BASIC STIR-FRY SAUCE

A very good basic stir-fry sauce to make ahead and store in the fridge (for up to 3 weeks). Just pour some in your stir-fry a few minutes before it is done cooking and heat through.

2 1/2 cups chicken broth or 2 1/2 cups vegetable broth
1/2 cup cornstarch
1/2 cup soy sauce
1/2 cup light corn syrup
1/2 cup dry sherry or 1/2 cup white wine
1/4 cup cider vinegar
2 cloves minced garlic
2 teaspoons grated fresh ginger
1/4 teaspoon ground red pepper or 1/4 teaspoon red pepper flakes

Steps:

  • Combine all of the ingredients in a 1 1/2 quart mason jar with a tight fitting lid.
  • Shake well and store in the fridge.

1/4 cup soy sauce
1 1/4 cups water
1 tablespoon grated ginger
2 cloves garlic, minced
1 teaspoon sesame oil
1 tablespoon sugar
4 teaspoons cider vinegar
2 tablespoons dry sherry or 2 tablespoons rice wine
3 tablespoons cornstarch

Steps:

  • Combine all ingredients except cornstarch in a small bowl or a 2 to 4 cup liquid measuring cup.
  • Place the cornstarch in a separate small bowl, and whisk in the mixture from step 1.
  • Just before mixing in to vegetables and/or meat, whisk the mixture one more time.
  • Add about 2/3 of the way through stir frying.
  • Enjoy!

3 tablespoons light soy sauce
2 tablespoons brandy or 2 tablespoons vinegar (I use vinegar because of my kids)
1 -3 teaspoon Chinese five spice powder (I use 2 tsp)
2 teaspoons honey
2 cloves garlic, minced
white pepper

Steps:

  • whisk ingredients together.
  • use one pound of thinly sliced meat if doing stir fry or one pound of steak tips, pour marinade over meat and place in ziplock bag and marinade for a couple of hours.
  • Drain marinade and stir fry meat with assorted chopped vegetables or cook steak tips under broiler or on grill.

1 tablespoon cider vinegar
1 tablespoon sugar
3 garlic cloves, minced
1/4 teaspoon ground pepper

Steps:

  • In a large, shallow bowl, mix all ingredients together.
  • If using as a marinade, coat meat or tofu with sauce and let marinate for at least 15 minutes.
  • If using as on-the-spot stir-fry sauce (I have done this myself), pour onto stir-fry after it is cooked and let bubble in pan, then turn off heat and enjoy!

One 1-inch piece fresh ginger, peeled and grated (about 2 teaspoons, or 1/2 teaspoon ground ginger)
1 teaspoon sugar
Pinch of crushed red pepper flakes, optional
