BARBECUE CHICKEN PAN PIZZA

This cast-iron pizza is the perfect mix of salty, sweet, tangy and sharp. Crispy baked pizza dough is topped with barbecue chicken, mozzarella and cheddar cheese. A drizzle of honey with fresh cilantro and scallion finish off this cheesy chicken pizza.

1 rotisserie chicken
EVOO or vegetable oil
1 red onion
3 to 4 cloves garlic
Salt and pepper
1/2 cup chicken stock
1 cup ketchup, Sir Kensington preferred brand
1/4 cup light brown sugar
1/4 cup molasses
1/4 cup cider vinegar
1/4 cup Worcestershire sauce, Lea and Perrins preferred brand
1 tablespoon (scant palm full) smoked sweet paprika
1 tablespoon ground mustard
1 pound ball dough from market or your favorite pizza parlor or EZ Pizza Dough, recipe follows
AP flour, for dusting
About 1 tablespoon cornmeal
Pinch of crushed red pepper flakes
1 cup each shredded mozzarella cheese AND shredded yellow cheddar cheese
About 2 tablespoons acacia honey
2 tablespoon hot sauce, Frank's RedHot or chipotle Tabasco preferred brands
Cilantro leaves
Scallions, sliced
Sliced fresh jalapeno peppers
Garlic Bread Fries, for serving, recipe follows
1 cup warm water
1 package active dry yeast (look for pouches marked "For Pizza")
2 tablespoons EVOO, plus some for bowl to rest dough
1 tablespoon acacia honey
2 teaspoons kosher salt
3 cups AP flour
1 bag frozen steak fries, Ore-Ida preferred brand
3 tablespoons butter, melted
1/4 cup grated Parm
1 teaspoon granulated garlic
1 teaspoon dried parsley
1 teaspoon oregano
1/2 teaspoon ground pepperoncini or crushed red pepper flakes

Steps:

  • Preheat the oven to 525 to 550 degrees F, as high as it goes, with rack at center. Preheat a cast-iron skillet, 12 inches, over medium to medium-high heat (to aid in a crispy bottom crust while pizza is in oven).
  • Gather your ingredients.
  • Remove skin from chicken, remove meat from bones and pull meat into bite-size pieces. Dice onion, grate or mince garlic.
  • Preheat a second cast-iron or other skillet over medium-high heat. Add oil, 2 turns of the pan, then add onions and garlic, season with salt and pepper and soften a few minutes. Add stock and let it finish cooking the onions by absorbing into them. Add ketchup, sugar, molasses, vinegar, Worcestershire, paprika and mustard. Add chicken to sauce, turn in sauce and remove from heat.
  • Roll and stretch dough on lightly floured surface into 12 to 14-inch even round that will cover pan. Turn off heat under skillet, sprinkle a little cornmeal in skillet and press dough into hot skillet and up sides as much as possible. The pan is hot -- reminder. Brush the dough with EVOO and season with a little salt and pepper or red pepper flakes. Top the dough with chicken and sauce and top with the cheeses. Place in oven. Bake the pizza 10 to 12 minutes to deep golden brown and bubbly.
  • Combine honey, splash of water and hot sauce in small pot or skillet and heat over low heat.
  • Drizzle or brush the pizza with the honey mixture and top and scallions, cilantro and jalapeno.
  • To a mixer with dough hook attached, add warm water and yeast and let the yeast bloom and foam, 5 minutes.
  • Add EVOO, honey and salt and turn on mixer. Add the flour gradually to form dough. Transfer to a bowl drizzled with a little EVOO and cover; let stand 1 hour.
  • Cut dough in half, wrap half the dough and freeze for later use.
  • Preheat the oven to 525 to 550 degrees F.
  • Line a baking sheet with fries and bake 15 to 20 minutes to very crispy.
  • Add fries to large bowl. Pour butter and remaining ingredients over the fries. Toss to coat. Serve hot.

Our homemade pizza bread is so simple to make and it bakes in minutes. Feel free to add whatever toppings you like on your pizza.

1 loaf Italian bread
1/2 cup pizza sauce
1 1/2 cups shredded mozzarella
½ cup shredded Parmesan
1 teaspoon Italian seasoning
16 slices Pepperoni
1/4 cup sliced black olives

Steps:

  • Preheat oven to 375 degrees.
  • Slice the bread in half lengthwise.
  • Spread each half of the bread with pizza sauce. Top with cheese. Sprinkle with the Italian seasoning. Arrange pepperoni and olives over the cheese.
  • Bake on a sheet pan for 10 minutes or until cheese has fully melted.
  • Serve hot.

