1 pound dried Great Northern beans
2 tablespoons vegetable oil
1 onion, chopped
3 cloves garlic, minced
3 large bay leaves
2 quarts water
2 cubes chicken bouillon
2 pounds butternut squash - peeled, seeded, and cut into chunks
2 cups chopped carrots
2 stalks celery, chopped
2 ½ teaspoons salt
¾ teaspoon ground black pepper
¾ teaspoon ground white pepper
½ teaspoon ground ginger
½ teaspoon allspice
1 (12 ounce) package pre-cooked chicken sausage, cut into bite-size pieces

Steps:

  • Place Great Northern beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain.
  • Heat oil in a large pot over medium heat; cook and stir onion and garlic in the hot oil until onion is translucent, 5 to 10 minutes. Add bay leaves and cook until fragrant, about 1 minute.
  • Mix beans, water, and bouillon into onion mixture; bring to a boil. Reduce heat, cover pot, and simmer, stirring occasionally, until beans are tender, about 1 hour.
  • Stir squash, carrots, celery, salt, black pepper, white pepper, ginger, and allspice into broth mixture; simmer until squash and carrots are tender, about 20 minutes.
  • Remove bay leaves from broth mixture and discard. Scoop 2 to 3 cups of vegetable-bean mixture using a slotted spoon from broth; blend broth and remaining vegetable-bean mixture using a hand blender until smooth. Return the vegetable-bean mixture to broth mixture and stir in sausage. Simmer soup until sausage is cooked through, 5 to 10 more minutes.

1 pound dried borlotti (cranberry or October) beans
8 cups water
2 bay leaves
2 tablespoons kosher salt
2 cups rustic or sourdough bread cubes (1/2-inch, crusts removed)
3 unpeeled garlic cloves, smashed
1/4 teaspoon salt
Pinch of freshly ground black pepper
1 tablespoon olive oil
1 teaspoon chopped fresh sage leaves
1/4 cup plus 2 tablespoons extra-virgin olive oil
1 cup diced (1/2-inch) onion
1 cup diced (1/2-inch) carrots
1 cup sliced celery (stalks cut in half lengthwise and then cut into 1/2-inch slices)
1 cup diced (1/2-inch) parsnip
1 teaspoon minced garlic
2 firmly packed tablespoons sliced fresh sage leaves
3 cups peeled and diced (1/2-inch) butternut squash
1/8 teaspoon freshly ground black pepper
1/8 teaspoon Aleppo pepper or dried red pepper flakes
1 teaspoon honey

Steps:

  • Soak the beans overnight, or for at least 6 hours, in enough cold water to cover. Drain and transfer to a large pot or Dutch oven. Add the water and bay leaves. Bring to a boil, reduce the heat, and simmer, covered, until almost tender, 45 to 50 minutes. Add 1 tablespoon of the salt and cook 10 more minutes.
  • Make the croutons: Preheat the oven to 350 degrees F. Spread the bread cubes on a baking sheet and bake until golden brown, 5 to 10 minutes. Transfer the cubes to a large bowl and toss with the garlic, salt, pepper, oil, and sage. Let stand 30 minutes.
  • Meanwhile, heat the oil in a second large pot or Dutch oven over medium heat. Add the onion, carrot, celery, parsnip, garlic, and sage, and cook until the vegetables have softened but are not colored, about 10 minutes. Add the squash and cook for 10 more minutes. Season with the remaining tablespoon of salt, and the black and Aleppo peppers. Remove from the heat and set aside.
  • Spoon 1 cup of the cooked beans along with 1/4 cup of their cooking liquid into a blender and puree until smooth. Using a rubber spatula, scrape the puree into the pan with the vegetables. Add the whole beans with their cooking liquid, the bay leaves, and honey, and simmer until the vegetables are completely tender, about 10 more minutes. Taste and adjust the seasoning if desired.
  • Serve the soup in warm bowls, topped with the croutons.

