THAI BANANA SALSA WITH KING PRAWNS
Extremely refreshing. I make extra salsa to keep in the fridge for a pick-me-up after a long day at uni. You can serve it on a banana leaf with lime wedges.

Steps:
- In a large bowl, mix bananas, cucumbers, mint, cilantro, ginger, and red chile pepper to make salsa.
- In a small bowl, blend lime juice, fish sauce, and brown sugar until sugar has dissolved. Thoroughly mix into the salsa.
- Bring a large saucepan of lightly salted water to a boil. Place prawns in the water, and cook 3 minutes, or until flesh is opaque. Serve with the banana salsa.

GRILLED JAMAICAN JERK BONELESS PORK WITH ROASTED BANANA MANGO SALSA

- Preheat oven to 350 degrees F.
- Pat the pork dry with a paper towel and rub 3 tablespoons of jerk seasoning on the meat. Let marinate for 45 minutes at room temperature, covered.
- After 45 minutes have passed, rub the meat with the olive oil, put on a baking sheet, and bake for 45 minutes. Let rest for 10 minutes.
- On another baking sheet, roast the bananas until they begin to caramelize, about 25 minutes. Set aside and let cool.
- In a bowl, combine the mango, jalapeno, red onion, lime juice, cilantro, and bananas.

GRILLED CREAM CHEESE SANDWICH WITH BANANA AND PINEAPPLE SALSA
Steps:
- Cut the pineapple in small dice and place in colander. Set aside and let the juice drain, reserving the juice. Julienne the orange zest and place in a small pot and cover with water. Bring to a simmer and cook for 2 minutes. Strain and reserve the zest and the orange flavored water. Using the same small pot, combine the reserved pineapple juice, 1 tablespoon sugar, and orange zest. Scrape the vanilla bean seeds into it the pot as well. Bring to a simmer. Place the pineapple in a bowl and pour over the juice. Let it sit for 2 hours or overnight.
- Combine the lime zest, 3 tablespoons sugar, cream cheese, and rum in a medium bowl and whip until smooth. Reserve. This can be made and refrigerated up to 2 days in advance.
- To build the sandwiches, cut each brioche slice in 1/2 and brush with butter on one side. Sprinkle with some of the remaining 1/4-cup sugar and turn over so the non-buttered side is faced up. Spread a 1/4-inch layer of the cream cheese spread on all slices. Put a layer of bananas on 1/2 the slices and place the other slice of brioche on top, forming a sandwich.
- Lightly butter and sugar the aluminum sheets and place a sandwich on each. Fold up and reserve. Place the sandwiches over a medium low heated grill and cook 3 to 4 minutes on each side or until the sandwich gets nicely toasted on both sides. Remove from grill. These can either be unwrapped and platted or the aluminum can be opened and the pineapple salsa spooned right on top.

- 1. Heat oven to 350^. Spray bottom and corners of 9x5 loaf pan ,place wax paper in the pan and spray it too.
- 2. Cream butter and gradually add sugar creaming well. Add eggs, bananas, salsa and lemon juice. Add flour, soda and mix alternately with the milk and dry ingredients. Beginning and ending with dry ingredients. Blend well after each addition. Use low speed.
- 3. Pour batter into prepared pan.Place on bottom rack of oven. Bake for 1 hour checking after 50 minutes and test with toothpick.Cool on rack for 5 minutes. Remove from pan and remove wax paper. and cook completely- can brush top with honey mixed with lemon juice if desired.
JERK PULLED PORK WITH BANANA SALSA

- The day before, mix the sea salt and 200g of the sugar in a large food bag. Add the pork and coat it well, then leave it in the fridge overnight.
- The next day, remove the pork and wipe the meat down with kitchen paper to remove any excess sugar or salt. Rub 3 tbsp of the jerk spices all over and sit the meat on a rack, in a roasting tin. Leave to marinate a little in the fridge, then 30 mins before you start cooking, bring it out to room temperature.
- Heat oven to 140C/120C fan/gas 1. Mix together the remaining 100g sugar with the pineapple juice, the remaining jerk spices and treacle, and rub half over the pork. Pour the other half into the tin and roast for 6 hrs. Baste the meat with the juices and roast for 1 hr more until the outside is charred and the inside tender. Rest the pork on a platter for 20 mins and pour any juices from the tin into a fat-separating jug.
- Put the diced banana in a bowl with the onion. Stone, peel and dice the avocados and add these, too. Mix in the lemon and lime juice, chillies, coriander stalks and leaves, and some seasoning.
- Heat the black beans in a microwave, and warm the tortillas following pack instructions. Add a couple of forks to the pork for shredding, discard the fat from the tin juices, and serve the rest alongside for pouring. Serve the pork with the wraps, beans, banana salsa, yogurt and shredded lettuce, if you like.

- For the achiote butter: Mix everything in a food processor until well combined.
- For the corn salsa: Mix everything in a bowl and season with salt and pepper.
- For the tamales: Cut banana leaves into approximately 12-inch squares and wipe clean with damp towel. Place about 3 ounces of prepared tamale masa in the middle of the leaf and place a piece of fish on top of the masa. Coat the fish with achiote-chile butter then top with another spoonful of masa and spread over the fish to completely encase. Fold the edges of the banana leaf over the fish, making a packet. Tie with a string and steam for 10 minutes. Serve with Corn Salsa.

- 7. WELL THIS IS A KEEPER!!! IT IS SOOOOO MOIST. IT MADE 1-MINI LOAF AND 1-BREAD LOAF SIZE IF I'D USED MY LARGER LOAF PAN I GUESS I COULD HAVE GOTTEN IT ALL IN THE ONE...but, I didn't want to. I TOOK THE MINI LOAF OUT AFTER 30 MIN'S OF BAKING, IT WAS DONE BEING SO SMALL. THE LARGER SIZE LOAF TOOK A BIT OVER THE 1-HR THAT WAS SUGGESTED, (about 8 to 10 min's more). Check it though, most ovens bake a bit different.

- SALSA: Combine the bananas,bell peppers,jalapeno chilies,cilantro,lime juice,brown sugar,salt and pepper in bowl and mix well.
- Let stand 1 hour or longer.
- CHICKEN: Beat the egg with milk in a bowl.
- Mix the bread crumbs and pecans in a bowl.
- Season the chicken with salt and pepper.
- Spread with Dijon mustard and coat lightly with flour.

- 1. Heat the oven to 350 degrees F. Spray a 9 x 5 x 3-inch loaf pan with the cooking spray.
- 2. Beat the butter and sugar in a medium bowl with an electric mixer on medium speed until the mixture is light and fluffy. Stir in the bananas, salsa and eggs. Stir in the flour and baking soda. Pour the mixture into the loaf pan.
- 3. Bake for 1 hour or until a knife inserted near the center comes out clean. Cool in the pan on a wire rack for 15 minutes. Remove from the pan and cool completely on a wire rack.

- Combine orange juice, cilantro, lime juice and shrimp (remove shells and tail).
- Cover and marinate in refrigerator 30 minutes to 4 hours.
- Combine salsa ingredients EXCEPT bananas and chill.
- Bring coconut milk to a boil, add rice and salt.
- Cover and cook over low heat until rice is done.
- In a large saute pan, add 1 tablespoon olive oil and drained shrimp. Discard marinade.
- Cook shrimp until opaque and remove from heat.
- TO SERVE:.
- Add chopped bananas to salsa. Place a mound of rice on plate, then shrimp, top with salsa.
- Can sprinkle on a little paprika and garnish with cilantro.
