Number Of Ingredients 5

4-3/4 cups prepared fruit (about 2 quarts fully ripe strawberries and 3 fully ripe medium bananas)
3 Tbsp. fresh lemon juice
1 box SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine
6-3/4 cups sugar, measured into separate bowl (See tip below.)

Steps:

  • Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot, soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Stem and crush strawberries thoroughly, one layer at a time. Measure exactly 3-1/4 cups prepared strawberries into 6- or 8-quart saucepot. Mash bananas thoroughly. Measure exactly 1-1/2 cups prepared bananas into strawberries in saucepot. Stir in lemon juice.
  • Stir pectin into fruit in saucepot. Add butter to reduce foaming, if desired. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
  • Stir in all sugar quickly. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle quickly into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. Water must cover jars by 1 to 2 inches; add boiling water if needed. Cover; bring water to gentle boil. Process 10 minutes. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.)

1/4 cup fresh lime juice (about one medium lime)
3 1/2 cups bananas, diced (firm, ripe ones work best)
2 1/4 cups sugar
1/2 cup water

Steps:

  • Place lime juice in a one quart measure.
  • Peel bananas and dice directly into lime juice.
  • Stir with a wooden spoon.
  • Keep stirring as you dice each banana into the lime juice to prevent darkening.
  • Measure sugar and water into a wide 2½ quart saucepan, and stir to dissolve sugar as you bring syrup to a boil.
  • Cover tightly for the first 2 minutes (so the steam will wash sugar crystals from side of saucepan) then uncover, add bananas (with lime) and boil over low heat for about 30 minutes or until thick.
  • Stir often to prevent sticking, especially during last 10 minutes.
  • Jam is done when a spoon scraped across bottom of pan leaves a track that closes slowly, or when jam mounds while stirring.
  • Fill hot, sterilized jars quickly with the hot jelly or jam mixture, leaving 1/4 inch headspace.
  • Wipe the sealing surface of the jars with a clean paper towel, dampened with hot water, to remove any jam or sugar crystals.
  • Place lids, screw on bands finger-tight and process jars for 10 minutes in boiling water bath.
  • Cool jars upright for 12-24 hours while vacuum seal is drawn and jam or jelly sets up. Let the jars sit undisturbed while they cool.

Your overripe bananas don't need to go to waste anymore. Everyone will go "bananas" for this sweet, delectable jam/sauce on everything from waffles to ice cream, crepes to cake filling. I've never done the full canning routine with this, since it's sealed in the jars while hot, but I suppose you could. Recipe from the Joy of Desserts website, adapted slightly for personal taste.

2 lbs ripe bananas
1 3/4 cups dark brown sugar
2 cups light brown sugar
1 1/3 cups water
3 limes, juice of
1 teaspoon cinnamon
3 tablespoons pure vanilla extract
1 dash ginger powder
6 tablespoons dark rum

Steps:

  • Thaw bananas if frozen. (I often store up my overripe bananas in a freezer bag in the freezer until I have enough to make something.).
  • Peel bananas, and mash smooth.
  • Mix water, lime juice, sugars, cinnamon, vanilla, ginger over medium heat and stir until thickened.
  • Add mashed bananas and let cook 20 to 25 minutes, stirring occasionally.
  • Add rum during the last few minutes of cooking.
  • Place hot banana jam into sterilized jars. Place lids on and seal.

MONKEY BANANA JAM

This is a family favorite. It's very good on toast, especially beer-bread toast. (Recipes available from this site.) Try it with peanut butter for a great sandwich. You can also use it to top ice cream. It's popular with banana-lovers young and old. This can be frozen, but it will darken. As written, it's fine, but you can experiment with spices too. Cinnamon, nutmeg, ginger, lemon/orange peel are all good candidates. Pick one or two for variety.

3 cups strawberries, mashed (about 3 1/2 lbs)
1 1/2 cups sugar (or more to taste)
1 (1 5/8 ounce) package freezer jam pectin (Use Ball Fruit Jell Freezer Jam Pectin or similar)

Steps:

  • Combine mashed bananas and strawberries in medium bowl; set aside.
  • Combine sugar and freezer jam pectin in small bowl, stirring to blend evenly.
  • Gradually stir pectin mixture into prepared fruit, stirring for 3 minutes.
  • Ladle jam into freezer jars, leaving 1/2 inch headspace.
  • Let jam stand to thicken, not to exceed 30 minutes.
  • Serve immediately; refrigerate up to 3 weeks OR freeze up to one year.