1/2 small butternut squash (1 lb), peeled, seeded, and cut into 1/2-inch pieces (2 cups)
1 3/4 cups chicken broth (14 fl oz)
2 cups water
1 (16- to 19-oz) can white beans (preferably cannellini), rinsed and drained
2 canned whole tomatoes, coarsely chopped
1 teaspoon finely chopped fresh sage
1 oz finely grated Parmigiano-Reggiano (1/2 cup) plus additional for serving
1/4 cup hulled green pumpkin seeds (not roasted; optional)

Steps:

  • Cook garlic in 1 tablespoon oil in a 3-quart heavy saucepan over moderate heat, stirring frequently, until golden, about 1 minute. Add squash, broth, water, beans, tomatoes, and sage and simmer, covered, stirring occasionally, until squash is tender, about 20 minutes. Mash some of squash against side of saucepan to thicken soup. Remove from heat and stir in 1/2 cup cheese and salt and pepper to taste.
  • While soup is simmering, cook pumpkin seeds in remaining tablespoon oil in a small skillet over moderately low heat, stirring, until seeds are plump and lightly toasted, 2 to 4 minutes. Season with salt.

Steps:

  • Pour soup carton into a large pot and cook on medium.

This is a tasty and easy to make soup. I like it because you can leave it soupy as is, or run your immersion blender around a couple of times to make the soup thicker and creamier without adding actual cream.

1 tablespoon coconut oil or 1 tablespoon extra virgin olive oil
1 medium onion, chopped
3 garlic cloves, chopped
3 cups butternut squash, large dice
3 cups low sodium vegetable broth
1 teaspoon ground cumin
1 pinch dried chipotle powder or 1 pinch cayenne pepper
2 cups black beans, cooked (about one can, rinsed and drained)
salt
chopped avocado, for garnish
chopped fresh cilantro, for garnish

Steps:

  • In a large pot or Dutch oven, heat the oil over medium heat and saute the onions until they are just beginning to brown, about 5 to 8 minutes. Add the garlic, squash and broth. Turn the heat down to a gentle simmer, cover, and cook until the vegetables are tender, about 15 to 20 minutes.
  • Stir in the spices and beans and let cook another 10 minutes. Taste for salt. At this point you can thicken the soup by doing a few pulses with your immersion blender, but it is just as good as is.

cooking spray
1 tablespoon olive oil, divided
8 ounces broccoli rabe, trimmed (rapini)
1/2 cup finely chopped onion
1 garlic clove, minced
4 1/2 cups chicken broth
1 (16 ounce) can cannellini beans or 1 (16 ounce) can other white beans, rinsed and drained

Steps:

  • Preheat oven to 450°.
  • Arrange squash in a single layer on a jelly roll pan coated with cooking spray. Drizzle with 1 1/2 teaspoons oil; toss well to coat.

I clipped this from a magazine years ago and just now came across it again. As someone who is allergic to cow's milk, I'm always happy to find tasty, satisfying vegetarian soups that are dairy-free. Although I haven't tried this one yet, it looks so good I know that I will do so soon. :) Prep time does not include peeling, seeding and dicing the squash; you can save time and effort by buying peeled and cut butternut squash, which is available at some grocery stores (such as Trader Joe's).

3 1/2 tablespoons olive oil, divided
2 onions, chopped
8 garlic cloves, pressed
2 1/2 tablespoons chili powder
1 tablespoon ground coriander
2 (14 1/2 ounce) cans fire-roasted tomatoes
1 (29 ounce) can black beans, undrained
4 cups chicken broth (vegetable or beef is fine also)
2 cups water
2 chipotle chiles from canned chipotle chiles in adobo, minced
2 teaspoons dried oregano (preferably Mexican)
coarse kosher salt (to taste)
2 butternut squash, medium
sour cream
shredded monterey jack pepper cheese
diced red onion
chopped fresh cilantro

Steps:

  • Heat oven to 400 degrees.
  • Split butternut squash in half, longwise and brush with 2 T olive oil.
  • Bake for 40 minutes on convection or 60 minutes on standard until soft.
  • Meanwhile, heat 1 1/2 T. olive oil in heavy large pot over medium-high heat. Add onions and cook until soft and beginning to brown, stirring often, about 8 minutes.
  • Add garlic; stir 1 minute.
  • Sprinkle chili powder and coriander over; stir 1 minute.
  • Stir in tomatoes with juice, beans with juice, chipotles, and oregano.
  • Add water and broth.
  • Bring to boil, reduce heat to low and simmer, stirring occasionally until the squash in the oven is done.
  • Remove squash from the oven and allow it to cool for about 10 minutes or until it can be handled. Scoop it from the shell and cut into bite sized pieces.
  • Using a emulsion blender, blend about 60% of the contents of the soup to thicken it.
  • Season to taste with coarse salt and freshly ground black pepper.

