STEAKHOUSE-STYLE BLACKENED STEAK RECIPE
If you like quick and easy meals, you will fall in love with this simple recipe for blackened steak. Before cooking, the steak filets are topped with a mix of savory herbs and spices which form a flavorful crust when the meat is pan-seared in a hot cast-iron skillet.

Steps:
- Combine all ingredients in a bowl and mix well.
- Preheat the oven to 400 degrees F.
- Pat the steaks dry with a paper towel.
- Brush olive oil on the filets. Sprinkle the blackened seasoning over the meat and rub in. Flip over and repeat on the other side.
- Turn on your kitchen exhaust fan. Heat a cast-iron skillet over high heat for five minutes. When the pan is hot, add butter, and when it is melted, add the filets.
- Sear the filets without moving for two minutes and turn over and sear the other side.
- Remove the skillet from the heat and place in the preheated oven. Cook the filets for four to five minutes or to 120 degrees F for rare, 125 degrees for medium-rare and 130 degrees for medium. Use an instant-read meat thermometer to ensure your steaks are cooked perfectly.
- Remove the steaks and place on a platter. Cover tightly with aluminum foil and allow them to rest for five to ten minutes. The temperature of the filets will come up approximately five degrees while they rest.
- Top with a pat of the garlic herb butter and serve immediately.

CHILLED BLACKENED SIRLOIN OF BEEF WITH CREOLE MUSTARD SAUCE
Steps:
- Mix together mustard, mayonnaise, Worcestershire and pepper. Chill.
- Preheat oven to 350 degrees F. Trim fat to 1/8-inch on sirloin, coat with oil and dredge on all sides with seasoning. Place sirloin in a well-heated (hot) iron skillet. Add 2 to 3 pats of butter. Cook 5 minutes on each side, adding butter as needed. Transfer to oven and roast until meat reaches internal temperature of 114 degrees F. Remove and refrigerate overnight.
- Slice sirloin into 12 even slices and arrange on chilled salad plate. Serve with a 2-ounce pool of mustard sauce and garnish with red onion and capers.

- In small bowl, combine first 6 ing.
- Place in refrigerater.
- Brush the 1 T melted butter on steak.
- Rub blackened seasoning on each side of steak.
- Let stand 30 minutes.
- Cut steak into 4 pieces.
- Preheat a heavy saucepan to very hot.
- Add the oil.
- Add steak and cook on med-hi for 6-8 minutes, to desired doneness.
- Serve steak with a ball of Tex-Mex butter on top.

BLACKENED BUTTER
Steps:
- Combine everything but the butter in a small bowl and mix until well blended.
- Add 1 1/2 teaspoons of the spice mixture to the softened butter and blend completely. (Reserve the remaining spice mixture for another use.)
- Lay a piece of plastic wrap on a work surface. Place the spiced butter on the lower third of the plastic in a 2- to 3-inch-wide oblong shape. Gently wrap the shorter end of the plastic up and over the butter, using it to help shape and roll the butter into a log. Twist the ends of the plastic closed, like a hard-candy wrapper. Chill until firm, at least 30 minutes, preferably 1 hour.
BLACKENED SIRLOIN WITH SOUTHWESTERN BUTTER

- 1. GRILL DIRECTIONS: In small bowl, combine all butter ingredients blend well. Place butter on piece of plastic wrap. Shape into 4-inch log. Refrigerate 1 hour or until firm.2. Meanwhile, brush each side of steak with 1 tablespoon melted butter rub each side of steak with 1 teaspoon blackened steak seasoning. Let stand at room temperature for 30 minutes.3. Heat grill. BLACKENED STEAK BITES WITH BLUE CHEESE SAUCE
This recipe is similar to an appetizer served at my favorite Italian restaurant. It is a nice change from the usual appetizers and always gets rave reviews! I have used tenderloin in the past, but have found that a good quality top sirloin works very well and is less expensive. Bernaise sauce is a good alternative if you don't like blue cheese.

- Heat oil in a cast-iron skillet on an outdoor grill until the oil is smoking. Cook steak bites in hot oil in small batches, reheating oil between batches, until slightly crusty, 1 to 2 minutes per side.
- Stir cream cheese and evaporated milk together in a saucepan over low heat to melt the cream cheese.