6 1/2 tablespoons lemon juice
3 ounces pectin
6 cups sugar
3/4 cup unsalted butter

Steps:

  • Combine bananas, lemon juice and 3 cups sugar in a pan and let stand 1 hour.
  • After 1 hr, add remaining sugar and place pan over medium-high heat; stirring constantly until sugar is dissolved.
  • Bring mix to a boil for two minutes.
  • Remove pan from flame and skim off any foam.
  • Place pan over heat again for 1 minute.
  • boil.
  • Again, remove and skim off foam.
  • Add butter and bring mix to a boil again.
  • Add pectin and stir constantly.
  • Boil 1 minute.
  • Skim off foam.
  • Allow jam to cool for 7 min before adding to canning jars.

3 1/4 cups peaches, ripe peeled and mashed (roughly 2 pounds)
1 cup banana, ripe and mashed (about 3 medium sized)
1/2 cup maraschino cherry, drained and diced
2 tablespoons lemon juice
6 cups sugar
1 (1 3/4 ounce) package dry pectin

Steps:

  • Mix peaches, bananas, cherries, and lemon juice into a large saucepan.
  • Mix pectin into fruit in pan.
  • Stir and cook over high heat until mixture comes to a full rolling boil (one that can't be stirred down).
  • Add and stir in the sugar.
  • Bring to a full rolling boil once again.
  • Stir constantly and boil. Boil rapidly for one minute.
  • Remove from heat.
  • Skim off foam.
  • Stir and skim for about 5 minutes allowing mixture to cool slightly and prevent floating fruit.
  • Ladle into sterilized canning jars, leaving 1/4 inch headspace.
  • Make sure jar rims are clean and cover with two piece metal lids and rings.

29 ounces crushed pineapple with juice, drained
6 1/2 cups sugar
6 ounces liquid pectin

  • Peel and mash the bananas, then add the pineapple to the bananas.
  • Add the sugar to the fruit mixture and pour it into a large enameled pot.
  • Stir over low heat until sugar dissolves.

1 medium seedless orange, that has been put through a food processor to a fine chop

1 box sure.jell fruit pectin

Steps:

  • Mix exactly 2 cups crushed strawberries and 1/2 cup mashed bananas in large bowl.
  • Stir in sugar and lemon juice; let stand 10 minutes, stirring occasionally.
  • Add chocolate syrup; mix well.
  • Mix water and pectin in small saucepan.
  • Bring to boil on high heat, stirring constantly.
  • Continue boiling and stirring 1 minute.
  • Add to fruit mixture; stir 3 minutes or until sugar is dissolved and no longer grainy.
  • (A few sugar crystals may remain.) Fill clean plastic containers immediately to within 1/2 inch of tops.
  • Wipe off top edges of containers; immediately cover with lids.

300 ml sour cream (Pura brand used)
1/4 cup milk

  • Preheat oven to 230°C.
  • Place flour and salt in a large mixing bowl and make a well in the centre and stir in sour cream and milk to form a soft dough.
  • Knead lightly on a floured surface until just smooth.
  • Pat to 2cm thickness and cut into round with a floured 4cm to 5cm scone cutter, taking care not to twist as you cut.
  • Place on a oven tray and brush only the tops with milk and then place in the oven in the top upper half and bake for 10 to 12 minutes or until puffed and golden brown.

1 c fully ripe bananas (about 3 medium)
3-1/2 c ripe peaches (about 2 pounds)
1 tsp vanilla powder
2 Tbsp fresh lemon juice
6 c white sugar
1 box powdered pectin
1 tsp butter or margerine
OPTIONAL:
1/2 c chopped pecans or walnuts

Steps:

  • 1. Peel bananas and cut into small chunks. Place into heavy pan or dutch oven.
  • 2. Chop peaches in small dice. Add to bananas in pan. Mash fruits in pan with fork or potato masher.
  • 3. Measure out sugar and set aside.
  • 4. Add vanilla powder, lemon juice, pectin and butter (or margerine) to pan. Stir in to blend.
  • 5. Put on medium high heat, and cook, stirring constantly, until fruit reaches a full, rolling boil. Immediately stir in all the sugar at once.
  • 6. Bring to a second full, rolling boil, stirring constantly. Boil hard for one full minu te.
  • 7. Remove from heat and skim foam. If adding nuts, stir in now.
  • 8. Ladle jam into sterilized jars, leaving a 1/2" headspace. Seal jars with sterilized lids and screw caps.
  • 9. Process jars in a boiling water bath for 5 minutes.

