A boxed corn bread mix gets a tasty treatment from Janice France of Depauw, Indiana when dressed up with bananas and chopped walnuts. The moist golden loaves are a great addition to a brunch buffet or bake sale.

Yield 2 loaves (16 slices each).

Number Of Ingredients 4

2 packages (8-1/2 ounces each) corn bread/muffin mix
1 cup mashed ripe bananas (about 2 medium)
1 cup chopped walnuts
1 cup 2% milk

Steps:

  • In a large bowl, combine all ingredients just until blended. Spoon into two greased 8x4-in. loaf pans. , Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Having vegan friends in college forced me to find some recipes that are friendly to their choice if I wanted to entertain. This recipe is delicious whether or not you are vegan. I've made it with almond, rice, soy, and regular milk and they are all very similar to identical in flavor and consistency.

2 cups all-purpose flour
2 cups cornmeal
2 cups milk
2 bananas
1 ⅓ cups white sugar
⅔ cup vegetable oil
2 teaspoons baking powder
2 teaspoons salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine flour, cornmeal, milk, bananas, sugar, vegetable oil, baking powder, and salt together in a bowl until batter is smooth; pour into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes.

1 1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/2 cup mashed banana
1/4 cup butter
1/4 cup water
1 1/2 cups cereal
1 cup walnuts

Steps:

  • Pre heat the oven at 350 degrees F.
  • Mix flour, baking powder, baking soda and salt in a large bowl.
  • Cream butter, add in sugar slowly.
  • Once it is well creamed, add in eggs.
  • Mix in water and bananas.
  • Add in Flour mixture, stir till it is moistened.
  • Stir in cereal and walnuts.
  • Pour into greased 9x5 inch loaf pan.
  • Bake for 55-65 minutes, till toothpick inserted in center comes out clean.
  • Cool for 10 minutes before removing from pan.
  • Cool completely on wire rack.

2 pkg cornbread muffin mix (jiffy is good)
1 c mashed bananas, ripe (make sure they are ripe)
1 c chopped walnuts
1 c milk

Steps:

  • 1. In bowl, combine all ingredients just until blended. Spoon into two greased 8 x 4 x 2" loaf pans. Bake at 350 degrees for 35 to 40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Cool completely. Yield: two loaves. Enjoy! Doesn't get much easier than this!!
  • 2. I buy very ripe bananas on sale at the store and freeze them. I always have nuts in the freezer and buy the cornbread mixes when they are on sale and freeze them. You then have all the ingredients on hand and this is so easy to put together!

1 ½ cups chopped walnuts
1 banana, sliced
