2 cups all-purpose flour
½ cup confectioners' sugar
½ cup sliced almonds
⅔ cup butter
2 (8 ounce) packages cream cheese, room temperature
½ cup white sugar
2 eggs
⅔ cup unsweetened pineapple juice
¼ cup all-purpose flour
¼ cup white sugar
1 (20 ounce) can crushed pineapple, drained with juice reserved
½ cup heavy cream, whipped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine 2 cups flour, confectioners' sugar, and almonds. Cut in butter until mixture resembles coarse crumbs. Press crust mixture into the bottom of an ungreased 9x13-inch pan. Bake in preheated oven for 15 to 20 minutes, until lightly browned. Set crust aside, and leave the oven on.
  • While the crust is baking, prepare the cream cheese layer. In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time. Blend in 2/3 cup unsweetened pineapple juice. Pour over hot crust and bake until filling is set, about 20 minutes more. Allow to cool completely.
  • Make the topping: In a saucepan, combine 1/4 cup flour, 1/4 cup sugar and 1 cup reserved pineapple juice. Bring to a boil and stir for 1 minute. Remove from heat and stir in crushed pineapple. Cool completely. When cool, fold in whipped cream. Spread topping over cream cheese layer. Refrigerate 4 hours before serving.

I got this recipe form my mother-in-law. Bananas, crushed pineapple and maraschino cherries are all baked into a cake. A light, buttery frosting is applied, and the cake is cut into bars for snacking.

2 cups all-purpose flour
1 cup white sugar
¾ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
1 (8 ounce) can crushed pineapple, with juice
2 eggs
½ cup vegetable oil
2 very ripe bananas, mashed
1 teaspoon vanilla extract
¼ cup maraschino cherries, halved
¼ cup butter, melted
1 teaspoon vanilla extract
3 cups confectioners' sugar
4 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, mix together the flour, sugar, baking soda, salt and cinnamon. Make a well in the center and pour in the crushed pineapple, eggs, oil, bananas and 1 teaspoon vanilla. Stir in the cherries. Mix well and pour into prepared pan.
  • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Frost cake while still warm.
  • To make the frosting: in a medium bowl, combine melted butter, 1 teaspoon vanilla and confectioners' sugar. Beat in milk, one tablespoon at a time, until desired consistency is achieved.

1/4 cup granulated sugar
1/2 cup unsalted butter (1 stick softened)
8 ounces cream cheese, at room temperature
1 cup powdered sugar
1 large egg
1/4 cup granulated sugar
1 cup crushed pineapple or 1 (8-ounce) can, drained
1/2 teaspoon pure vanilla extract
1/2 cup white chocolate chips
1/2 cup chopped macadamia nuts

Steps:

  • Preheat oven to 350 degrees F. Combine flour, sugar, and butter until mixture is crumbly. Spread evenly into a 13 by 9-inch baking pan with raised sides. Press down until an 1/8 of an inch thick and bake for 10 to 15 minutes or until edges are golden brown.
  • Mix cream cheese and 1 cup powdered sugar until frosting texture. Add egg, sugar, crushed pineapple and vanilla extract, mix thoroughly. Fold 1/4 cup white chocolate chips and 1/4 cup chopped macadamia nuts reserving 1/4 cup of each. Bake for additional 15 to 20 minutes or until batter is set. Remove from oven, melt reserved white chocolate chips and drizzle on top and sprinkle with 1/4 cup reserved chopped macadamia nuts. Let stand for 1 hour and cut into bars.

These homemade banana cheesecake bars are an easy banana dessert that kids and adults both love.

1 cup mashed banana ((2 large bananas))
12 oz cream cheese, vegan if desired
1/2 cup sweetener of choice ((see above for options))
1 tbsp cornstarch (or 4 tbsp almond flour)
1 1/2 tsp pure vanilla extract
optional 1/4 tsp cinnamon
optional crust ((two recipes are listed above))

Steps:

  • Line an 8-inch pan with parchment paper. Press in your crust (or make the bars crustless). Bring cream cheese to room temp. Preheat the oven to 350 F. If you have an extra baking pan, fill it about halfway with water and place on the lower rack of your oven. (This step helps prevent cracking but can be skipped.) Blend all remaining ingredients. Don't over-blend, which can also cause cracking later. Smooth the mixture evenly into the 8-inch pan. Place on the oven's middle rack. Bake 25 minutes. Leave the oven door completely closed but turn off the heat and let the bars sit in the turned-off oven another 10 minutes. Remove, and let cool completely. (Don't skip. Putting them hot into the fridge would cause-you guessed it!-cracking.) I recommend refrigerating a few hours or overnight (loosely covered with a cloth towel), during which time they firm up considerably. Slice and serve. 1 cup powdered sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F. Line a 9-inch by 13-inch baking pan with foil (or grease and flour it).
  • FOR THE BASE:.
  • Beat the 4 ounces of cream cheese, 1 egg and butter together on low speed until creamed. Blend in cake mix by hand until combined. It will be very thick, but piable like a soft dough; Press into bottom of the prepared baking pan.
  • FOR THE TOPPING:.
  • In a bowl, beat together the two 8-oz packages cream cheese, banana, powdered sugar, and vanilla. Beat at medium speed until smooth, at least 3 minutes. Add eggs one at a time, beating only until incorporated.

1 cup milk

2 Tbsp. sugar
6 Tbsp. margarine, melted
1 large banana, halved
1 tsp. lemon juice
1-1/4 cups cold milk
1 can (8 oz.) crushed pineapple in juice, drained
1/2 cup sliced fresh strawberries
1/4 cup chopped walnuts, toasted

Steps:

  • Mix Crust Mix, sugar and margarine with fork in 9-inch square pan until blended. Press onto bottom of pan with dry measuring cup.
  • Mash half the banana. Thinly slice or chop remaining banana; toss with lemon juice.
