Jerk Chicken Meatballs With Barbecue-Pineapple Glaze image

This recipe takes the deep flavor of jerk chicken and turns it into easy meatballs. The jerk seasoning paste does double duty here, adding both spices and moisture, so don't reach for dry jerk seasoning. Whether served alone as an appetizer, over rice, or even tucked in a sandwich, these meatballs are perfectly salty, sweet and spicy.

Neutral oil
1 pound ground chicken or turkey
1 small yellow or red onion, finely diced
1 egg, beaten
1/4 cup bread crumbs
2 tablespoons Jamaican jerk seasoning paste, such as Grace or Walkerswood
1 tablespoon chopped fresh parsley or cilantro leaves
1 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 cup pineapple juice
1/2 packed cup light or dark brown sugar
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 small garlic clove, minced
1/2 teaspoon onion powder
Pinch of red-pepper flakes
Pinch of kosher salt, plus more to taste
1 tablespoon cornstarch
White rice, for serving

Steps:

  • Heat oven to 375 degrees. Line a sheet pan with aluminum foil and very lightly coat it with oil.
  • Prepare the meatballs: In a medium bowl, combine the chicken, onion, egg, bread crumbs, jerk seasoning paste, parsley, garlic powder, salt and pepper. Mix thoroughly to combine, being careful not to overwork the meat. Using lightly wet hands, form the mixture into 12 meatballs, each a bit larger than a golf ball, and space them out on the prepared pan. Bake until golden brown, about 15 minutes. (Alternatively, you can fry them in a nonstick pan coated in oil over medium heat for about 4 to 5 minutes per side.)
  • While the meatballs cook, prepare the glaze: Whisk the pineapple juice, brown sugar, ketchup, Worcestershire sauce, garlic, onion powder, red-pepper flakes and salt together in a medium pot over medium-high heat. Bring to a boil, then reduce heat to medium-low. Simmer until it reduces enough to coat the back of a spoon, about 10 to 15 minutes.
  • In a small bowl, mix together the cornstarch with 1 tablespoon water. Slowly whisk into the sauce, increase the heat to medium and stir until you reach the desired consistency. (Sauce should look like a thicker gravy.) Taste and adjust seasoning as needed.
  • Add the meatballs to the sauce and stir until coated. Cook over medium-low heat for 2 minutes, until the meatballs are evenly glazed and deepen slightly in color. Serve hot on their own or over rice.

2 (18 ounce) bottles barbecue sauce
1 (8 ounce) can crushed pineapple
1 tablespoon garlic powder
½ teaspoon chili powder
6 chicken leg quarters

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix barbecue sauce, pineapple, garlic powder, and chili powder together in a bowl.
  • Lay chicken legs in a 9x13-inch baking dish. Pour barbecue sauce mixture on top, making sure to coat all of the chicken. Cover with aluminum foil.
  • Bake in the preheated oven for 1 hour.
  • Remove chicken from the oven and let cool 1 hour.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place baked chicken on the hot grill and cook until browned on each side, 10 to 15 minutes.

It adds a nice subtle flavor to the dish. This dish also tastes better the next day after the flavors have come together more, making great leftovers!

4 cups your favorite barbecue sauce
14 ounces canned crushed pineapple
1 tablespoon butter
4 medium chicken breasts
½ cup shelled pistachios

Steps:

  • Combine barbecue sauce and pineapple in a large bowl and set aside.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease the bottom of a 9x6-inch baking dish with butter.
  • Place chicken breasts in the baking dish in a row. Pour pineapple mixture over the chicken, making sure to coat well. Cover the baking dish.

1 lb homemade or purchased pizza dough
1/2 c barbecue sauce
1 1/2 c shredded pizza cheese blend
1 1/2 c purchased deli-roasted chicken (or rotisserie), chopped
2/3 c chopped onion (preferably red)
1/2 c chopped sweet pepper
1/2 c chopped fresh or canned pineapple, well-drained

Steps:

  • 1. Press the dough into a 14-inch circle on a baking sheet. Spread barbecue sauce evenly over the crust and cover with some of the shredded cheese. Top with chicken, onion, sweet pepper, pineapple and the rest of the cheese.
  • 2. Bake in a 500 degrees oven for 12 to 15 minutes or until cheese is melted and crust is golden brown.

2 boneless skinless chicken breasts
4 slices deli ham
1/2 cup shredded low-fat white cheddar cheese
3 tablespoons extra virgin olive oil, divided

flour (for dredging)
2 slices fresh pineapple, chopped
1/2 vidalia onion, chopped
2 tablespoons soy sauce
2 tablespoons brown sugar
2 tablespoons cider vinegar
1 cup tomato paste
2 cups brown rice, cooked

Steps:

  • Start the rice according to package directions.
  • Preheat oven to 400°F.
  • Carefully butterfly the chicken breasts with a very sharp knife. Spread open and put into a zip plastic bag with a little water. Pound flat with the back of a cast iron pan or meat mallet.
  • Remove from bag. Put 2 pieces of ham and half of the cheese on each breast. Roll up and secure with toothpicks. Sprinkle with salt and pepper, roll in flour until coated.
  • Heat 2 tbsp of the oil in a cast iron skillet. Add chicken rolls, seam side down, and cook on each side until golden brown. (About 8 - 10 minutes) Put in oven to finish cooking (about 8 more minutes).
  • Meanwhile, heat remaining 1 tbsp oil in medium skillet. Add chopped onion and pineapple. Stir until onion has softened. Add brown sugar, soy sauce, vinegar and tomato paste. Simmer, stirring occasionally until somewhat reduced.
  • When done, cut each chicken roll into diagonal slices. Serve with brown rice and the pineapple sauce.

2/3 cup very warm water (120°F to 130°F)
2 tablespoons olive oil
1/2 cup barbecue sauce
1/2 cup shredded cooked chicken
1/2 cup canned pineapple tidbits, drained
1/2 cup finely shredded Monterey Jack cheese (2 oz)

Steps:

  • Heat oven to 450°F. Line cookie sheet with foil; spray foil with cooking spray.
  • In medium bowl, stir together Bisquick mix, very warm water and olive oil until Bisquick mix is moistened. Let stand 15 minutes.
  • Knead dough slightly to form ball. Divide dough into 8 parts. Flatten and use rolling pin to roll each into circle about 1/8-inch thick. Place circles on cookie sheet.
  • In small bowl, stir together barbecue sauce and chicken. Place 1 tablespoon chicken mixture on each dough circle. Top each with 1 tablespoon pineapple and 1 tablespoon cheese. Fold over, and pinch edges to seal.
  • Bake 15 to 20 minutes or until golden.

6 tablespoons your favorite barbecue sauce
2 pineapple rings
2 green bell pepper rings

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Rub chicken with 2 tablespoons barbecue sauce on each side. Place each chicken breast on a large square of heavy-duty or nonstick aluminum foil. Top each with 1 pineapple ring and 1 bell pepper ring. Lightly drizzle additional barbecue sauce on top of each and season with black pepper.
  • Pull foil up around the sides of chicken and double fold the top. Fold the ends securely to contain juices, while leaving room inside the packet.
