cooking spray
1 cup applesauce
1 cup mashed bananas
½ cup butter, melted
2 eggs
1 ½ cups all-purpose flour
½ cup white sugar
½ cup brown sugar
1 tablespoon ground cinnamon
1 teaspoon vanilla extract
1 teaspoon baking soda
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 2 muffin tins with cooking spray or line with paper liners.
  • Whisk applesauce, mashed bananas, butter, and eggs together in a large bowl.
  • Combine flour, white sugar, brown sugar, cinnamon, vanilla extract, baking soda, and salt in a separate bowl. Fold into the applesauce mixture until batter is just combined.
  • Divide batter evenly among muffin tins, filling each cup almost full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 15 minutes.

8 medium apples, peeled and cubed
1 medium ripe banana, thinly sliced
1 cup raisins
3/4 cup orange juice
1/2 cup packed brown sugar
1/4 cup honey
1/4 cup butter, melted
2 teaspoons pumpkin pie spice
1 small lemon
1 envelope instant apples and cinnamon oatmeal
1/2 cup boiling water
Dried banana chips, optional

Steps:

  • Place the apples, banana and raisins in a 3-qt. slow cooker coated with cooking spray. In a small bowl, combine the orange juice, brown sugar, honey, butter and pie spice; pour over apple mixture. Cut ends off lemon. Cut into 6 wedges and remove seeds. Transfer to slow cooker. Cover and cook on high for 3-4 hours or until apples are soft. , Discard lemon. Mash apple mixture. In a small bowl, combine oatmeal and water. Let stand for 1 minute. Stir into applesauce. If desired, top with dried banana chips.

4 bananas, ripe
1 cup sugar
1/2 cup applesauce
1 teaspoon vanilla extract
2 eggs
1 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon salt
2 cups flour

Steps:

  • Preheat oven to 350.
  • Place bananas in a large bowl and mash with electric mixer.
  • Stir in sugar and let stand 15 minutes.
  • Add applesauce and eggs and beat well.
  • Add remaining ingredients and mix well.
  • Pour into greased 9x5 loaf pan.
  • Bake for 45 minutes, or until wooden toothpick inserted in center comes out clean.
  • Remove from oven and let stand 10 minutes before removing from pan, cool on wire rack.

I read about this side dish on another site and was intrigued. I had never heard of this combination before, you see. When I googled for the recipe, I got two versions, the one below which is from vegweb.com, and a much simpler one, which, I confess, is the one I tried. For this version you peel a banana and mash it in a bowl with a fork or potato masher. (You can soften the banana in the microwave by heating it for 20 seconds, if needed.) Add a can of applesauce to the mashed banana. You can puree the mixture or simply mash it with the potato masher which will usually get the mixture smooth.

4 small granny smith apples
4 small bananas
1/4 teaspoon apple-brandy extract
1 tablespoon ground cinnamon (or more to taste)
1 tablespoon ground nutmeg
1 1/2 tablespoons raw sugar (and or or caster sugar)
1/2-3/4 cup water (start with 1/2, add more if necessary)

Steps:

  • Peel, quarter, core and slice apples. Chop bananas. Combine both in in a large saucepan; add remaining ingredients.
  • Bring to a boil; cover and simmer for 5 minutes or until apple is pulpy. Reduce heat to low or medium and whisk/stir until pretty well mashed; remove from heat and continue whisking/mashing until it is as smooth as you like it.

1 cup butter, softened
2 cups sugar
4 eggs, separated
3 cups all-purpose flour
2 teaspoons baking powder
1 cup milk
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract
FILLING:
2 cups sweetened applesauce
3 medium firm bananas, sliced
3 tablespoons lemon juice
FROSTING:
1 cup sugar
2 egg whites
3 tablespoons water
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup sweetened shredded coconut, toasted

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolk. Beat in extracts. Combine flour and baking powder; add to creamed mixture alternately with milk, beating well after each addition., In a small bowl, beat egg whites until soft peaks form; gently fold into batter. Pour into three greased 9-in. round baking pans. Bake at 350° for 25-30 minutes or until cake tests done. Cool for 10 minutes; remove from pans to wire racks to cool completely. , Divide applesauce and spread over two cake layers. Dip bananas in lemon juice; arrange over applesauce. Stack on serving plate with plain layer on top. , For frosting, in a large heavy saucepan, combine the sugar, egg whites, water, cream of tartar and salt over low heat. With a hand mixer, beat on low speed for 1 minute. Continue beating on low over low heat until frosting reaches 160°, about 8-10 minutes. , Pour into a large bowl; add vanilla. Beat on high until stiff peaks form, about 7 minutes. Frost sides and top of cake. Sprinkle with coconut. Store in the refrigerator.
