NEELY'S BBQ POPCORN

Steps:
- Put a large heavy bottomed pot over medium heat and add 1 tablespoon of vegetable oil or enough to coat the bottom of the pan. Drop a few kernels of corn in the oil to test the heat. When they begin to pop, add the rest of the corn and cover with a tight fitted lid. Shake the pan while the corn pops to keep it from burning.
- Add the popcorn to a large bowl and drizzle with butter. Sprinkle with the BBQ Seasoning, and Parmesan. Season with salt and pepper, to taste, and toss thoroughly.
- Mix all the ingredients together in a small bowl. Can be saved in an airtight container for up to 6 months.

- In a small bowl, mix together the paprika, chili powder, garlic powder, onion powder, and salt. Set aside.
- In a separate small bowl, mix together the brown sugar and olive oil. Set aside.
- Melt the coconut oil in a large pot over medium heat. Add 3-4 popcorn kernels and cover with the lid. Once they pop, add the rest of the kernels and cover, shaking every 10 seconds, until they begin pop. Once the pops are more than 3 seconds apart, turn off the heat and let sit for 15 seconds to allow any final kernels to pop.
- Uncover and drizzle the brown sugar mixture over the popcorn. Carefully toss to coat.
- Sprinkle the spice mixture over the popcorn and stir to coat evenly.
- Transfer to a bowl and eat immediately, or spread in a single layer on a baking sheet and let cool completely before storing in a sealed container for up to 2 days.

A yummy twist on normal buttered popcorn that is quick to make and oh so good! Almond bark is slightly sweeter than white chocolate and just melts in your mouth. You can make this recipe festive for any holiday by adding any color sprinkles while popcorn is still warm. Wait until it is completely cooled before breaking it up and storing it.

- Place packaged popcorn in the microwave; cook on high until popping begins to slow down, about 2 1/2 minutes. Pour popcorn into a large bowl. Remove any unpopped kernels.
- Place almond bark in a saucepan and melt over medium-low heat, stirring constantly so it does not burn on the bottom, about 8 minutes. Pour melted almond bark over popcorn and stir to coat evenly. Pour out onto a baking sheet to cool.

Steps:
- 1. Preheat oven to 250 degrees F (95 degrees C).
- 2. Place popcorn and almonds in a very large bowl.
- 3. In a medium saucepan over medium heat, melt butter. Stir in brown sugar, bbq sauce, corn syrup, ginger, jalepino and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes.
- 4. Remove from heat and stir in soda and vanilla.
- 5. Pour in a thin stream over popcorn, stirring to coat.
- 6. Place in two large cookie sheets and bake in preheated oven, stirring every 15 minutes, for 1 hour
- 7. Remove from oven and let cool completely on cool surface, before breaking into pieces.
- 8. Note: I use very large commercial cookie sheets. Make sure to spread popcorn out very thin. This way popcorn evenly bakes for sugar to caramelize. Note: Optional: Add 1/2 tsp of Lemon Grass for different twist in flavor also. Note: Store immediately into zip loc bags to keep fresh
