MASHED SWEET POTATOES WITH BANANA AND BROWN SUGAR



Mashed Sweet Potatoes with Banana and Brown Sugar image

8 sweet potatoes or large yams, each about 10 ounces
About 3 tablespoons kosher salt, plus additional as needed
1 banana, with a 2-inch slit cut into the peel
8 tablespoons (4 ounces) unsalted butter
2 cups heavy cream
1 cinnamon stick
1/4 cup firmly packed light brown sugar
1 teaspoon finely ground fresh black pepper, plus additional as needed

Steps:

  • 1. Wash each of the potatoes well, poke holes into them with a fork, rub each with about 1 teaspoon of salt, and wrap with heavy-duty aluminum foil.
  • 2. Place directly on hot coals and cook for about 20 minutes, or cook in a 350°F barbecue for about 50 minutes, or until tender when pierced with a paring knife. At the same time, cook the banana in the peel until blackened, about 15 minutes.
  • 3. Carefully take the potatoes out of the foil and scoop the flesh out from the skin into a large bowl. Cover with foil. Scoop the flesh out of the banana into a separate bowl.
  • Increase temperature to high.
  • 4. Place a small roasting pan or deep baking dish with high sides that can take the direct flame (a 13 x 9-inch baking dish with a 15-cup capacity is ideal) over the heat and let heat up for 5 minutes.
  • Add the butter and let melt. Add the cream, cinnamon stick, brown sugar, potatoes, banana, 1 teaspoon of salt, and 1 teaspoon of pepper. Using a potato masher, mash the potatoes and banana, and stir to combine.
  • Season to taste with additional salt and pepper as needed.

Sounds strange, right? Actually, they're delicious! The subtle hint of banana doesn't really add sweetness, only an exotic taste. You must try this! This makes about four normal-people servings, or two hungry people servings.

7 medium potatoes, peeled
1 medium banana
3 tablespoons butter
1/2 cup half-and-half
salt
pepper

Steps:

  • Peel potatoes. Place in a large pot of salted cold water. Bring to a boil.
  • Boil 25 minutes, or until tender. They should provide no resistance when poked with a fork.
  • During the last five minutes of boiling, peel your banana. Take a bite (a whole banana is a little overwhelming, but a banana with a big bite taken out does just right). Drop the rest of the banana in the water with the potatoes and let it boil with them for the last five minutes. This softens it.
  • Drain the potatoes and banana and place in a large bowl.
  • Add the butter and a little half and half and cream with a hand mixer. Add half and half as needed to get a creamy texture.
  • Add salt and pepper to taste. These are great with lots of fresh cracked black pepper.

2 lb yukon gold potatoes
2 large bananas
olive oil
1 c heavy cream(or to taste)
1/2 c butter
seasoning salt to taste

Steps:

  • 1. Cut bananas in half the long way,leaving the peels on. Brush cut side with olive oil and roast, cut side down, at 400 degrees for about nine minutes or until the tops are black.Remove from oven and peel.
  • 2. Clean potatoes and peel if desired,cut into chunks, cover with water and boil until tender.Drain and mash potatoes with the bananas,add cream and butter,and seasoning salt to taste.

Steps:

  • Pre-heat oven to 375°F. Wrap sweet potatoes in foil and poke a few holes so they don't explode. When potatoes are half way done, arrange unpeeled bananas on an ungreased cookie sheet and place in oven. Cook until both potatoes and bananas are soft. Banana peels will be black, so don't worry. When done, remove the peels from the bananas; combine potatoes and bananas in a large bowl and mash together. Transfer mixture to a large pot and heat over medium/high heat. Season liberally with cinnamon and butter. Add milk until desired creaminess. Mix until done.

CINNAMON HONEY MASHED SWEET POTATOES AND BANANA



Cinnamon Honey Mashed Sweet Potatoes and Banana image

I love to serve this all fall, but it also makes a wonderfully sweet Thanksgiving side. If you are cooking for a baby, you can optionally leave out the honey and add an additional tablespoon of dark brown sugar or scald the milk with honey it in to cook the honey so it is baby safe. My youngest is 11 months currently, and he had this last week, without consequence. Prepared in the above mentioned way.

6 - sweet potatoes, diced and boiled (i leave the skin on)
1 - banana, chopped
1 cup(s) cream or whole milk
2 tablespoon(s) honey
1 tablespoon(s) dark brown sugar
1 teaspoon(s) vanilla
1 teaspoon(s) cinnamon
3 tablespoon(s) butter
1 tablespoon(s) sour cream
1/2 teaspoon(s) seasoned salt
1 pinch(es) cayenne
1/4 cup(s) candied walnuts, chopped (optional)

Steps:

  • This works better if the sweet potatoes are recently boiled.
  • Put all the ingredients, save the candied walnuts (optional) in a pot. Heat on low medium.
  • When the butter started to melt (10 to 15 minutes), stir until the sugar and honey are both dissolved.
  • Use either a potato masher or an immersion blend to puree mix. Cook for an additional 5-10 minutes.
  • Convert to a serving dish. Optionally sprinkle with candied walnuts. Enjoy!
