6 medium baking potatoes
1/2 cup grated parmesan cheese
1/4 cup flour
1 teaspoon salt
1 teaspoon ground black pepper
4 tablespoons butter

Steps:

  • Preheat oven to 350*F.
  • Peel the potatoes and cut each into 8 pieces.
  • Combine the Parmesan cheese, flour, salt, and pepper; coat each potato piece evenly with the mixture.
  • Put the butter into a 13x9" baking pan; place in the preheated oven until the butter melts.
  • Remove from oven and add the coated potatoes; bake for 30 minutes.
  • Use a spatula to turn the potatoes over, then bake for another 30 minutes.
  • Serve hot.

I have tried a lot of good roasted potato recipes, but I keep coming back to this one. I've never found one I like better! These are crispy on the outside, and soft and creamy on the inside.

cooking spray
1 teaspoon vegetable oil, or as needed
2 tablespoons freshly grated Parmesan cheese
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon ground black pepper
2 pounds red potatoes, halved
1 tablespoon vegetable oil, or as needed
¼ cup sour cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray; pour in about 1 teaspoon vegetable oil to coat the bottom.
  • Mix Parmesan cheese, salt, garlic powder, paprika, and black pepper together in a bowl.
  • Blot the cut-side of potatoes with a paper towel to remove any moisture. Place potatoes in a bowl and drizzle with 1 tablespoon vegetable oil; toss until potatoes are lightly coated. Sprinkle potatoes with Parmesan cheese mixture; toss to coat. Arrange potatoes, cut-side down, onto the prepared baking pan.
  • Bake in the preheated oven for 15 to 20 minutes. Turn potatoes to cut-side up; continue baking until golden and crispy, about 15 to 20 more minutes. Serve with sour cream.

3 -6 potatoes
1/2 cup butter
3/4 cup parmesan cheese
3/4 tablespoon pepper
1/2 tablespoon salt
1 tablespoon garlic powder
1 1/2 tablespoons McCormick's Montreal Brand steak seasoning

Steps:

  • Take potatoes, peel, and cut into 2"x2" cubes. Mush butter around potatoes until they are totally covered. Be careful not to put too much butter though, because they will remain in liquid instead of getting crispy. After butter is applied add pepper, salt, garlic powder, and McCormicks Montreal Steak Seasoning to taste (pepper, salt, garlic powder, and steak seasoning amounts are all approximate because I just do it to taste likes of my family). If you do not like a garlic taste, just remove the garlic powder. Then bake at 425 to 450 degrees for approximately 45 minutes to an hour (or until desired crispness). Take out of the oven and sprinkle freshly grated parmesan cheese on top. Allow the cheese to just melt or put back into oven for a few minutes to get the cheese more melted.

1 ½ pounds unpeeled potatoes, cut into 1-inch chunks
2 tablespoons olive oil
1 teaspoon kosher salt
¼ teaspoon black pepper
½ cup grated Parmesan cheese
¼ teaspoon dried thyme leaves

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the potatoes into a mixing bowl, and drizzle with olive oil. Sprinkle with kosher salt, black pepper, Parmesan cheese, and thyme leaves. Toss to evenly coat, and transfer to a 9x13-inch baking dish.
  • Bake in the preheated oven until the potatoes are golden brown on the edges and tender when pierced with a fork, about 1 hour. Serve hot or at room temperature.

I found a recipe in a magazine and modified it to suit our likes and dislikes. By using the lower end amounts of oil and parmesan cheese, you can get a tasty potato dish that's not too high in fat or calories. This was a big hit at our house, and the bonus is that it's easy!

5 medium white potatoes
1 teaspoon seasoning salt (like Lawry's)
1 teaspoon italian seasoning
1/3-1/2 cup shredded parmesan cheese
1/4-1/2 teaspoon pepper (to taste)
1 -2 tablespoon olive oil

Steps:

  • Preheat oven to 400 degrees.
  • Wash potatoes and cut into eight wedges, then in half crosswise; rinse the potatoes.
  • Pat dry or spin in salad spinner.
  • Place potatoes in bowl and pour olive oil over potatoes, just enough to coat; mix well to make sure all of the potatoes are coated.
  • In small bowl, combine seasoned salt, Italian seasoning, shredded parmesan cheese, and pepper.
  • Pour seasonings over the potatoes and mix together.
  • Line a large jelly roll pan with aluminum foil, and spray the foil with non-stick cooking spray. Pour potatoes into prepared pan.
  • Bake for 15 minutes at 400 degrees; reduce heat to 350 degrees and bake for an additional 20 minutes, or until potatoes are tender and cheese is browning.
