 ounces shredded colbeyand monterey jack cheese, divided
1 can(s) 4.5 ounce can chopped green chiles, drained

Steps:

  • 1. Preheat oven to 425F
  • 2. In a large bowl, mix together Cream Cheese, Ketchup and Taco Seasoning mix until smooth. Stir in Beans, 1 and 1/2 cups of cheese blend and Chiles. Pour into a greased 1 and 1/2 quart baking dish. Spead remaining 1/2 cup of cheese blend evenly on top.
  • 3. Bake uncovered 15 to 20 minutes, or until cheese is melted and lightly browned. Serve warm.

Fava Bean and Goat Cheese Dip with Radishes image

Here's an easy way for fava bean fans to enjoy the ingredient during its short peak season, March to May. At other times, shelled edamame are a worthy stand-in. Radishes make good, crunchy dippers for either version.

Coarse salt and freshly ground pepper
2 pounds fava beans, shelled
1/2 cup soft goat cheese (4 ounces)
3 tablespoons extra-virgin olive oil
1 teaspoon chopped fresh tarragon
1 teaspoon finely grated lemon zest, plus 1 tablespoon fresh lemon juice
1 tablespoon water, plus more if needed
1 bunch radishes, halved if large

Steps:

  • Prepare an ice-water bath. Bring a saucepan of salted water to a boil. Cook fava beans until tender, 1 to 2 minutes. Drain, and transfer to ice-water bath. Let cool. Drain, and peel beans.
  • Pulse beans, goat cheese, oil, tarragon, lemon zest and juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a food processor until just combined but still chunky, about 6 or 7 times. Stir in water. Add an additional tablespoon water if mixture is too thick. Transfer to a bowl. Refrigerate until ready to serve.
  • Sprinkle with pepper just before serving. Serve with radishes.