1 teaspoon oil
1 cup onion, finely chopped
3/4 teaspoon cinnamon
1/2 teaspoon cumin
1 garlic clove, minced
3 cups butternut squash, peeled &, cubed (about 1 1/2 lbs)
1/8 teaspoon ground pepper
10 1/2 ounces vegetable broth or 10 1/2 ounces chicken broth
1 (14 1/2 ounce) can Mexican-style tomatoes

1 (19 ounce) can navy beans, drained

Steps:

  • Heat oil over medium heat; add onion, cinnamon, cumin and garlic, saute for 5 minutes.
  • Add rest of ingredients except the beans, bring to a boil.
  • Cover and reduce heat to medium, simmer 30 minutes stirring occasionally, until squash is tender.
  • Remove from heat and cool slightly, uncovered about 5 minutes.

Most of my recipes are variations of other ones I come across that sound interesting to me. More often than not I cannot follow it to the letter and end up tweaking it to my liking. This one came about because I had never had Butternut squash and wanted to try it. I hope that you like as much as I loved creating it.

1/4 lb bacon diced small
2 c diced onions
1 c sliced celery
3 - 4 Tbsp minced garlic
2 c peeled, seeded and diced butternut squash
1 tsp crushed chilli peppers
3 can(s) 14.5 oz each chicken broth or make your own with boullion cubes and water
2 can(s) red or pinto beans 15 oz
2 c diced roma tomatoes
salt and pepper to taste

Steps:

  • 1. In heavy 4 qt saucepan or Dutch oven cook bacon over medium heat until thoroughly cooked. Add onions and celery, cook until onions are golden and tender. Add garlic and cook 1 additional minute.
  • 2. Stir in remaining ingredients and heat to boiling. Reduce heat and cover to simmer for 20-25 minutes or until squash is fork tender.
  • 3. Remove from heat and let cool. Add soup to blender and blend together. Return soup to another saucepan, cook on medium heat until hot. Season with salt and pepper to taste.
  • 4. ***if you're not a fan of pureed soups then you can remove about 3 cups of the soup, blend it and then mix it back in with the remaining soup for a soup that has a bit more texture to it. My family likes it either way.

Stir in broth, beans, squash, pepper and salt. Bring just to a boil. Reduce heat to low; simmer 10 minutes, stirring occasionally. 3. Stir in Swiss chard; cook 8 to 10 minutes or until squash and greens are tender.

WHITE BEAN AND BUTTERNUT SQUASH SOUP



White Bean and Butternut Squash Soup image

1 cup dried white beans (such as cannellini, haricot blanc, or navy beans)
3 cups chicken broth
4 cups water
2 tablespoons olive oil or duck fat
2 onions, sliced thin
3 or 4 sage leaves
1 bay leaf
1 medium butternut squash, peeled and cut into 1/2-inch cubes
Salt

Steps:

  • Soak in 4 cups water overnight: 1 cup dried white beans (such as cannellini, haricot blanc, or navy beans).
  • Drain and put in a large pot with: 3 cups chicken broth, 4 cups water.
  • Bring to a boil, then lower the heat, and simmer until the beans are tender. Start checking after 45 minutes. Season to taste when cooked.
  • Heat in a heavy-bottomed pot: 2 tablespoons olive oil or duck fat.
  • Add: 2 onions, sliced thin, 3 or 4 sage leaves, 1 bay leaf.
  • Cook over medium heat until tender, about 15 minutes. Stir in: 1 medium butternut squash, peeled and cut into 1/2-inch cubes, Salt.
  • Cook for 5 minutes. Drain the beans and add 6 cups of their cooking liquid to the squash and onions. Cook at a simmer until the squash starts to become tender. Add the beans and keep cooking until the squash is very soft. Taste and adjust the seasoning if necessary.
  • Serve hot soup over thickly sliced country-style or levain bread that has been brushed with duck fat or olive oil and toasted until crisp and golden brown.
  • Use other varieties of winter squash: Delicata, acorn, kabocha, French pumpkin.
