Don't know what to do with all that leftover ham from Easter? Try this fast and easy ham salad with tangy mustard and crunchy celery. Enjoy it in a sandwich or just on its own.

Number Of Ingredients 6

1/2 cup mayonnaise, plus more if needed
2 tablespoons whole-grain mustard
1 pound leftover baked ham, cut into 1-inch chunks
1 1/4 cups drained bread-and-butter pickle chips and 1 tablespoon pickle juice, plus more if needed
2 inner ribs celery, finely chopped, plus 2 tablespoons coarsely chopped leaves from the inner ribs
1/2 small red onion, finely chopped

Steps:

  • Whisk the mayonnaise and mustard together in a large bowl. Pulse the ham and pickles in a food processor until finely chopped but not pureed. Add the ham mixture, pickle juice, celery, onions and celery leaves to the mayonnaise mixture, and stir. Taste; if the salad seems dry (it should be spreadable), add more mayonnaise and/or pickling liquid. Serve as is or on sandwiches.

3/4 cup mayonnaise
1/2 cup finely chopped celery
1/4 cup sliced green onions
2 tablespoons minced fresh chives
1 tablespoon honey
2 teaspoons spicy brown mustard
1/2 teaspoon Worcestershire sauce
1/2 teaspoon seasoned salt
5 cups diced fully cooked ham or turkey
1/3 cup chopped pecans and almonds, toasted
Slider buns, split, optional

Steps:

  • Mix first 8 ingredients. Stir in ham. Refrigerate, covered, until serving., Stir in pecans before serving. If desired, serve on buns.

I received this recipe during a recipe swap a few years back. It is super simple and tasty. It can be served as an appetizer with carrot sticks and crackers, or as a lunch served on a croissant or sandwich bread. This recipe is a great way to use up some of that leftover holiday ham!

2 cups diced ham
1 celery rib, halved and sliced
2 tablespoons minced onions
2 tablespoons sweet pickle relish (may sub diced sweet pickles)
6 tablespoons mayonnaise
1 -2 teaspoon sweet pickle juice (optional)
1 dash pepper
1 hard-cooked egg, diced

Steps:

  • Mix together ham, celery, onion and relish.
  • Add mayo, pickle juice and pepper; mix well. If you want more mayo, add it 1 T at a time to the desired consistency.
  • Gently fold in diced egg.
  • Serve with crackers or on sandwich bread.

I'm not so great at baking whole hams, but I love when my Mom sends me leftover ham that she has cooked. Hubby loves ham salad sandwiches, and whenever we get ham, his first question is always "Are you going to make that ham salad?" It's just been a matter of experimentation to come up with it. It's quick and easy, with common ingredients. Hope you enjoy it as we do. I'm not really sure how many sandwiches this makes--enough for a couple of days for our small family. Let me know if the servings are off. (And I guess it depends on how thick you like your sandwiches.) Can be served on any type of bread, but I have found rye really complements ham salad.

3/4 lb cooked ham, finely chopped (I prefer to chop mine up in the food processor, but just till it's fine, not mushy.)
1/8 teaspoon black pepper
1/2 medium sweet onion, finely minced (I like to throw it in the food processor with the ham)
1/2 cup light mayonnaise
2 tablespoons sweet relish
1 teaspoon mustard

Steps:

  • Gently combine all ingredients till well mixed.
  • Refrigerate several hours until well chilled to let flavors blend.
  • Serve on your favorite bread.
