225 g low-fat cream cheese
1/2 cup chopped fresh basil leaf
1 spring onion, finely chopped
2 tablespoons grated parmesan cheese
1 tablespoon red wine or 1 tablespoon balsamic vinegar
1 teaspoon prepared horseradish
salt & freshly ground black pepper
1/4 cup chopped walnuts

Steps:

  • Combine all ingredients except the walnuts in a food processor and process until smooth. Stir in walnuts. Serve with raw vegetables for dipping. Any left overs are great in a sandwich the next day.

2 tubs (8 oz. each) whipped cream cheese
1 medium tomato, seeded and finely chopped (about 3/4 cup)
1 cup firmly packed fresh basil leaves
3/4 cup finely shredded parmesan cheese
1/2 cup firmly packed fresh parsley leaves
1/4 cup pine nuts or slivered almonds*
2 cloves garlic, chopped
3 tablespoons olive oil

Steps:

  • Line 3-1/2-to 4-cup bowl or mold with plastic wrap, allowing excess wrap to extend over sides. Set aside.
  • In medium bowl gently stir together cream cheese and tomato. Set aside.
  • In food processor bowl combine basil, parmesan cheese, parsley, pine nuts and garlic. Cover and process until very finely chopped. With food processor running, slowly add oil through feed tube. Process until mixture is consistency of soft butter.
  • Spread one-third of cream cheese mixture in prepared bowl. Top with one-half of basil mixture. Repeat layers. Spread remaining cheese mixture on top. Cover and refrigerate at least 4 hours.
  • On serving plate invert bowl. Remove plastic wrap. Garnish with tomato and fresh basil, if desired. Serve with crackers.

BASIL SPREAD FOR SANDWICHES

This basil spread is great on sandwiches instead of using plain mayo. The Wholefoods market I go to uses it on some of their sandwiches but I have not made it myself. The recipe comes from their "American Summer Style" recipe booklet. In the booklet it is used on their grilled veggie sandwich but I have had it on their salmon sandwich among many others and it is very good.

1 head garlic
1 (19 ounce) can white kidney beans, drained and rinsed
1/4 cup extra virgin olive oil
4 teaspoons white wine vinegar or 4 teaspoons cider vinegar
1/4 teaspoon salt
1/8-1/4 teaspoon cayenne pepper
1/4 cup fresh basil, chopped

Steps:

  • separate and peel cloves of garlic.
  • In saucepan of boiling water, blanch garlic for 1 minute, drain (or if preferred, roast garlic).
  • In food processor or blender or bowl, and using a fork, mash garlic, beans, oil, vinegar, salt and pepper until smooth.
  • Stir in basil.

8 cloves garlic
1 teaspoon red pepper flakes
2 tablespoons canola oil
2 tablespoons olive oil, or as needed

Steps:
