Traditional Irish tea bread served around Halloween once used to foretell marriage by baking a ring in the loaf and waiting for someone to get it. Whoever gets it is supposed to be the next to marry. I only make it once a year around Halloween and I have family members that ask for a second mini loaf to freeze for later in the year. Never gave the recipe out until now. I like it with coffee or tea in the morning very sweet and heavy.

Number Of Ingredients 8

1 1/2 pints strong brewed tea (or half strong tea and half irish wiskey I prefer the half and half method)
1 lb golden raisin
1 lb black raisins
1 lb brown sugar
1 lb all-purpose flour
3 teaspoons baking powder
3 eggs
6 tablespoons honey, melted (I use huckleberry honey for mine)

Steps:

  • First soak the raisins and sugar in the tea (or tea and whiskey) overnight.
  • Preheat the oven to 300 degrees F (150 degrees C).
  • Add Flour, baking powder, and eggs to the tea mixture.
  • Spoon the dough into a greased loaf pans. You should be able to fill 3 loaf pans, 8x4 inches (20x10 cm). (I prefer to make them in ready to give away little loaf pans which makes about five per batch).
  • Place loaf pans in the oven and bake for 1 hour and 45minutes.
  • Leave Bram Brack to cool in the pans for 10 minutes, then turn out onto a cooling rack and glaze the top with the melted honey. ( If you go with the small give away kind let cool then leave in tin drizzle honey on the top and cover with a little room on top and then give them away when ready.).

1.8 cups brewed black tea, cold
1 cup packed light brown sugar
1 ¼ cups golden raisins
¼ cup chopped candied citron
1 ¼ cups self-rising flour
1 egg, beaten

Steps:

  • Put the tea, sugar, raisins and peel into a bowl, cover and leave to soak overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch round pan.
  • Sift the flour into the fruit mixture, add the egg and beat well.
  • Pour into the cake pan and bake at 350 degrees F (175 degrees C) for 1 hour and 45 minutes, or until toothpick inserted into center of cake comes out clean. Leave in the pan for 5 minutes, then turn out onto a wire rack.

This is a Irish tea bread and it is very good. I have also ADDED a little Bushmills Irish Whiskey to this when soaking raisins and peel mixture overnight. (small amount to the tea) so the tea still measures 1 cup. maybe 1 tsp to 1 tablespoon.

3/4 c raisins
3/4 c golden raisins
grated peel of 1 lemon
1/2 c dark brown sugar
1 c cold tea (i use twinnings irish breakfast)
2 c flour
2 tsp baking soda
1/4 tsp salt
1 egg
YOU WILL NEED A WELL GREASED 8 1/2 BY 4 1/2 INCH LOAF PAN

Steps:

  • 1. Soak raisins, peel,and sugar in the cold tea overnight in the refrigerator. Pre-heat oven to 325 degrees. Sift flour and mix with soda and salt. blend in egg and the tea-raisin mixture. pour into well greased loaf pan as directed above. bake 1 hour or until firm to touch. allow to cool 10 minutes,and turn out onto wire rack to cool completely.

I own a cookbook published by Chatelaine in 1968, Heritage Collection of Home Tested Recipes (my Mom usually has possession of it but she let me borrow it) and I decided to try a couple of recipes from it. This sounded so good and it is! I made it with Christmas tea, which is black tea with orange, cherry and almond flavours.

1 cup tea, hot and strong
1/2 cup dates, chopped
1/2 cup mixed peel, chopped
1 cup raisins, washed
1 cup brown sugar
1 egg, beaten
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Combine fruit and sugar in a large bowl. Pour tea over fruit mixture, cover, and let sit overnight.
  • Next morning, stir in egg, then flour,baking powder, soda, and salt sifted together.
  • Turn into greased loaf pan and bake for 1 1/2 hours at 300°F.
  • Turn onto wire rack to cool.
  • To serve, slice and butter.
  • NOTE: I did not include soaking time in the time to make.

4 to 4-1/2 cup(s) all purpose flour
1/2 cup(s) plus 1 teaspoon sugar, divided
1 package(s) rapid-rise active dry yeast (1/4 oz.)
1 teaspoon(s) salt
1/2 teaspoon(s) ground cinnamon
1/4 teaspoon(s) ground nutmeg
3/4 cup(s) plus 1 tablespoon water, divided
3/4 cup(s) milk
1/4 cup(s) butter, softened (1/2 stick)
1 - egg
1 cup(s) golden raisins
1/2 cup(s) chopped dried or candied fruit (apricots, cherries, prunes, etc.)

Steps:

  • Place 4 cups flour in a large bowl. Stir in 1/2 cup sugar, yeast, salt, cinnamon and nutmeg.
  • In a small saucepan, combine 3/4 cup water, milk and butter; heat over low heat until butter melts and temperature reaches 120º to 130ºF. Add milk mixture to flour mixture; beat with electric mixer at medium speed 2 minutes or until well blended. Beat in egg. Gradually add additional flour until slightly sticky dough forms.
  • Attach dough hook to mixer; knead at low speed 4 minutes or 8 minutes by hand on a floured surface. Transfer dough to large greased bowl; turn to grease top. Cover and let rise in warm place 45 minute to 1 hour or until doubled.
  • Spray two 8"x4" loaf pans with nonstick cooking spray. Punch down dough; transfer to floured surface. Knead in raisins and dried fruit. Divide dough into two balls; cover and let rest 5 minutes. To shape loaves, flatten and stretch each ball of dough into an oval shape. Bring long sides together and pinch to seal; fold over short ends and pinch to seal. Place in prepared pans seam side down. Cover and let rise in warm place 45 minutes or until dough almost reaches tops of pans.
  • Preheat oven to 375ºF. Bake 35 to 40 minutes or until browned (cover loosely with foil if loaves begin to overbrown). Dissolve remaining 1 teaspoon sugar in 1 Tablespoon water in a small bowl. Brush over loaves; bake 2 additional minutes. Cool in pan for 2 minutes; remove to wire rack to cool slightly. Serve warm.
  • Note: This fruity loaf is traditionally served on Halloween. Charms are bake into the bread to predict the future. If your piece of barm brack contains a ring, you will get married within the year; if you find a coin, you'll be rich.
