3 cups all-purpose flour, divided
1/4 cup sugar
1 package (1/4 ounce) quick-rise yeast
1/2 teaspoon salt
1/2 cup milk
1/2 cup butter, softened
1/4 cup water
1 egg

Steps:

  • In a bowl, combine 2 cups flour, sugar, yeast and salt. In a saucepan, heat milk, butter and water to 120°-130°. Add to dry ingredients; beat just until moistened. Add egg and remaining flour; beat until smooth. Shape into a ball. Do not knead. Cover and let rest for 10 minutes. Use for Braided Coffee Cake or Coffee Cake Ring.

1/2 cup whole milk
1 1/4-ounce packet active dry yeast (2 1/4 teaspoons)
1/4 cup sugar
4 tablespoons unsalted butter, melted and slightly cooled, plus more for brushing
1 large egg yolk
1 1/2 teaspoons vanilla extract
2 3/4 cups all-purpose flour, plus more for dusting
3/4 teaspoon salt
1/2 teaspoon freshly grated nutmeg (optional)

Steps:

  • Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
  • Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
  • Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
  • Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

I have made plenty of sweet breads, and I always favored the Hungarian Coffee Cake and Swedish Tea Ring. This sweet dough recipe is my mother's, and this works out really well because it is an old recipe. I have also used others which were more recent and still turned out well, but this one is the best I have found. Use this recipe for the basis of your sweet breads.

1 cup milk
8 cups sifted all-purpose flour
1 ¼ cups cold water
2 (0.6 ounce) cakes compressed fresh yeast
2 teaspoons salt
½ cup white sugar
4 tablespoons shortening
2 eggs
2 tablespoons melted shortening

Steps:

  • Scald milk in a medium saucepan. Add cold water to scalded milk. Remove 1/4 cup liquid; mix yeast into liquid when cooled to lukewarm. To liquid in saucepan, add salt, sugar, shortening, and eggs. Add dissolved yeast to saucepan. Mix well.
  • Sift and measure the flour into a large bowl. Make a well in the flour, and pour the liquids into the well. Stir with a large wooden spoon until liquid disappears.
  • With one hand, mix dough in bowl using swinging rotary motion. Gradually form dough into smooth ball, then knead in bowl for 2 minutes. Brush top with melted shortening. Cover, and allow dough to rise at room temperature until doubled in bulk, about 2 hours.
  • Punch down dough. Use dough for any sweet bread recipe.

An old fashioned sweet dough recipe for coffee cakes, coffee bread, babka, buns, kolacky, rolls, and so on. Prepare 24 hours ahead of time. This rich dough needs the chilling and long rest period to produce a wonderful versatile dough. You may halve the recipe if you wish.

1/2 lb butter (2 sticks)
1/2 teaspoon salt
1 1/4 cups milk
1 cup sugar
6 -8 cups flour
2 packages active dry yeast
1/4 cup water
4 egg yolks
2 whole eggs
1 teaspoon ground cardamom (this really adds a special flavor) (optional)
1 cup powdered sugar
1 tablespoon water
1 tablespoon cream, more if needed to thin to desired consistency
1 teaspoon rum extract or 1 teaspoon vanilla extract
2 tablespoons finely grated coconut (optional)

Steps:

  • (Icing may be doubled and used for any cake or bun icing).
  • Dissolve yeast in 1/4 cup warm water and set aside until foamy.
  • Heat milk, shortening, sugar and salt to melt shortening.
  • Cool to warm and add yeast mixture, egg yolks and whole eggs.
  • Beat well by hand.
  • Gradually beat in by hand 6 cups of flour and the cardamom.
  • Knead well on a floured surface only adding additional flour to make a smooth and elastic dough.
  • Place dough in an oiled bowl, turn to coat with oil and cover and let rise double in volume.
  • Punch down and cover dough and refrigerate overnight in large bowl.
  • When ready to use, punch down and knead briefly to warm up dough.
  • Use dough as you wish for coffee cakes, sweet breads, buns, etc.
  • You may divide dough into 6 buns, or 4 equal pieces to make 4 small loaves or braids.
  • If braiding, divide each piece into 3 loose strands and braid and tuck under ends.
  • Brush with melted butter.
  • Place on baking sheets/pans and let rise double in volume.
  • Bake in a 350F oven about 30 minutes or golden and tested done.
  • Remove from pans/baking sheet to cool on rack.
  • Mix icing ingredients and drizzle over warm cake/bread.
  • Yield: approx.
  • 6 buns, 4 small braids, or 2 large loaves.

