UPSIDE-DOWN BARBEQUE MEATLOAF
When I've made 'barbeque meatloaf' before I've simply used the standard spoon-the-glaze-on-top-of-the-loaf-and-bake-it method. This time I wanted to line the loaf pan with some of the sauce, press the meat in, and let it roast in the goodness. I was envisioning a beautiful, glossy finish when I turned it on to the serving platter. It wasn't quite as aesthetically pleasing as I hoped (ugly). But, hey--this is quick and dirty home cooking. It may not have looked good, but it tasted fine!

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Mix ground beef, salt, garlic powder, onion powder, black pepper, celery salt, chipotle chile powder, and cayenne pepper together in a bowl with your hands.
- Stir breadcrumbs, egg, ketchup, mustard, and Worcestershire sauce into meat mixture until thoroughly combined; form into a loaf shape.
- Spread barbeque sauce out into the bottom of a loaf pan; place meatloaf on top of barbeque sauce and press into pan.
- Bake meatloaf in the preheated oven until no longer pink in the center, about 1 hour, 15 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Drain the fat from the loaf pan and invert pan over a plate to transfer meatloaf. Let rest for 5 minutes before slicing.

BARBEQUE RANCH MEATLOAF
A delicious, juicy meatloaf that uses ranch dressing for flavoring. I used my stand mixer to blend everything together, and the loaf does not fall apart when slicing!

- Preheat oven to 350 degrees F (175 degrees C).
- Mix sausage and ground sirloin in a large bowl until thoroughly combined; add eggs, bread crumbs, onion, and ranch dressing; mix well. Form into a loaf and place into the center of a 9x13-inch baking dish.
- Arrange fingerling potatoes and baby carrots around meatloaf and cover dish with foil.
- Bake in the preheated oven for 1 hour; remove foil and brush meatloaf with barbeque sauce. Bake uncovered until an instant-read meat thermometer inserted into the center of the loaf reads at least 160 degrees F (70 degrees C), about 30 more minutes. Let meatloaf rest 5 to 10 minutes before slicing.

This chicken meatloaf is a delicious version of an old favorite. I make extra because it also makes a great cold sandwich the next day.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan with nonstick cooking spray.
- Melt butter in a skillet over medium heat. Add onion and garlic and cook until softened, about 4 minutes. Transfer to a large bowl.
- Add ground chicken, oats, zucchini, barbecue sauce, egg, salt, chili powder, and cayenne to the bowl and mix until well combined. Shape into a loaf and place in the prepared pan. Mixture will be less firm than a traditional meatloaf; this is normal. Glaze with extra barbeque sauce, if desired.
- Bake in preheated oven until an instant-read thermometer inserted in the center reads at least 165 degrees F (74 degrees C), about 1 hour 15 minutes.

HONEY BARBEQUE MEATLOAF
This is a family favorite. My son will ask for this and clean his plate. The original recipe was a bit spicy for our taste so we altered it for our taste buds.

- 1. When making this measure everything exactly or it will be too runny. Dice up dried bread crumbs and add all meat ingredients to a large bowl. Use your hands to mix together until everything is evenly combined.
- 2. Shape the mixture into a long, thick log and place a 8x4" glass loaf pan sprayed with non-stick cooking spray.
- 3. In a small bowl, whisk together the topping ingredients. Spread half of this mixture evenly all over the meatloaf. Reserve the other half for serving.
- 4. Bake for 45 minutes at 350 degrees F. Slice and drizzle with reserved honey barbecue sauce.
- 5. Enjoy!
BACON-TOPPED TURKEY MEATLOAF WITH BARBEQUE SAUCE
Steps:
- Preheat the oven to 350°. Lightly spray a petite loaf pan with oil (if you don't have a petite loaf pan you could use a muffin tin). In a large bowl, mix the zucchini, onion, red pepper, breadcrumbs, BBQ sauce, egg, paprika and salt. Add the turkey and combine until mixed through. Create 5 equal loafs and place them into the loaf pan. Place the 2 bacon halves over each loaf and top each with 1/2 tbsp additional BBQ sauce. Bake about 25 minutes or until cooked through.

Delicious individual meatloaves! The flavors are great and the topping is to die for. The lemon on top makes a nice presentation.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish or a dish of similar size.
- In a large bowl, mix together the ground beef, lemon juice, water, egg, bread, onion and seasoning salt until well blended. Shape into 6 individual loaves - I like to make large balls. Place them in the prepared baking dish.
- Bake for 15 minutes in the preheated oven while you prepare the topping. In a small bowl, stir together the ketchup, brown sugar, mustard powder, allspice and cloves. Spoon the sauce over the loaves, then top each one with a slice of lemon. Return to the oven, and bake for an additional 30 minutes, or until cooked through.

- Preheat oven to 375 degrees.
- Grease a loaf pan with bacon fat
- In a medium-large mixing bowl, put all main ingredients in and mix until it's sticky and combined. Don't over-mix though, or you'll have pelletloaf, not meatloaf.
- Put into the loaf pan, smooth the top out a bit if you would like. Bake for an hour or until it reaches 165 degrees on a meat thermometer.
- While it's in the oven, mix up the sauce ingredients. Just before meatloaf is done (10 minutes or so), spoon/brush sauce over the top, return to oven and let it go in there for the remaining time/temperature. Voila. You have meatloaf.
