CHOCOLATE CHIP BANANA NUT BREAD
A recipe (originally by Ann Tremont) my mother put in a cookbook that I have modified quite a bit. Every time I bring this to work, everyone wants a piece (and there's not enough to go around).

Steps:
- Hand mix flour, baking powder, baking soda, sugar, walnuts, chocolate chips, and vanilla extract in mixing bowl until chocolate chips and walnuts are evenly spread out throughout mixture.
- In another bowl, mash bananas and add to the main mixing bowl.
- Soften the butter (I microwave for 20 seconds) and add to the main mixing bowl.
- Add two whole eggs to main mixing bowl.
- Mix all ingredients together by hand until it has a batter-like consistency.
- Pour into greased loaf pan.
- Let mixture set for at least 20 minutes before baking (Preheat the oven to 325°F).
- Bake at 325°F for 65 minutes (may take longer depending on the oven and altitude).
- When finished baking, it is best to let it set overnight before serving.

- An optional recipe: Instead of the chocolate chips, use 1 1/2 tsp of cinnamon to make Cinnamon Banana Nut Bread.
CHOCOLATE CHIP BANANA BREAD II
This is a really rich, dessert bread. Great for quick breakfast or warm with butter as a dessert. The walnuts may be omitted if desired.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
- In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition. Stir in the mayonnaise and bananas. Stir together the flour, salt, baking powder and baking soda. Blend the flour mixture into the banana mixture; stir just enough to evenly combine. Fold in the chocolate chips and walnuts.
- Bake at 350 degrees F (175 degrees C) until a toothpick inserted into the center of the loaf comes out clean, about 50 to 75 minutes. Cool loaf in the pan for 20 minutes before removing to a wire rack to cool completely.

BANANA BREAD WITH CHOCOLATE CHIPS AND WALNUTS
Steps:
- Preheat the oven to 350°F. Butter and flour a 9 by 5-inch metal loaf pan. Whisk the flour, baking soda, baking powder, and salt in a medium bowl to blend. Combine the chocolate chips and walnuts in a small bowl; add 1 tablespoon of the flour mixture and toss to coat.
- In a stand mixer, beat the butter in a large bowl until fluffy. Gradually add the sugar, beating until well blended. Beat in the eggs 1 at a time. Beat in the mashed bananas, lemon juice, and vanilla. Beat in flour mixture.
- Spoon one-third of the batter into the prepared pan. Sprinkle with half of the chocolate-chip and nut mixture. Spoon another one-third of batter into the pan. Sprinkle with the remaining nut mixture. Cover with the remaining one-third batter. Run a knife through the batter in a zigzag pattern.
- Bake the bread until a tester inserted into the center comes out clean, about 1 hour and 5 minutes. Turn out onto a rack and cool.

- Cream butter and sugar, then add egg.
- In another bowl, combine bananas and milk.
- Combine flour, baking powder and baking soda and add to creamed mixture alternately with banana mixture.
- Fold in chocolate chips and walnuts.
- Pour into a greased 9 x 5 loaf pan and bake at 350° for 60 to 70 minutes or until a toothpick inserted in the center comes out clean.
- Cool for 10 minutes before removing from pan to cool on a wire rack.