Steps:

  • in a large bowl, combine 2 cups flour, sugar, salt and yeast; blens well to mix. in small sauce pan heat water milk and butter until very warm (120-130 Degrees F.) Add warm liquid and egg to flour mixture. Blend at low speed until moistened. by hand add the other 3 cups of flour until dough pulls away from the sides of the bowl.
  • On floured surface, knead in another 1 to 2 cups of flour until dough is smooth and elastic, about 8-10 minutes. place dough in greased bowl and let rise covered in a warm place, until doubled in size.abouy 45 to 60 minutes.
  • Punch dough down and divide in half. Shape and bake dough as desired, I make cinnamon rolls with this dough.by rolling it out spreading melted butter on it and sprinkleing it with cinnamon sugar and rolling up to cut in 1inch slices.
  • To make dough a day ahead, after first rise time, punch dough down and cover to refrigerate overnight.

2 1/2 cups all-purpose flour (spooned and leveled), plus more for rolling
1 teaspoon salt
1 teaspoon sugar
1 cup (2 sticks) cold unsalted butter, cut into pieces
1/4 to 1/2 cup ice water

Steps:

  • In a food processor, combine flour, salt, and sugar; pulse briefly. Add butter; pulse until mixture resembles coarse meal, with a few pea-size pieces of butter remaining. Sprinkle with 1/4 cup ice water. Pulse until dough is crumbly but holds together when squeezed (if necessary, add up to 1/4 cup water, 1 tablespoon at a time). Do not overmix.
  • Divide dough in half, and turn out onto 2 large pieces of plastic wrap. Fold plastic over each portion of dough; press to shape into 2 3/4-inch-thick disks. Refrigerate until firm, at least 1 hour (and up to 3 days); dough can also be frozen up to 3 months (thaw before using).
  • On a floured piece of parchment paper, roll 1 disk of dough to a 14-inch round. Wrap dough around rolling pin; unroll over a 9-inch pie plate. Gently fit into bottom and sides of plate (do not stretch dough). Using kitchen shears, trim dough to a 1-inch overhang all around; refrigerate until ready to use. Reserve and refrigerate remaining disk of dough for top crust.

3/4 cup warm water (110 degrees max)
2 teaspoons sugar
1 tablespoon active dry yeast
1/2 cup all-purpose flour
3/4 cup plain low-fat yogurt
1/2 cup butter, softened, cut into small pieces
2 large eggs, lightly beaten
1/2 cup sugar
1 teaspoon salt
2 teaspoons vanilla extract or 2 teaspoons grated citrus zest
4 1/2-5 1/2 cups all-purpose flour

Steps:

  • For the sponge: In a small bowl stir together water and sugar until sugar is dissolved. Stir in yeast and flour. Cover with plastic wrap and set aside until bubbly and active, about 10 to 15 minutes.
  • For the dough: In a large bowl, mix together all of the sponge, yogurt, butter, eggs, sugar, salt, and vanilla or citrus zest. Add flour 1 cup at a time, mixing until the dough comes away cleanly from the sides of the bowl.
  • Turn dough out onto a lightly floured surface and knead for about 5 minutes, until soft and pliable but not sticky. Let dough rest while you clean and grease the bowl. Finish kneading the dough until it's smooth, supple, and springy.
  • Place the dough in a greased bowl, turn to coat all surfaces, cover with plastic wrap and let sit in a warm place for about 1 1/2 hours, or until doubled.

480 g bread flour
120 g all-purpose flour
110 g sugar
20 g powdered milk
4 teaspoons instant yeast (not fast rising or anything like that, just regular instant baker's yeast)
1 egg
300 ml cold water
60 g butter
10 g salt

Steps:

  • Mix flours, milk powder, yeast and sugar in a big bowl.
  • Add the egg and cold water and mix to form a dough. Add in the butter and salt and knead till a smooth dough forms. This takes a while.
  • At first the dough will be greasy and seem as if there is too much butter in it. But as you knead and knead and knead, it will eventually get to the point you want it to be.
  • Cover with clingwrap and let rise for about 1 hour or till doubled in size.
  • Preheat oven to 380 farenheit.
  • Divide dough into portions of 50 or 60 gm each. Shape into balls and leave it to rest for abt 10 minutes Roll out dough and wrap with desired fillings. Shape as required and let it proof on lined or greased baking tray for another 50-60 mins or until dough is double in size.
  • Brush dough with egg wash, or milk, if you want it to be less brown, and bake till golden brown and cooked.
  • Immediately brush with melted butter after taking it out of the oven and cover with a tea cloth to give it a soft crust.

1 teaspoon sugar
1/2 cup water (105-115)
1 package active dry yeast
2/3 cup milk
1/4 cup sugar
1 teaspoon salt
1/4 cup butter or 1/4 cup shortening
1 egg
3 -4 cups all-purpose flour

Steps:

  • Dissolve 1 tsp.
  • sugar in warm water in large bowl.
  • Sprinkle in yeast.
  • Let stand 10 minutes, then stir well.
  • Heat milk to lukewarm.
  • Stir in 1/4 cup sugar and salt.
  • Add lukewarm milk mixture, butter,egg and 1 cup flour to dissolved yeast mixture.
  • Beat for 3 minutes.
  • Stir in about 3 cups remaining flour gradually.
  • If necessary, add more flour to make a soft dough which leaves sides of bowl.
  • Turn out onto lightly floured board.
  • Knead dough, adding more flour as necessary, until dough is smooth, elastic and no longer sticky (about 5 minutes).
  • Place in lightly greased bowl.
  • Turn dough to grease top.

