Found at www.recipesecrets.com, this onion relish was suggested to accompany hot dogs, hamburgers, sausages or steak sandwiches. It is very easy to prepare & prep methods for both the grill & the oven were given. Enjoy!

1 (1 1/4 ounce) lipton savory herb with garlic soup mix
2 tablespoons ketchup
2 tablespoons brown sugar (firmly packed)
1 tablespoon apple cider vinegar
2 tablespoons vegetable oil
4 large onions (about 2 lbs, thinly sliced)

Steps:

  • In lrg bowl, combine Lipton Savory Herb w/Garlic Dry Soup Mix, ketchup, brown sugar, vinegar & oil. Add onions & toss to coat.
  • Turn into a foil bag. Double fold open end of bag to seal.
  • Grill (turning bag over halfway thru cooking) 25 min or till onions are tender.
  • Oven Method: Preheat oven to 450°F Place foil bag in lrg baking pan on bottom rack & bake (turning bag over halfway thru cooking) 45 min or till onions are tender.
  • NOTE: It's cold here in Iceland, so I'll prob prepare mine using the oven method & add 1 tbsp of Worcestershire for its smoky flavor.

1/2 cup white vinegar
1 tablespoon white sugar
1/2 cup thinly slivered red onion
1/2 cup thinly sliver white onion
1/4 cup julienned green bell pepper

Steps:

  • In a small saucepan, combine the vinegar and sugar over medium low heat. Warm and stir until the sugar has dissolved.
  • Add the red onion, white onion and bell pepper. Stir to coat and let sit for one hour. Then transfer to a sealable container and refrigerate to cool for at least 2 hours.

2 green onions
2 tablespoons olive oil, divided
Salt and freshly ground pepper
1 small ripe pineapple, peeled and diced
1 small jalapeno, finely chopped
2 tablespoons fresh lime juice
2 tablespoons coarsely chopped cilantro

Steps:

  • Preheat grill. Brush the green onions with 1 tablespoon of olive oil and season with salt and pepper. Grill the onions until almost cooked though and finely slice. Place the onions, pineapple, jalapeno in a medium bowl and stir to combine. Add the lime juice, the remaining tablespoon of olive oil and cilantro. Serve at room temperature.

2 onions
1 corn on the cob
1 carrot
1 Tbsp tomato puree
1/4 c orange juice, fresh
1 Tbsp oregano, fresh
1 tsp salt
1/2 tsp ground pepper

Steps:

  • 1. Grill the onion and ear of corn, about four minutes on each side.
  • 2. Cut the corn off the cob and chop the onion. Peel and grate the carrot.
  • 3. Combine all ingredients and pulse in a food processor,( BUT), do not over process.
  • 4. Taste and adjust with salt and pepper

This quick and very dirty recipe for black onion relish was quite delicious on grilled salmon, but with every bite I became more and more agitated, thinking about how utterly perfect this would have been on a grilled hot dog.

2 yellow onions
1 red bell pepper, chopped
2 tablespoons chopped fresh flat-leaf parsley, or to taste
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or more to taste
3 tablespoons sherry vinegar
3 tablespoons olive oil

Steps:

  • Build a campfire or prepare a charcoal grill and allow the fire to burn until it has accumulated a bed of coals.
  • Nestle onions into the hot goals and pile coals up on the sides and on top. Roast until blackened and tender, about 15 minutes. Turn onions, rebury them, and cook until the onions begin to leak juice, another 10 to 15 minutes. A bamboo skewer inserted into the center should easily slide in. Place onions in a bowl, cover and allow to cool.
  • Place red pepper on the coals; cook, turning often, until charred, about 10 minutes.
  • Peel the blackened skin off the onions and scrape the charred black bits off the red pepper. Finely chop onions and red pepper. Combine in a bowl with parsley, and season with salt, black pepper, and cayenne pepper to taste.
  • Toss sherry vinegar and olive oil in with relish, cover and refrigerate for 1 hour.

Steps:

  • In a medium saucepan over medium heat, slowly cook and stir the onions and butter until onions are tender, approximately 10 minutes.
  • Mix red wine vinegar, salt, ground black pepper and white sugar with the onions and butter. Continue to cook and stir until the mixture thickens to a chunky, spreadable consistency, about 10 minutes. Refrigerate until serving.

2 large sweet onions, cut into 1/4-inch slices
Canola oil
Kosher (coarse or sea) salt and pepper to taste
4 green onions, sliced (1/4 cup)
1 jalapeño chile, seeded, finely chopped
2 to 3 tablespoons extra-virgin olive oil
3 tablespoons balsamic vinegar
1/2 teaspoon ground cumin

Steps:

  • Heat gas or charcoal grill. Brush both sides of sweet onion slices with oil; sprinkle with salt and pepper.
  • Place onions on grill over medium heat. Cook uncovered, turning occasionally, until charred and softened. Remove onions from grill to cutting board; coarsely chop.
  • In medium bowl, mix sweet onions, green onions, jalapeño, oil, vinegar and cumin. Season with salt and pepper. Serve relish at room temperature or chilled.

2 tablespoons vegetable oil
3 onions, peeled and sliced
1 garlic clove, minced
3 tablespoons dark brown sugar (Muscovado)
4 tablespoons red wine vinegar
2 teaspoons coarse grain mustard
salt and pepper, to taste

Steps:

  • Fry rhe onions in the oil over a medium heat until soft and brown.
  • Add the garlic and cook for another minute, before adding the sugar, vinegar and mustard.
  • Bring to a boil and cook for 2-3 minutes until it starts to thicken.
  • Season with salt and pepper to taste.
  • Can be served hot or cold.
