1 can (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
1 cup shredded cooked chicken
1/4 cup barbecue sauce
1/3 cup shredded Cheddar cheese
1 egg, beaten

Steps:

  • Separate dough into 8 triangles.
  • In bowl, mix chicken and barbecue sauce. Spoon chicken mixture onto short end of each triangle; sprinkle each with 1 teaspoon of the cheese. Roll up loosely as directed on can. Place on ungreased cookie sheet. Brush with egg; sprinkle with remaining cheese.
  • Bake at 375°F 12 to 15 minutes.

1 large onion, thinly sliced
1 lb. boneless skinless chicken breasts, cut into strips
1/3 cup KRAFT Original Barbecue Sauce
4 whole wheat tortillas (8 inch), warmed
1 cup KRAFT 2% Milk Shredded Cheddar Cheese

Steps:

  • Cook and stir vegetables in large nonstick skillet on medium-high heat 3 min. Add chicken; cook and stir 3 to 4 min. or until no longer pink.

3 ½ cups broccoli, finely chopped, divided
2 cups shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
8 oz cream cheese, 1 package, softened
3 chicken breasts
salt, to taste
pepper, to taste
14 oz cheddar cracker, 1 package
1 cup all-purpose flour
2 eggs

Steps:

  • In a small bowl, microwave 1½ cups (225 g) of broccoli for 1 minute. Add the cheddar cheese, garlic powder, onion powder, and cream cheese. Mix thoroughly, and set aside until ready to use.
  • On a cutting board, butterfly the chicken breasts with a knife. Cut through the chicken breast so you have 6 thinner chicken cutlets. Cover in plastic wrap, and tenderize by beating with a rolling pin or a heavy pan.
  • Remove the plastic wrap, and season with salt and pepper. Place a scoop of the broccoli cheddar mixture on top of a chicken cutlet, and spread until the chicken is covered.
  • Roll the chicken up starting from the tapered end. Use 2 toothpicks to keep the chicken tightly rolled. Repeat with the rest of the chicken.
  • Preheat the oven to 325˚F (165˚C). Line a baking sheet with parchment paper.
  • In a plastic bag, crush the cheddar crackers until they have a coarse, sand-like texture. Pour the cracker crumbs into a large bowl. Add the rest of the minced broccoli. Stir to combine.
  • Put the flour into a medium bowl.
  • Whisk the eggs in another medium bowl.
  • Using tongs, place one of the pieces of chicken into the flour. Turn the chicken in the flour until it is fully coated, tap off any excess flour. Place the chicken in the egg, turn until the chicken is coated. Place the chicken in the broccoli cracker crumb mixture, turn until the chicken is fully coated. Repeat with the remaining chicken rolls.
  • Transfer the pieces of chicken to the prepared baking sheet. Bake for 40-45 minutes.
  • Let the chicken cool slightly, then remove the toothpicks.

4 skinless, boneless chicken breasts (about 8 ounces each)
3 slices bacon
2 tablespoons unsalted butter, melted
1 large buttermilk biscuit, crumbled (about 1 cup)
2/3 cup shredded sharp cheddar cheese
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
Kosher salt and freshly ground pepper
Vegetable oil, for the grill
1/4 cup barbecue sauce

Steps:

  • Preheat a grill to medium. Prepare the chicken: With your knife parallel to the cutting board, slice each chicken breast in half horizontally without cutting all the way through; open like a book. Cover with plastic wrap and pound until 1/2 inch thick.
  • Make the filling: Cook the bacon in a skillet until crisp; crumble. Mix 2 tablespoons bacon drippings with the melted butter in a bowl. Combine the buttermilk biscuit, bacon, half of the drippings mixture, the cheese, chives and parsley in a separate bowl. Stir in 2 to 3 tablespoons water; season with salt and pepper.
  • Season the pounded chicken on both sides with salt and pepper and brush with the remaining drippings mixture. Spoon the filling over the top, leaving a 1-inch border around the edges. Roll up the chicken toward the pointy end; tie with 3 pieces of kitchen twine.
  • Brush the grill grates with vegetable oil. Grill the chicken breasts, turning, until cooked through, 18 to 20 minutes, brushing with the barbecue sauce during the last 2 minutes of cooking. Transfer to a cutting board and let rest 5 minutes, then remove the twine and slice.

This was a "throw together" recipe that turned out to be a winner. It came when I had a hankering for BBQ chicken pizza but was too lazy to make (or buy) the crust. The roll-ups are baked to cut down on the fat, and they got just as crispy as when I've fried them. Enjoy!

2 boneless skinless chicken breasts
1/4 cup of your favorite barbecue sauce (I used a spicy-sweet, smoky,honey-habanero sauce)
1/4 onion, chopped
1/2 red bell pepper, in strips
1/2 green bell pepper, in strips
1/4 cup reduced-fat monterey jack cheese, shredded
1/4 cup low-fat cheddar cheese, shredded
1/4 cup barbecue sauce
6 large egg roll wraps
water
vegetable oil cooking spray (I used butter-flavored Pam)

Steps:

  • Marinate chicken in the 1/3 cup of BBQ sauce for 1 to 2.
  • hours in the refrigerator.
  • Remove chicken from marinade and discard marinade.
  • Cut chicken into bite-sized pieces.
  • Spray 10 inch skillet with Pam.
  • Sauté chicken over med-high heat, until it is opaque, 3- 4 minutes.
  • During the last 2 minutes of cooking, add the onion and peppers.
  • Cook until barely soft.
  • Lay out the egg roll wrappers.
  • In the center of each, place.
  • 2 tablespoons.
  • chicken and veggie mixture, a drizzle of the extra BBQ sauce, and a sprinkling of the cheeses.
  • Roll up, and place on a baking sheet, seam side down.
  • Repeat until all of the filling is used up.
  • Spray Roll-ups with Pam and bake at 400 degrees F for 16 minutes, turning once halfway through cooking.
  • Serve with ranch dressing for dipping and a big salad for a simple meal.
