BBQ CHICKEN & PASTA CASSEROLE
This casserole is the very first dish which I concocted. I threw this together many years back with my boys in mind. I used ingredients which I knew they would like, but made it healthy to satisfy me. They loved it, as did my husband, and they still request it today. It's great with Italian or French bread!

Steps:
- Pre-heat oven to 350 degrees.
- Cook the chicken breasts in a lightly oiled skillet on medium heat for approximately 6-8 minutes on each side or until chicken is no longer pink inside; cool for 5 minutes; then dice.
- At the same time, cook the pasta according to box directions. When done, drain the pasta and place in a large, greased baking dish. Add the chicken and remaining ingredients to the pasta. Mix well.
- Cover and bake for 45 minutes. Stir and enjoy!

Steps:
- 1. Preheat oven to 475 degrees. Toss the cubed potatoes with extra virgin olive oil, 1 tbsp bbq seasoning. Transfer the potatoes into a cooking spray coated baking dish. Bake the potatoes for 35-40 minutes, stirring every 10-15 minutes, until cooked through and crispy and browned on the outside.
- 2. While the potatoes are cooking, in a large bowl mix together the chicken, bbq seasoning and bbq sauce, refrigerate. Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400 F.
- 3. Top the cooked potatoes with the bbq chicken mixture. Bake for an additional 25 minutes, turning occasionally. In another bowl mix together the cheese, bacon & green onion and top the chicken with the cheese mix. Return the casserole to the oven and bake for 5-10 minutes until cheese mixture is melted
BBQ CHICKEN AND GRITS (OR RICE) CASSEROLE

- Heat oven to 350°F. Spray 13x9-inch baking dish with cooking spray. Set aside.
- In large saucepan, heat water and salt to boiling. Slowly stir in grits; reduce heat to medium. Cover; cook 5 minutes, stirring occasionally. Remove from heat
- In medium bowl, mix chicken and barbecue sauce. Spoon chicken mixture over grits.
- Top with bacon pieces and 1 cup cheddar cheese
- Bake for 20 - 25 minutes or until bubbly. Sprinkle with chopped green onions. Let stand 5 minutes before serving.

- Add chicken thighs, green pepper, onion, and BBQ sauce to slow cooker.
- Cover, and cook on "low" for 3-6 hours, until chicken is cooked through and onions and peppers are soft. (The cooking time will depend on the size and strength of your slow cooker).
- Preheat oven to 350 degrees F.
- Shred chicken in your slow cooker and add the BBQ chicken mixture to an 8×8″ casserole dish. Cover with shredded cheese, and set aside.
- In a bowl, prepare corn muffin mix according to directions on package. Pour corn muffin mix over 8×8 casserole.
- Place in oven and bake 40 minutes or until top is golden brown and cooked through.

I decided to experiment one day, and actually write down what I did and how I did it. This is the result. My friends loved it, and my mother (Kayne) did too. She talked me into posting it.

Steps:
- Preheat oven to 350 degrees.
- Cook the rice according to instructions.
- In a large skillet sautee onion, pepper, and garlic over low heat.
- Add the shredded chicken to the skillet.
- Add 1 1/2 cups of the BBQ sauce and the BBQ seasoning.
- Bring to a slow boil, add the beer and simmer for about 35 minutes or until mixture is thick.
- Place the cooked rice in the bottom of a greased casserole dish, spread the chicken mixture on top of the rice, and pour 1/2 cup of BBQ sauce on top. Add cheese, then top with biscuits.
- Bake until biscuits are golden brown, about 15 minutes.

- This "recipe" couldn't be easier. Preheat your oven to 350 degrees. Toss your chicken in a 9×11 baking dish. Pour in some bar-b-que sauce and stir it around. Add more if you need to until the chicken is good and coated. Spread the chicken out so that it covers the bottom of the dish. Top the bar-b-que chicken with tater tots. Top the tater tots with cheddar cheese. Pop it in the oven and bake for about 30 minutes, or until the tater tots are browned and cooked through.

In a 8x8 dish, place all the ingredients (except for the cheese) and mix together until combined. Cover top with cheese. Cover with tin foil and cook for 20 minutes. Remove tin foil and cook for another 10.