3 -4 egg yolks

1 lemon, rind of, grated

Steps:

  • FOR THE SPONGE: Dissolve the sugar in the lukewarm water, sprinkle the yeast over it, and let it stand until softened. Combine with the lukewarm milk and 3/4 cup of flour. Beat well, cover and let the sponge rise in a warm place until light and bubbly.
  • FOR THE SWEET DOUGH: Cream the butter with the sugar. Beat the whole eggs and the egg yolks together along with the salt. Combine with the butter sugar mixture and beat thoroughly. Stir in the vanilla, lemon rind and sponge. Add the flour and knead in the bowl for about 10 minutes. This dough should be soft.
  • Cover and let it rise in a warm place until double in bulk. Punch down, knead a few times, and let it rise again. You can use this dough with any sweet filling such as cottage cheese, nut and poppy rolls, filled doughnuts filled with thick poppy seed, jam, or cooked prunes pitted and sweetened.

I created this recipe in order to have a very low sodium, whole wheat sweet dough for my favorite cinnamon rolls. It will work for other sweet rolls and sweet breads, too. Recipe #189088 is how I make my cinnamon rolls.

1/4 cup sugar
1/4 cup softened unsalted butter
1/4 cup gluten flour (such as "Do-pep")
3 -3 1/4 cups whole wheat flour
2 1/2 teaspoons active dry yeast (1 packet)
1/4 cup whole wheat flour, to dust the board when rolling out dough

Steps:

  • Add first 6 ingredients in the order listed, to bread machine and process on dough setting. (During the first 5-10 minutes, if dough is sticky, add more whole wheat flour a teaspoonful at a time. Or, if dough is dry, add more water a teaspoonful at a time.).
  • Ater bread machine beeps that it's done (approximately 1 hour to 1 hour 20 minutes), remove from bread pan onto lightly floured board, using from reserved 1/4 cup flour to dust the board as needed to keep from sticking.
  • Divide dough in half, and continue with your favorite sweet bread, roll or cinnamon rolls recipe. Repeat with second half of dough. (Bake according to your recipe's instructions.).

6-7 c all purpose flour ; divided
1/2 c sugar
2 (1/4oz) pkg active dry yeast = 2 1/4 teas per pkg.
2 tsp salt
1/2 c butter
1 c milk
1 c water
1 egg

Steps:

  • 1. In a large bowl (I use my metal one )combine 2 cups flour , sugar , yeast and salt ; set aside
  • 2. In a sauce pan heat butter , milk and water until very warm ( not boiling) to 120° to 130°. Add mixture and egg to the dry ingredients ; Blend on low speed of an electric mixer until moistened ; Beat for 3 minutes on medium speed.
  • 3. Stir in enough of the remaining flour by hand to form a stiff dough. ( dough will be some what sticky )
  • 4. On a floured surface knead until smooth and elastic about 8-10 minutes.
  • 5. Place dough in a greased bowl ; turn greased side up. Cover and let rise in a warm space for 45-60 minutes , or until light and doubled in size ; punch dough down and use dough for desired recipe.

1 cup water

1/2 cup margarine or butter
1 egg

  • 1. In large bowl, combine 2 cups flour, sugar, salt and yeast mix well. In small saucepan, heat water, milk and margarine until very warm (120 to 130°F.). Add warm liquid and egg to flour mixture blend at low speed until moistened. Beat 3 minutes at medium speed. By hand, stir in an additional 3 cups flour until dough pulls cleanly away from sides of bowl.2. On floured surface, knead in 1 to 2 cups flour until dough is smooth and elastic, 8 to 10 minutes. Place dough in greased bowl cover loosely with greased plastic wrap and cloth towel. Let rise in warm place (80 to 85°F.) until light and doubled in size, 45 to 60 minutes.3. Punch down dough several times to remove all air bubbles. Divide dough in half. Shape as directed in the following 3 recipes.High Altitude (above 3500 feet): No change.

Speed 2 for 2 minutes. 4.Continue on speed 2, add remaining lfour, 1/2 c at a time and mix ~ 1 1/2 min, or until dough starts to clean sides of bowl. 5.Knead on speed 2 for 2 minute longer. 6.Place dough in greased bowl, turning to grease top. cover. Let rise in warm place free of draft, ~1hour or until double in bulk. Punch down dough and shape as desired.
