1 pound cubed beef stew meat
1 small onion, chopped
1 pinch salt
¼ teaspoon ground black pepper
3 cloves garlic, crushed
2 (14 ounce) cans beef broth
3 ½ cups water
1 cup peeled and diced tomatoes with juice
1 potato, cubed
2 carrots, chopped
¼ medium head cabbage, shredded
⅓ cup quick-cooking barley
1 (14.5 ounce) can great Northern beans, rinsed and drained
¼ teaspoon dried oregano
¼ teaspoon dried basil
¼ teaspoon dried rosemary
¼ teaspoon caraway seeds

Steps:

  • Coat a large pot or Dutch oven with cooking spray. Place over medium heat and cook beef until brown. Stir in onion and cook until translucent. Drain fat. Stir in salt, pepper and garlic and cook 1 minute. Pour in beef broth, water and tomatoes. Stir in potato, carrots, cabbage, barley and beans. And season with oregano, basil, rosemary and caraway. Bring to a boil, then reduce heat and simmer 20 minutes.

8 cups low-sodium chicken or vegetable broth
1 pound mix of dried beans, such as navy and pinto, rinsed
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 stalks celery, diced
2 carrots, diced
2 cloves garlic, minced
1 medium yellow onion, chopped
1 bay leaf
A few sprigs fresh thyme
8 ounces dried barley
8 ounces baby spinach
Toasted crusty bread or baguette, for serving

Steps:

  • Combine the broth, bean mix, salt, pepper, celery, carrots, garlic, onions, bay leaf, thyme and 2 cups water in a slow cooker. Cover and cook on low for 7 hours. Add the barley and, if the broth looks low, another cup of water. Cover and cook on low an additional 1 hour (8 hours total).
  • Just before serving, stir in the spinach to wilt. Serve in a big bowl with toasted crusty bread or baguette.

1 teaspoon olive oil
1 cup chopped yellow onion
2 cloves garlic, minced

¾ cup small fresh mushrooms

1 (15.5 ounce) can white beans, drained and rinsed
1 (14.5 ounce) can Italian-style diced tomatoes, drained

Steps:

  • Bring the barley and water to a boil in a pot. Cover, reduce heat to low, and simmer 30 minutes, or until tender.
  • Heat the olive oil in a large pot over medium heat, and cook the onion and garlic until tender. Season with rosemary. Mix the mushrooms, yellow bell pepper, and wine into the pot, and cook 5 minutes. Stir in the cooked barley, beans, tomatoes, and spinach. Season with red pepper flakes. Continue cooking 10 minutes, or until spinach is wilted.

450 g dry pinto beans
450 g dry pinto beans
150 g pearl barley
2 tablespoons sunflower oil
2 onions, chopped (about 250 g)
4 garlic cloves, chopped
300 g smoked pork necks, diced
1 carrot, peeled (150 g)
100 g celery root, peeled
100 g parsley roots, peeled
1 red horn pepper, cut into chunks
1 dried bay leaf
1 celery, leaf
1500 ml water
1 teaspoon sea salt
1 teaspoon ground black pepper

Steps:

  • Soak dry pinto beans in plenty of water overnight. Drain and rinse the beans.
  • Soak pearled barley in plenty of water overnight. Drain and rinse the barley. Cook al dente in a double amount of water. Drain and set aside.
  • In a large pot sauté onions and garlic in sunflower oil for 5 minutes until soft, stirring frequently. Add diced smoked pork neck, stir and sauté for 5 more minutes.
  • Meanwhile, make a mirepoix (soffritto or Holy trinity) from carrot, celery and parsley root and red horn pepper: cut the root vegetables into smaller pieces and coarsely chop in a blender. Add horn pepper chunks and pulse once or twice.
  • Add mirepoix to onions and smoked meat, stir and cook for 1-2 minutes.
  • Add beans, bay and celery leaf, water, and salt and bring to the boil. Turn down the heat, cover the pot and continue to cook for 25 - 30 minutes.
  • Stir in cooked barley, continue to cook for 5 minutes or until the beans are cooked (al dente).
  • Season with ground black pepper and serve.

  • Lightly spray a Dutch oven with cooking spray. Cook the carrots, onion, celery, and zucchini over medium-high heat for 3 minutes, stirring occasionally.

2 tablespoons ketchup

  • Finely chop cilantro stems. Stir into pot, along with diced fennel and garlic. Cook for 2 minutes. Stir in baharat, cinnamon and tomato paste, and cook until paste begins to caramelize, about 2 minutes. Stir in broth, 3 cups water, the barley and the salt. Bring to a gentle boil, stir in saffron, if using, and reduce heat to medium. Simmer uncovered for 40 minutes. Stir in beans, squash, turnip and lentils; cook until barley is tender, about another 20 to 30 minutes. Taste and adjust seasonings, if desired. Remove cinnamon stick. Ladle stew into bowls. Spoon a dollop of yogurt on top and drizzle with olive oil. Garnish with cilantro leaves, fennel fronds and Aleppo pepper or paprika. Tip Baharat is a Middle Eastern spice mix. You can buy it at specialty markets or make your own. To make it, combine 2 tablespoons sweet paprika, 1 tablespoon ground coriander, 1 tablespoon ground cumin, 1 tablespoon ground turmeric, 2 teaspoons black pepper, 1 teaspoon grated nutmeg, 1 teaspoon ground cardamom and 1 teaspoon allspice.

1 cup dried small white navy beans (I use canned and avoid the soaking)
1 1/2 lbs well marbled boneless lamb stew meat, trim and cut into 1 inch cubes
2 tablespoons all-purpose flour (plain)
3 tablespoons olive oil
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
2 bay leaves
3 garlic cloves, minced
6 cups beef stock (I use chicken.) or 6 cups veal stock (I use chicken.)
18 white pearl onions
6 carrots, peeled and cut in 1 inch lengths
1 cup pearl barley
1 lb red potatoes, unpeeled and quartered
1 cup fresh peas (I use canned peas) or 1 cup thawed frozen peas (I use canned peas)
salt
fresh ground pepper

Steps:

  • Pick over and discard any damaged beans or stones.
  • Rinse the beans.
  • Place in a bowl, add plenty of water to cover and soak for about 3 hours.
  • Drain and set aside.
  • Coat the lamb cubes with the flour, shaking off any excess.
  • In a large heavy pan.
  • over medium-high heat, warm the olive oil.
  • Add the lamb and brown well on all sides, 10-15 minutes.
  • Add the rosemary, thyme, bay leaves, garlic, beans and stock.
  • Bring to a boil, reduce the heat to low, cover and simmer for 1 hour.
  • Meanwhile, bring a saucepan three-fourths full of water to a boil.
  • Add the pearl onions and simmer for 45 seconds.
  • Drain, cool and using s knife, peel of the skins.
  • Add the onions, carrots and barley to the stew and simmer for 30 minutes longer.
  • Add the potatoes and simmer until the potatoes are tender, 30 minutes longer.
  • Add the peas and simmer for 5 minutes longer.
  • Season to taste with salt and pepper.
  • Ladle into individual bowls and serve immediately.

This is a great stew for cold winter nights! Serve with warm whole grain rolls or grilled cheese sandwiches. Caution: it does make a lot, but freezes well. 1 (28 ounce) can crushed tomatoes (no need to drain, the liquid add to the soup broth)

3 tablespoons oregano
3/4 cup uncooked barley
2 cups chopped broccoli
2 medium carrots, chopped
