BARLEY SALAD WITH HAM AND BLACK-EYED PEAS



Barley Salad With Ham and Black-Eyed Peas image

3/4 cup quick-cooking barley
2 cups frozen black-eyed peas
3 tablespoons extra-virgin olive oil
3 tablespoons sherry vinegar or red wine vinegar
2 tablespoons light mayonnaise
Kosher salt and freshly ground pepper
7 ounces mixed baby greens (about 12 cups)
3/4 pound deli ham (preferably low sodium), in 1 piece, chopped
1 1/2 cups cherry tomatoes, halved
5 radishes, chopped
4 scallions, chopped
2 tablespoons chopped dill pickles or cornichons

Steps:

  • Bring a medium pot of water to a boil. Add the barley, then reduce the heat to medium and simmer 7 minutes; add the black-eyed peas and continue cooking until both the barley and black-eyed peas are tender, about 5 more minutes. Drain and rinse under cold water.
  • Whisk the olive oil, vinegar, mayonnaise, 3/4 teaspoon salt, and pepper to taste in a large bowl. Add the greens, ham, tomatoes, radishes, scallions, pickles, barley and black-eyed peas and toss. Divide among plates.

A pleasant alternative to pasta salad, this colorful side dish gives barley, cubed ham and a medley of vegetables. "Every time I make it for a crowd, I bring copes of the recipe," says Sheryl Hershberger of Donalds, South Carolina. "As a busy wife and mom of four, I like the fact that it can be made ahead of time.

6 cups cooked medium pearl barley
1 cup (6 ounces) cubed fully cooked ham
2 celery ribs, diced
1/2 cup sliced water chestnuts
1/2 cup chopped green pepper
1 jar (4 ounces) diced pimientos, drained
1/2 cup sliced green onions
1/2 cup sliced fresh mushrooms
DRESSING:
1/2 cup white vinegar
1/4 cup olive oil
1/3 cup sugar
1 envelope (.7 ounce) Italian salad dressing mix

Steps:

  • In a large bowl, combine the first eight ingredients. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Pour over barley mixture and stir to coat. Cover and refrigerate for at least 2 hours, stirring occasionally.
