½ cup butter
1 cup white sugar
2 eggs
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, stir in the mashed bananas.
  • In a large bowl, sift together flour, baking powder, baking soda, salt. Blend the banana mixture into the flour mixture; stirring just to combine. Fold in the nuts.
  • Bake in preheated oven for 60 minutes, until a toothpick inserted into center of the loaf comes out clean.

1/2 cup (4 oz.) salted butter, softened
1 cup granulated sugar
2 large eggs
2 cups mashed ripe bananas (from 5 medium [about 1 1/2 lb. total] bananas)
2 cups (about 8 1/2 oz.) all-purpose flour, plus more for pan
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon table salt
1 cup chopped toasted pecans
Vegetable shortening, for greasing pan

Steps:

  • Preheat oven to 350°F. Beat butter in a stand mixer fitted with a paddle attachment on medium speed until creamy, about 1 minute. Gradually add sugar, beating well. Add eggs 1 at a time, beating well after each addition. Add bananas; beat until smooth, about 1 minute.
  • Stir together flour, baking powder, baking soda, and salt in a bowl; add to butter mixture, beating on low speed until just moistened. Stir in pecans.
  • Pour batter into a greased and floured 9- x 5- x 3-inch loaf pan. Bake in preheated oven until a wooden pick inserted in center comes out clean, 55 minutes to 1 hour, 5 minutes. Cool in pan 10 minutes. Transfer cake to a wire rack; let cool completely, about 1 hour.

2 eggs
1 teaspoon baking soda
4 tablespoons buttermilk
½ cup butter
1 ½ cups white sugar
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
3 ripe bananas, mashed
1 cup chopped pecans
3 tablespoons butter, softened
2 cups confectioners' sugar
3 tablespoons heavy whipping cream
¼ cup pecan halves, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
  • Separate the eggs and set aside.
  • Stir the baking soda into the buttermilk. Cream 1/2 cup of the butter or margarine with the white sugar. Add the egg yolks, and vanilla, beating well. Add flour alternately with the mashed bananas. Stir in the buttermilk mixture.
  • Beat the egg whites until stiff. Stir the pecans into the cake batter then fold in the egg whites. Pour batter into prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes or until cakes test done. Let cakes cool in pans.
  • To Make Icing: Cream 3 tablespoons butter or margarine with the confectioners' sugar. Stir in the heavy cream until well blended. Spread icing on to cooled cake layers. Top with pecan halves if desired.

1 cup low-fat milk
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1 teaspoon baking soda
1/2 cup sugar
1/2 cup golden raisin
1/2 cup chopped walnuts
1/2 cup wheat germ
3 bananas, mashed
2 eggs
2 tablespoons powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • Place the bran flakes in a bowl, cover with the milk, and allow to stand for 10 to 15 minutes.
  • In a large bowl, combine the flour, baking soda, sugar, raisins, walnuts, and wheat germ. Stir well.
  • Mash the bananas thoroughly, break in the eggs, and stir to combine.
  • Add the banana mixture and soaked bran flakes to the dry ingredients. Mix well.

2 tablespoons butter
3 bananas (mashed)
1 teaspoon bicarbonate of soda
1 teaspoon baking powder
1 cup sugar
1 1/2 cups plain flour (all purpose)
1 egg
2 tablespoons milk

Steps:

  • Preheat oven to 175C fan forced (for conventional I would recommend about 185C).
  • Grease and line (with baking paper) a standard loaf tin.
  • Sift flour, bi-carbonate and baking powder together.
  • Cream butter and sugar with a stand mixer or hand held mixer until well mixed.
  • Add the egg and mashed banana and mix well together.
  • Add the sifted flour and baking powder till incorporated and mix well and then add the 2 tablespoons milk and mix through.
  • Add sifted flour and baking powder till incorporated.
  • Pour mix into prepared loaf pan.
  • Bake for 35 to 40 minutes, test with skewer for doneness (should come out clean).
  • Would recommend to leave in pan for 5 to 10 minutes before turning out.

I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

1 1/4 cups sugar
1 teaspoon vanilla

1/2-1 cup chopped pecans (optional) or 1/2-1 cup walnuts (optional)

Steps:

  • Cream butter & sugar. Add vanilla & eggs. Combine dry ingredients, add alternately with bananas & milk. Add nuts if desired. Grease & flour 1 bread pan (2-3 smaller pans) or pour into muffin cups. For loaf bake at 350 for 45-60 minute Muffins 350 for 20-25min. Enjoy!
  • *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!

This homely and wholesome cake is also light and moist, with the natural sweetness of sticky bananas and the warm toastiness of nuts

100g softened butter, plus a little extra for greasing
140g caster sugar
1 beaten egg
225g plain flour
2 tsp baking powder
4 very ripe bananas
85g chopped walnuts
50ml milk

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a 2lb loaf tin with some butter and line the base with baking parchment, then grease this as well.
  • In a large bowl, mix together the butter, sugar and egg, then slowly mix in flour and baking powder. Peel, then mash the bananas. Now mix everything together, including the nuts.
  • Pour your mixture into the tin and bake for 1 hr, or until a skewer comes out clean. Allow the cake to cool on a wire rack before removing from the loaf tin. The loaf can now be wrapped tightly in cling film and kept for up to 2 days, or frozen for up to 1 month. Defrost and warm through before serving. Serve in thick slices topped with vanilla ice cream and drizzled with a little Easy chocolate sauce (see recipe, below).
