1 cup plus 4-1/2 teaspoons raspberry vinaigrette, divided
2 tablespoons minced fresh rosemary or 2 teaspoons dried rosemary, crushed, divided
6 bone-in chicken thighs
6 chicken drumsticks
1/2 cup seedless raspberry jam
1-1/2 teaspoons lime juice
1/2 teaspoon soy sauce
1/8 teaspoon garlic powder

Steps:

  • In a large resealable plastic bag, combine 1 cup vinaigrette and half of the rosemary. Add chicken. Seal bag and turn to coat; refrigerate for 1 hour. , In a small bowl, combine the jam, lime juice, soy sauce, garlic powder, and remaining vinaigrette and rosemary; set aside., Drain and discard marinade. Place chicken skin side down on grill rack. Grill, covered, over indirect medium heat for 20 minutes. Turn; grill 10-20 minutes longer or until juices a thermometer reads 180°, basting occasionally with raspberry sauce.

Easy Raspberry Chicken with Coconut Rice image

This is a really easy recipe for raspberry chicken with rice. It is by far my favorite quick meal and I always make extra so I have some to take to work for lunch the next day!

2 cups water
1 (14 ounce) can reduced-fat coconut milk
2 teaspoons minced fresh ginger root
1 cup Basmati rice
⅓ cup all-purpose flour
1 tablespoon lemon pepper
4 (6 ounce) skinless, boneless chicken breast half - cut into bite-size pieces
2 tablespoons vegetable oil
2 teaspoons dried rosemary
½ cup raspberry vinegar

Steps:

  • In a large pot, bring to a boil the water, coconut milk, ginger, and rice; cover, and simmer, stirring occasionally, until all liquid is absorbed.
  • Meanwhile, in a resealable plastic bag, combine the flour, lemon pepper, and chicken; shake to coat.
  • Heat oil in a large skillet over medium heat. Fry chicken strips and rosemary, turning occasionally, until golden brown. Remove chicken pieces from pan, and set aside. Pour raspberry vinegar into skillet, and simmer until reduced by half. Return chicken to skillet, and cook until all liquid is absorbed. Serve with coconut rice.

Bake the chicken on a broiler pan only, this makes for a better texture and tasting chicken with more flavor and the fat drips to the bottom. Prep time includes 8 hours marinating time.

2/3 cup hoisin sauce
3 tablespoons rice wine vinegar
3 tablespoons soy sauce (low sodium can be used if desired)
3 tablespoons ketchup
2 tablespoons brown sugar
1 tablespoon minced garlic
8 chicken drumsticks (skin off if desired)
8 chicken thighs (skin off if desired)

Steps:

  • To prepare the barbecue sauce: combine the first 6 ingredients in a medium bowl.
  • Place 3/4 cup sauce in a large bowl; cover, and chill the remaining barbecue sauce.
  • Add the chicken legs and thighs to the sauce in the large bowl; toss to coat.
  • Cover, and marinate in the refrigerator for 8 hours, or overnight.
  • Set oven to 375 degrees.
  • Remove the chicken from the fridge.
  • Place the chicken on a broiler pan coated with cooking spray; reserving the marinade from the bowl.
  • Bake at 375 for 30 minutes.
  • Turn the chicken; baste with reserved marinade.
  • Bake an additional 20 minutes, or until the chicken is done, and discard the marinade On top of the stove, bring the 3/4 cup of the reserved marinade from the fridge to a boil in a small saucepan; reduce heat, and cook until slightly thickened to about 1/2 cup (this should take about 5 minutes).
  • Drizzle the hot chicken with the sauce before serving, or serve the sauce at the table.

  • Preheat broiler.

2 tablespoons vegetable or peanut oil, plus more for oiling the grill grates
8 bone-in skin-on chicken thighs
Kosher salt and freshly ground black pepper
2 tablespoons finely grated peeled fresh ginger
2 cloves garlic, chopped
1/2 cup ketchup
1/2 cup hoisin sauce
1/2 cup dry sherry
2 teaspoons toasted sesame oil
2 teaspoons soy sauce
1 1/2 teaspoons Asian chili garlic sauce
Cooked broccoli and white rice, for serving

Steps:

  • Preheat an outdoor grill for medium heat.
  • Sprinkle the chicken thighs generously with salt and pepper. Lightly oil the grill grates. Grill the chicken until grill marks appear and an internal temperature of 170 degrees F, about 15 minutes per side.
  • While the chicken cooks, make the sauce: Heat the vegetable oil in a small saucepan over high heat. Add the ginger and garlic and cook until soft, 1 to 2 minutes. Add the ketchup, hoisin, sherry, sesame oil, soy sauce and chili garlic sauce. Whisk until smooth and bring to a boil. Remove from the heat and let cool.
  • Brush the chicken thighs with about 1/2 cup of the sauce several times in the last 5 minutes of cooking time. Serve the chicken with the extra sauce and with cooked broccoli and white rice.

CRISPY-SKIN HOISIN BBQ CHICKEN

1/2 cup soy sauce
Juice of 1 lemon
2 scallions, cut into 1-inch pieces
2 cloves garlic, minced
Freshly ground pepper
4 chicken quarters or 8 bone-in chicken thighs
2 tablespoons packed light brown sugar
1 teaspoon grated fresh ginger
1/2 cup water
1/4 cup hoisin sauce

Steps:

  • Combine the soy sauce, lemon juice, scallions, garlic, and 1/4 teaspoon pepper in a resealable plastic bag. Add the chicken pieces; seal and toss well to coat. Place in the refrigerator and marinate overnight.
  • Prepare a grill for indirect-heat cooking or preheat a grill pan over medium heat. Preheat an oven to 450 degrees F. Combine the brown sugar, ginger, water, and hoisin sauce in a glass bowl as a basting sauce.
  • Remove the chicken from the marinade and pat dry. Place on the grill, skin-side down and cook until the skin is well marked, 6 to 8 minutes, keeping a close eye. Turn the chicken and basting constantly, cook the chicken for another 5 minutes. Transfer the chicken, skin-side up, to a baking sheet.
  • Generously brush the chicken with the sauce and cook in the hot oven until the skin is crispy and the chicken is cooked through, about 15 to 20 minutes.
  • Let rest under a foil tent for 10 minutes, then it's "nom-nom" time.
