BANANA BUTTER MOCHI

8 ounces mochiko sweet rice flour
1 teaspoon baking powder
4 tablespoons unsalted butter ((½ stick) (melted))
¾ cup plus 1 tablespoon sugar
1 teaspoon vanilla extract
2 large eggs ((beaten))
6 ounces evaporated milk
6 ounces coconut milk
1½ ripe bananas
black sesame seeds

Steps:

  • Preheat the oven to 350˚F (177˚C). Spray the inside and the top of a muffin pan with nonstick spray really well. Set aside.
  • In a medium mixing bowl, whisk together the sweet rice flour and baking powder. Set aside.
  • In a large mixing bowl, whisk together melted butter, sugar and vanilla extract. Add the beaten eggs and whisk until combined. Pour in the dry ingredients. Using a spatula, stir until incorporated. Pour in the evaporated milk and coconut milk, whisk the mixture until smooth. Smash up half of the banana with a fork into a puree. Add to the batter and whisk until combined.
  • Fill each muffin tin half full with batter. Cut the rest of the banana into ¼-inch slices. Place 1½ slices of banana in each tin on top of the batter. Fill the muffin tins with more batter until just below the rim. Make sure the banana is well covered. Hold the muffin tray about 2 inches above the counter and drop a few times to help remove any air bubbles. Sprinkles with desired amount of black sesame seeds.
  • Bake in the oven for about 40 - 50 minutes, or until the top is browned. Transfer to a cooling rack and cool for 20 minutes. Butter mochi is best to serve warm.

A moist and delicious island style banana bread. It is also gluten-free as we are using mochiko in the recipe. Mochiko is a japanese sweet rice flour.

1 box mochiko (16oz.) box
1 c bisquick
4 tsp baking soda
4 tsp cinnamon
1 tsp salt
2 c sugar
1 1/2 c oil
3 tsp vanilla extract
5 eggs
3 c banana, very ripe & mashed
1 c walnuts or macadamia nuts, chopped

Steps:

  • 1. Combine first six ingredients in a large mixing bowl. Separately mix oil and vanilla and add to dry ingredients.
  • 2. Add eggs and mix together until batter is well blended. Stir in bananas and nuts.
  • 3. Pour into 4 greased loaf pans (8 1/2 x 4 1/2 inches). Let batter sit for about 5 minutes before putting it in the oven.
  • 4. Bake at 350 degrees for 1 hour, do a toothpick test, if it comes out clean, it is done.
  • 5. Remove from oven onto a wire rack to cool.

MOCHA BANANA BREAD

Classic banana bread gets a facelift with the addition of espresso and mini chocolate chips studded throughout. It all comes together with a sweet espresso glaze.

Nonstick cooking spray, for greasing
2 cups all-purpose flour, plus more for dusting
1/4 cup plus 2 tablespoons instant espresso powder
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1 cup granulated sugar
1/2 cup vegetable oil
4 very ripe bananas, mashed (about 2 cups)
2 large eggs
1 teaspoon pure vanilla extract
1 cup mini semisweet chocolate chips
1/2 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with nonstick cooking spray; dust with flour and tap out the excess.
  • Combine the 2 cups flour, 1/4 cup espresso powder, the baking soda, baking powder, cinnamon and salt in a large bowl. Whisk together the granulated sugar, oil, bananas, eggs and vanilla in another large bowl until smooth. Fold in the flour mixture, a third at a time, until just combined after each addition. Fold in 3/4 cup of the chocolate chips. Pour the batter into the prepared pan.
  • Bake until the bread starts to puff and is just set at the edges, about 40 minutes. Reduce the oven temperature to 325 degrees F, then continue to bake until a toothpick inserted into the center comes out clean, about 35 minutes more. Transfer the pan to a wire rack to cool completely, about 3 hours. Flip the bread out of the pan and place onto a serving platter.
  • Just before serving, mix the confectioners' sugar with the remaining 2 tablespoons espresso powder and 1 tablespoon water in a small bowl until smooth. Spread the glaze on top of the banana bread and sprinkle with the remaining 1/4 cup chocolate chips.

3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
1/4 cup butter, softened
2 large eggs
1 1/2 cups mashed bananas (about 3 bananas)
1 teaspoon vanilla
3 tablespoons coffee
1/3 cup chopped walnuts

Steps:

  • Preheat oven to 350°.
  • In a medium bowl, combine the flour, cocoa powder, baking soda, and salt, stirring with a whisk or sift if the cocoa is lumpy.
  • In a large bowl combine sugar and butter and beat with a mixer at medium speed until well creamed, for at least two minutes.
  • Add eggs and beat well.
  • Add bananas, vanilla, and coffee and beat on low speed until blended.
  • Add flour mixture and combine just until moist.
  • Stir in walnuts and spoon batter into a greased 8 x 4" loaf pan.
  • Bake for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean.
  • Cool 10 minutes in pan on a wire rack, then remove from pan.
  • Cool completely on wire rack before slicing.