French Bread Pizzas image

6 deli rolls or small baguettes, halved
One 24-ounce jar marinara sauce
1 jar prepared pesto, optional
Five 8-ounce packages fresh mozzarella, sliced
5 ounces Canadian bacon slices, halved
8 ounces canned pineapple chunks
5 tablespoons olive oil
Salt and freshly ground black pepper
One 12-ounce jar Kalamata olives, chopped
8 ounces crumbled feta
4 ripe tomatoes, diced rough
1/2 English cucumber, seeded and diced
1/2 bunch fresh parsley, chopped
1 cup sliced pepperoni
6 to 7 jalapenos, sliced
Sliced Roma tomatoes, for topping
2 tablespoons olive oil
Salt and freshly ground black pepper
1/2 bunch fresh basil
Olive oil, for sauteing
1 pound ground beef
1 teaspoon red pepper flakes
Salt and freshly ground black pepper
8 ounces grated Cheddar
1 pound browned ground beef
Chopped romaine lettuce, for topping
Diced tomatoes, for topping

Steps:

  • For the pizza base: Preheat the oven to 375 degrees F.
  • Lay the rolls cut-side up on a large baking sheet. Top each half with marinara sauce (or pesto for the tomato basil pizzas), followed by the mozzarella. Then add your toppings of choice. See below for directions for assembling specific pizzas.
  • Once the pizzas are assembled, put the baking sheet on the lowest rack for 8 to 10 minutes. Then turn up the heat to 425 degrees F and put the sheet on the highest rack until the cheese starts to bubble a bit and turns golden. Remove and serve immediately! Cut the pizzas in half right across the middle so there are mini French bread pizzas for everyone.
  • Pizza Varieties:
  • For the Canadian bacon and pineapple pizzas: Top with the Canadian bacon slices and pineapple and bake according to the directions above.
  • For the Greek salad pizzas: Leave off the sauce and brush the sliced rolls with 2 tablespoons of the olive oil; sprinkle with salt and pepper. Top with the mozzarella and bake according to the directions above.
  • While the pizzas are baking, toss together the olives, feta, tomatoes, cucumbers, parsley, the remaining 3 tablespoons olive oil and salt and pepper to taste in a medium bowl. Top the cooked pizzas with the chopped Greek salad.
  • For the pepperoni and jalapeno pizzas: Top with the pepperoni and jalapeno slices and bake according to the directions above.
  • For the tomato basil pizzas: Use pesto instead of the marinara sauce, and top with the tomato slices. Drizzle with the olive oil and sprinkle with salt and pepper. Bake according to the directions above. Top the cooked pizzas with basil leaves.
  • For the hamburger pizzas: Heat the olive oil in a skillet over medium-high heat. Add the ground beef, red pepper flakes and salt and pepper and saute until the beef is no longer pink. Top the rolls with the sauteed ground beef and bake according to the directions above.
  • For the hamburger taco pizzas: Top with the Cheddar and ground beef and bake according to the directions above. Top the cooked pizzas with the chopped lettuce and tomatoes.

Pizza Dough
3/4 cup warm (110°F) water, or more if needed
1 1/4 teaspoons active dry yeast
2 tablespoons extra virgin olive oil, plus more for the bowl and brushing the pizza
2 cups bread flour, plus more for kneading
2 teaspoons kosher salt
Toppings
1/3 pound double-smoked bacon, sliced crosswise into 1/4-inch pieces
Caramelized Onions (page 154)
1/4 pound Gruyère cheese, grated (about 1 cup)
1/4 cup crème fraîche
Parsley-Garlic Oil (recipe follows)
Fresh flat-leaf parsley leaves, for garnish
Finely grated lemon zest, for garnish
Parsley-Garlic Oil
1/2 cup canola oil
2 cloves garlic, thinly sliced
1 cup packed fresh flat-leaf parsley leaves
Kosher salt and freshly ground black pepper
(Makes about 1 cup oil and toasted garlic chips)

Steps:

  • To make the pizza dough, measure 1/4 cup of the warm water into a 2-cup measuring cup. Sprinkle in the yeast and let stand until the yeast dissolves and foams, about 5 minutes. Add the remaining 1/2 cup warm water and the olive oil.
  • Pulse the flour and salt in a food processor to combine. Add the yeast mixture and pulse to combine. If the dough does not readily form into a ball, add another tablespoon or two of warm water and pulse until a ball forms. Process until the dough is smooth and satiny, about 30 seconds longer.
  • Turn the dough onto a lightly floured work surface. Knead by hand with a few strokes to form a smooth, round ball. Put the dough into a large oiled bowl and cover the bowl with a clean dish towel. Let rise until doubled in size, about 1 1/2 hours.
  • In a medium sauté pan over medium heat, cook the bacon, stirring occasionally, until golden brown and crisp, about 8 minutes. Transfer with a slotted spoon to a plate lined with paper towels.
  • Preheat the oven to 450°F at least 30 minutes before baking the pizza. Line 2 rimmed baking sheets with parchment paper.
  • Turn out the dough onto a lightly floured work surface and divide the dough in half. Form each piece into a ball and cover with a damp cloth. Working with one piece of dough at a time, shape the dough on top of the parchment-lined baking sheets into rectangles about 14 x 7 x 1/4 inch thick. Lightly prick the surface with a fork and brush each with 1 tablespoon olive oil.
  • Bake the pizzas one at a time on the bottom rack of the oven until light golden brown, about 6 minutes. Divide the onions and cheese over the top of each pizza. Return the pizzas to the oven and bake until the cheese has melted, about 3 minutes.
  • To serve, drizzle with the crème fraîche and some parsley-garlic oil. Top with the bacon, garlic chips, parsley leaves, and lemon zest.
  • Parsley-Garlic Oil
  • Heat the oil over medium-low heat. Add the garlic and cook until light golden brown, 3 to 4 minutes. Transfer the garlic with a slotted spoon to a plate lined with paper towels. Let the oil cool.
  • Process the garlic oil and parsley in a blender until smooth. Season with salt and pepper.
