This super delicious banana bread recipe has just the right amount of sweet rum glaze on top! Perfect for parties or as a homemade gift!

1/2 cup white sugar
1/2 cup brown sugar, packed
1/2 cup of butter at room temperature
2 large eggs
2 cups mashed bananas (about 4 bananas)
1 teaspoon cinnamon
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup powdered sugar
1/4 cup dark or spiced rum

Steps:

  • Preheat the oven to 350 degrees. Spray a 9 x 5 x 3 loaf pan with cooking spray and set aside.
  • Cream the butter and both sugars together in a large bowl until light and fluffy. Add the eggs, mashed bananas and vanilla extract to the bowl and mix until combined.
  • In a separate bowl, mix together the flour, baking soda, baking powder and salt.
  • Add half of the flour mixture to the batter and mix until combined. Add the other half of the flour mixture and mix until all the flour is combined into the batter.
  • Pour the batter into the prepared loaf pan and bake for 55-60 minutes until a toothpick inserted into the center comes out clean. Let cool for a few minutes and then remove the pan and place on a baking rack to cool.
  • To make the glaze, whisk the powdered sugar and rum together in a small bowl. Pour over the slightly cooled banana bread. Let the glaze set for 15 minutes, slice and serve.

1/2 cup butter, softened
1 1/3 cups sugar
2 eggs
3 teaspoons rum
1/4 cup sour cream
1/2 teaspoon almond extract
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 cup mashed banana (approximately 4)

Steps:

  • Preheat oven to 350°F.
  • Cream butter and sugar until fluffy.
  • Add eggs and beat until light.
  • Add rum, sour cream and almond extract.
  • Mix in mashed bananas.
  • Combine flour, baking soda and salt in separate bowl.
  • Pour wet mixture into dry mixture and combine.
  • Bake for 1 hour depending on size of loaf pan.

250g pack stoned, ready-to-eat dates
2 small or 1 large banana (140g/5oz in weight)
100g pecans , 85g/3oz roughly chopped, rest left whole
200g raisins
200g sultanas
100g fine polenta
2 tsp mixed spice
2 tsp baking powder (use gluten-free if needed)
3 tbsp dark rum
2 egg whites
a few banana chips and 1 tsp sugar (optional), to decorate

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Line a 900g/2lb loaf tin with non-stick baking paper, using a little oil to make it stick. Put the dates into a small pan with 200ml boiling water and simmer for 5 mins. Drain the liquid into a jug, then put the dates into a food processor. Add the bananas and 100ml of the date liquid and whizz until smooth. Mix the nuts, dried fruit, polenta, spice and baking powder in a bowl, then add the date purée and rum, and stir until combined.
  • Whisk the egg whites to soft peaks and fold into the cake mix. Tip into the tin (it will be quite full), then top with the remaining pecans and the banana chips and sugar, if using. Bake for 1 hr until golden and crusty and a skewer comes out clean. Cool completely before cutting into slices.

This is a recipe that was given to me when I worked at Baptist Hospital in Knoxville, Tn. The bananas are soaked for 2-3 days in white rum.

4 -5 bananas
1/2-1 cup white rum
1 cup sugar
1/2 cup vegetable oil
1 teaspoon baking soda
1/2 teaspoon baking powder
2 cups flour
1/2 teaspoon salt
3 -4 tablespoons milk
1/2 teaspoon vanilla
1 cup nuts, chopped (I use black walnuts)
2 eggs, beaten

Steps:

  • Mash bananas and pour enough rum over top of them to cover and let set 2-3 days. (Rum amount above is a "guestimation" because I just cover the bananas with it.)
  • Mix sugar and vegetable oil.
  • Add eggs and banana mixture and beat.
  • Add remaining ingredients, mix.
  • Bake at 350 degrees F. for 1 hour in a loaf pan.

170g caster sugar
85g butter
450g soft bananas, mashed
2 eggs
30g mixed peel
50g pecans, chopped
1/4 tsp bicarbonate of soda
2 tbsp rum
225g self-raising flour

Steps:

  • Preheat the oven to 180c.
  • Cream the butter and sugar in a ProCook mixing bowl until soft and well incorporated then add the bananas. Add the eggs, slowly, 1 at a time and mix well. Add the mixed peel, pecans, bicarbonate of soda and rum, mix well.
  • Fold in the flour then pour the mixture into a ProCook non-stick loaf tin. Bake for 45 minutes on a low shelf.
