2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon allspice
1/2 teaspoon nutmeg
Pinch cloves
1/2 cup 1 stick unsalted butter, room temperature
1 1/2 cups granulated sugar
1 1/2 cups mashed ripe bananas (about 3 large)
1 cup sour cream
2 large eggs
1 8-ounce block light or regular cream cheese, room temperature
3 tablespoons unsalted butter (room temperature)
2 cups powdered (confectioner's sugar)
1/2 teaspoon vanilla
Pinch salt
Milk (only if needed for thinning the icing to a spreading consistency)

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Butter and flour a 13-inch x 9-inch baking pan.
  • In a medium bowl, stir together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, allspice, and cloves. Set aside.
  • In the bowl of a stand mixer fitted with the beater blade attachment or in a large bowl using an electric mixer, beat together the butter and sugar on medium speed until pale and fluffy, about 1 - 2 minutes. Add the eggs one at a time and mix until well incorporated. Mix in the sour cream and the bananas.
  • Pour in the flour mixture, a little bit at a time, beating continuously until well-incorporated.
  • Spread batter into the prepared pan.
  • Bake for about 25 minutes, or until the top of the cake is golden and a toothpick or tester inserted into the center comes out clean. Remove the cake from the oven and place on a wire rack to cool completely.
  • To make the frosting, fit a stand mixer with the beater attachment or use a large bowl and an electric hand mixer. On medium speed, beat together the cream cheese and butter until smooth. Turn the mixer to low and gradually add the powdered sugar. Once all the powdered sugar has been added, increase the speed to medium and beat for another 30 seconds. Add the vanilla and pinch salt; beat for another minute or so until smooth. Add a little milk (a couple of teaspoons at a time) if the frosting seems too stiff to spread.
  • Spread frosting onto completely cooled cake. Cut into 12 pieces and serve. Cover and store leftover cake in the refrigerator; it keeps well (and keeps getting better) for 3 - 4 days.

GLAZE:
1 cup confectioners' sugar
1/4 teaspoon vanilla extract
1 to 2 tablespoons fat-free milk

Steps:

  • In a bowl, beat the egg yolk, oil and bananas. Combine the cake flour, 1 cup sugar, all-purpose flour, baking powder, cinnamon, baking soda, nutmeg, salt, cloves, ginger and allspice. In another bowl, combine the milk, orange juice concentrate, yogurt, orange zest and vanilla. Gradually add dry ingredients to banana mixture alternately with milk mixture., In another bowl, eat egg whites and cream of tartar until soft peaks form. Gradually add remaining sugar, beating until stiff peaks form. Fold in batter. Pour into a greased and floured 10-in. fluted tube pan. 1 pinch ground mace
1/2 cup buttermilk, at room temperature
3/4 cup milk
1/4 cup granulated sugar
2 large egg yolks
3 tablespoons flour

Steps:

  • Preheat oven to 350°. Butter and lightly flour the sides and bottoms of two 8" round cake pans; knock out excess flour.

3-4 very ripe bananas
2 Tbsp lemon juice
1 box yellow cake mix
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves
3 large eggs
5 oz water
1/4 c oil

  • 1. Preheat oven to 350°F. Grease and flour a Bundt pan (or spray with baker's coating). Mash bananas very well with lemon juice and set aside.
  • 2. In large mixing bowl, stir together cake mix and spices. Add eggs, water, oil, and mashed bananas. Mix with electric mixer for 2 minutes at high speed, scraping bowl occasionally. Pour batter into prepared pan.
  • 3. Bake approximately 45-50 minutes, until pick inserted near center comes out clean. Cool on wire rack in pan for 10 minutes. Invert and remove from pan and cool completely.

3/4 cup sugar
2 1/2 teaspoons pumpkin pie spice, divided
2 ripe bananas, mashed
1 egg
1/4 cup canola oil
1/4 cup light brown sugar
1/2 pint whipping cream
3 tablespoons confectioners' sugar
1 tablespoons cocoa powder

Steps:

  • Lightly spray a 6-cup loaf pan. In a large mixing bowl, combine the baking mix, 2 teaspoons of pumpkin pie spice, the mashed bananas, egg, and oil. Using a hand mixer, beat the batter for 2 minutes. Remove 1/2 cup of the batter to a small bowl with the brown sugar, 1/2 teaspoon pumpkin pie spice and mix well. Pour the remaining batter into the loaf pan. Pour the brown sugar batter into the loaf pan and swirl with a knife. Make a foil ring and arrange it on the bottom of the slow cooker, then put the loaf pan on top of the foil ring.

1/2 cup brown sugar, packed
1 teaspoon vanilla
4 eggs

Steps:

  • In a large mixing bowl, cream the butter with the sugars until fluffy. Add vanilla and eggs. Blend in the mashed bananas.

4 very ripe bananas (when you mash, you should get 1 3/4-2 cups)
3 large eggs
2 teaspoons baking soda
1/2 teaspoon salt
1 cup canola oil
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/8 teaspoon nutmeg

Steps:

  • Preheat the oven to 350 degrees. Grease and flour a 12 cup Bundt pan or a tube pan. In a bowl, whisk together flour, spice powders, salt, baking soda. In another bowl, beat oil and sugar till combined. Add eggs one at a time and beat well after each addition. Add 1/3 of the flour mixture to the oil and egg mixture and beat. Add half of the banana puree and continue to beat. Repeat 1/3 of flour, remaining half of banana and 1/3 of flour mixture beating to incorporate everything very well. Pour into the prepared pan. Tap the pan few times to remove air bubbles. Bake for 55 minutes to an hour or until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes and then turn it on to the wire rack to cool completely.

4-5 - very ripe bananas
1/4 cup(s) orange juice
1/4 cup(s) buttermilk
2 - egg whites (or 1 egg)
1 - spice cake mix
VARIATION - MAKE WITH A PLAIN YELLOW CAKE MIX
- as above, but use no orange juice and
1/2 cup(s) buttermilk
1 cup(s) chocolate baking chips (optional)

Steps:

  • Preheat oven to 350° (325° for dark or coated pan). Spray a 9x13-inch cake pan with Baker's Joy, or grease and flour pan.
  • With a mixer in a large mixing bowl, mash bananas. Add orange juice, buttermilk, and egg whites. Blend well. Add cake mix in 2 parts, beating well after each part. Beat for a total of 2 minutes at medium speed.
  • Spread cake batter in prepared pan and bake 32-35 minutes (maybe 3-4 minutes longer if using dark pan at 325°). When done, cake will spring back when lightly touched. Cool cake in pan. Frost with your favorite frosting - we like cream cheese frosting. Sprinkle with chopped nuts.
  • VARIATION: to make this with a plain yellow cake mix, omit the orange juice and increase the buttermilk to 1/2 cup. If desired, stir in 1 cup chocolate baking chips.
