Pear Banana Bread image

A nice change from regular banana bread--it's super moist and the pears really boost the flavor. I developed this by combining the best elements of banana and fruit bread recipes. As one of the reviewers discovered, this recipe doesn't work with hard pears--they have to be soft so they can be mashed in with the bananas to form a puree. Also, this can be cooked more quickly in a muffin tin (about 20 minutes).

2 bananas
2 pears, peeled, chopped
2 cups flour
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup butter
1/4 cup vanilla yogurt
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350.
  • Mash bananas and pears in a bowl.
  • In a separate bowl, mix the rest of the ingredients until creamed together.
  • Stir in the fruit mixture.
  • Pour the batter into a greased loaf pan.
  • Bake for an hour and half.
  • Let cool for at least 10 minutes so it doesn't fall apart (it solidifies more with time).

This is my version of a traditional banana bread with a twist! Its very sweet, moist and down right delicious. While its not a fat free food it is low-fat compared to its traditional counter-part. Recipe makes 2 loafs, 6 serving per loaf. Tastes good cold or hot. With or without topping. Its super easy, and great for kids to help make! Try adding nuts or dry fruits to the mix right before baking for an extra texture and flavor element. == Note: When I made this recipe I used a kitchen aid stand mixer, if you don't have one; take a plastic bag, mush your bananas and pears together then add to a bowl and whisk all the materials together. Its super simple. Easily vegan if you use egg substitute. You will also need two medium sized bread loaf pans.****

1 banana
3 medium pears
1 3/4 cups flour
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 teaspoons vanilla

Steps:

  • Mush banana and the pears together in your mixer with the whisk attachment on medium until mostly smooth, a few lumps are okay! Add 1 cup of the flour and the rest of the ingredients and mix on medium. When the ingredients are well combined, gradually add in the remaining 3/4 cup flour. Scrap down sides and mix well.
  • Grease and flour two bread loaf pans, divide the mixture evenly between the two. Tapping the pan on the counter to remove air, leave set 5 minutes Preheat your oven to 350 degrees.
  • Bake loafs for 45-60 minutes or until a toothpick comes out clean.

1 medium ripe pear
1 cup brown sugar
½ cup unsalted butter, softened
2 large eggs
2 medium ripe bananas, mashed
2 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon almond extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Peel and core pear. Grate pear flesh into a bowl.
  • Mix brown sugar and butter in a bowl with an electric mixer until well blended. Mix in eggs, then add bananas and pear. Gradually mix in flour and baking soda. Add vanilla, cinnamon, ginger, and almond extract; mix until just combined. Pour into the prepared loaf pan.
  • Bake on the center rack of the preheated oven until a toothpick inserted into the center comes out fairly clean, about 1 hour.

1 C mashed bananas & pears
1 1/2 C flour
1 1/2 t baking powder
1/4 t baking soda
2 eggs
3/4 C sugar
1/4 C cooking oil
1 T vanilla
1 t cinnamon

Steps:

  • Preheat oven to 350 and grease and flour 2 9x5 loaf pans. In small bowl blend bananas and pears In a large bowl, mix together eggs, banana mixture, sugar, cooking oil and vanilla. Beat until well mixed. In another bowl, mix flour, baking powder, baking soda, cinnamon, and a bit of salt. Add the egg mixture to the flour mixture and stir with a spatula until it's well moistened but not too well mixed. Spoon batter into the loaf pans, filling about 2/3 of the way full bake for 50-55 minutes or until a tooth pick inserted near the center comes back out clean. Cool for 10 minutes in pan before taking a butter knife and loosening the edges of the bread from the pan. Turn out bread onto a wire baker's rack and cover with a dry towel until completely cooled.

This bread is the best banana bread I have ever made. I didn't have enough of the ingredients I needed for banana bread so I improvised and the outcome was wonderful! I have to post this one so I will remember how to make it again. Entire family loved it.

1 cup butter or 1 cup margarine
1 cup sugar
1 cup Splenda granular (sugar substitute)
4 eggs
2 teaspoons vanilla
3/4 teaspoon orange extract
2 bananas (very ripe)
1 (15 ounce) can diced canned pears (drained)
3 cups flour
2 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 cup sour cream
2/3 cup chopped pitted dates

Steps:

  • Preheat oven to 350.
  • Grease 2 loaf pans.
  • In a large bowl cream together butter, sugar, Splenda, vanilla, orange extract, and eggs.
  • Put into your blender 2 peeled bananas and half the can of pears (not juice). Puree.
  • Stop blender and add cinnamon and enough pears to equal 2 cups of puree total. Blend again until all is smooth.
  • Add the flour, soda and salt to the bowl of creamed butter and sugar mixture.
  • Now add the fruit puree and the sour cream to the mixture and mix well.
  • Fold in chopped dates.
  • Scoop half the batter into each loaf pan and bake for about 1 hour.
  • After 1 hour test center of loaf with a toothpick, if it comes out clean your bread is done, if not bake another 10 minutes and try again.
  • Cool for at least 30 minutes before serving.

This is a big recipe that makes four loaves, because everyone kept wanting me to make a loaf for them! It's a very forgiving recipe, so if you want to tweak the amounts or ingredients, or add extra spices or some dried fruit, it still turns out nicely. The bread comes out a beautiful orange shade, and looks great on a holiday table.

1 pound(s) carrrots
four ripe bananas
15 ounce(s) canned pears, drained
four eggs, beaten
4 teaspoon(s) vanilla extract
4 teaspoon(s) salt
4 teaspoon(s) baking soda
8 cup(s) plain flour
5 cup(s) sugar or splenda
3/4 cup(s) melted shortening
1 cup(s) chopped pecans or walnuts (optional)

Steps:

  • Wash carrots (no need to peel them) and put in a saucepan with water to cover. Simmer over medium heat until soft.
  • Place the carrots in a food processor and, working in batches, blend with the bananas, pears, eggs, and vanilla until smooth.
  • In a large bowl, combine the flour, sugar or Splenda, salt, and baking soda. Add the carrot mixture and stir until well-blended. Stir in the melted shortening. If desired, toss some chopped nuts with a little flour and fold into the batter.
  • Spoon into four greased and floured 9x4-inch loaf pans, and bake at 350° for one hour, until the loaves test done.