3 cups finely chopped pitted peeled mangoes (about 4 medium be sure they are NOT bruised)
2 cups crushed ripe bananas (not brown)
2 tablespoons lemon juice
1/2 vanilla bean, split in half Lengthwise
1 (1 3/4 ounce) package fruit pectin
1/2 teaspoon butter
5 1/2 cups sugar
1 tablespoon banana liqueur (optional)

Steps:

  • Crush bananas with lemon juice to prevent browning. Set aside.
  • Meanwhile prepare boiling water canner. Heat 7-10 (8 oz) half pint glass preserving jars with lids and bands in simmering water until ready for use. Do not boil. Set bands aside.
  • Combine mangoes, bananas and vanilla in a 6- or 8-quart saucepan. Gradually stir in pectin. Add up to 1/2 tsp butter to reduce foaming, if desired. Bring mixture to a full rolling boil that can not be stirred down, over high heat, stirring constantly.
  • Add entire measure of sugar and liqeuer if using, stirring to dissolve. Return mixture to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary.
  • Carefully remove vanilla and ladle hot jam into hot jars leaving 1/4 inch headspace. Wipe rim. Center lid on jar. Apply band until fit is fingertip tight.
  • Process in a boiling water canner for 10 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed. Lable.

25 ounces pineapple, cut into wedges
25 ounces mangoes, cut into small chunks
5 ounces bananas, sliced
1/4 cup water
2 fresh limes, halved
6 cups sugar
6 habanero peppers, halved and seeded
4 1/2 ounces liquid pectin

Steps:

  • Cut all of the fruits as directed, and place the mango and banana in a blender with 1/4 cup water to blend.
  • Mix the blended mango and banana and the pineapple chunks in a pot and mash with a potato masher.
  • Set the pot on medium heat, adding freshly squeezed lime juice from two limes.
  • Bring the pot to a slow boil and add the sugar and pectin.
  • Once boiling, add the habanero halves and allow to boil for another 3-5 minutes.
  • Discard 5 of the habaneros (10 halves in total), and mince the remaining habanero (i.e. two halves) and add back to the mixture.
  • Ladle the jam into sterilized canning jars (leaving 1/4 inch head room) and boil for 10+ minutes depending on altitude and jar size.
  • Allow to cool on a wire rack.

3 cups granulated sugar
3 cups water
8 ripe bananas, about medium size
A piece of fresh ginger about the size of an olive
A few whole cloves

Steps:

  • Juice the lemons. Slice the rinds into paper-thin strips.

2 cups crushed strawberries (about 1 qt. fully ripe strawberries)
1/2 cup mashed banana (about 2 small bananas)
4 cups sugar, measured into separate bowl
2 Tbsp. lemon juice
2 Tbsp. chocolate syrup
3/4 cup water
1 box SURE-JELL Fruit Pectin

Steps:

  • Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
  • Combine exactly 2 cups crushed strawberries and 1/2 cup mashed bananas in large bowl. Stir in sugar and lemon juice; let stand 10 min., stirring occasionally. Add chocolate syrup; mix well.
  • Mix water and pectin in small saucepan. Bring to boil on high heat, stirring constantly. Boil and stir 1 min. Add to fruit mixture; stir 3 min. or until sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)
  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.

4-3/4 cups prepared fruit (about 5-1/4 cups fully ripe blackberries and 3 fully ripe medium bananas
3 Tbsp. fresh lemon juice
1 box SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine
6-3/4 cups sugar, measured into separate bowl

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • Crush blackberries thoroughly, one layer at a time. (Press half the pulp through fine mesh strainer to remove some of the seeds, if desired.) Measure exactly 3-1/4 cups prepared blackberries into 6- or 8-qt. saucepot. Mash bananas thoroughly. Measure exactly 1-1/2 cups bananas into blackberries in saucepot. Stir in lemon juice.
  • Stir pectin into prepared fruit in saucepot. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Add sugar; stir. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle quickly into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

5 ripe bananas
3 tablespoons lime juice
2/3 cup fresh orange juice
1 1/2 cups sugar
1/2 vanilla bean, split in half lengthwise and cut into thirds
1/8 teaspoon salt
1 tablespoon banana liqueur

Steps:

  • Peel bananas; mash with fork.
  • In heavy saucepan, combine banana, lime juice, orange juice, sugar, vanilla and salt.
  • Bring to a boil; reduce heat and gently simmer the banana jam until thick, about 30 minutes, stirring often. Stir in liqueur and remove pan from heat.
  • Leave vanilla bean in jam and spoon jam into three 6-oz sterilized canning jars.
  • Fill jars within one-eighth inch of the top; screw on lids.
  • Invert the jars for 5 minutes, then re-invert.
  • Let jam cool to room temperature.
  • *Store in cool, dark place.
  • Refrigerate jam when opened. Will keep several weeks.
